INGREDIENTS
- 2wholeboneless chicken breasts
- 2garlic cloves, minced
- 1/2teaspoongingerroot, minced
- 1/8teaspoonsalt & pepper
- 1/4cupflour
- 1egg, beaten
- 1cuppanko(japanese bread crumbs)
- 3cupsoil(for frying)

sauce
- 1/3cuplemon juice
- 1/3cupwater
- 1/3cupsugar
- 1/8teaspoonwhite pepper
- 1tablespooncornstarch
- 1dashsalt
DIRECTIONS
- Cut chicken in half and pound to 1/2 inch thickness.
- Rub chicken with garlic, ginger, salt, and pepper.
- Coat chicken with flour, dip in beaten egg and press on panko.
- Deep fry at 350 degrees F, turning once or twice until golden brown on both sides.
- Combine sauce ingredients and bring to a boil.
- To serve, cut chicken into bite size pieces and pour sauce over.

INGREDIENTS
- 1/4cupoatmeal
- 1/2cupwateror milk
- 1egg
- butter, to taste
- all purpose Greek seasoning, to taste
DIRECTIONS
- mix the oatmeal and the water in a microwave safe bowl.
- microwave on high for just over a minute (I’m sorry, I only have a dial on my micorwave).
- stir.
- hollow out a hole in the center of the oatmeal.
- gently break the egg into the hole.
- microwave on high for about a minute, depending on how you like your yolk.
- add butter and seasoning to taste.

INGREDIENTS
- 1/3cupsoy sauce
- 1/3cuphoney
- 1tablespoon mincedgarlic
- 1tablespoon gratedgingerroot
- 1-2lbflank steaks
DIRECTIONS
- Lay flank steak flat and, with a sharp knife, score deep cuts diagonally at one-inch intervals across the entire steak.
- Repeat at a 90-degree angle to create one-inch squares across the surface of the steak.
- Repeat on other side of meat.
- Combine soy sauce and honey in a small glass bowl.
- Whisk until blended.
- Stir in garlic and ginger.
- Place steak in 13X9-inch pan.
- Pour marinade over meat, and turn to fully coat.
- Cover pan with lid or foil and store in refrigerator overnight.
- Turn steak at least once while marinating.
- Grill 3 to 5 minutes on each side, or until desired temperature is reached.
- Do not overcook.
- Steak should be pink in the middle.
- The ends will be on the well done side for those who prefer it.
- Slice meat thinly at an angle.
- Note: You can make an extra batch of sauce to save and serve warm at the table for pouring on top of the meat.

INGREDIENTS
- 3/4cupcornmeal
- 1 1/4cupsmilk
- 1cupgluten-free flour(I use Gluten-Free Flour Blend)
- 1tablespoonbaking powder
- 1/2teaspoonsalt
- 1/2cupsugar
- 1 1/2teaspoonsguar gum(or xanthan gum)
- 1egg, slightly beaten
- 1/4cupcooking oil
DIRECTIONS
- Combine cornmeal and milk in a microwave safe bowl.Microwave on high for one minute, and let stand.
- Preheat oven to 400°FLine muffin tin with paper baking cups, and spray with oil or non-stick spray.
- Combine remaining dry ingredients in a separate bowl.
- Add egg and oil to cornmeal mixture.
- Add cornmeal mixture to dry ingredients, and stir with a fork until blended.Do not over mix.
- Fill cups 2/3 full, and bake for 20 - 25 minutes.

INGREDIENTS
- 1cup warmmilk(70 to 80 degrees F.)
- 2teaspoonsvanilla essence
- 1/2cupbutteror margarine, softened
- 1/4cupsugar
- 2eggs
- 1 1/2teaspoonssalt
- 3 1/2cupsall-purpose flour
- 1/2cupwheat germ
- 2 1/4teaspoonsquick-rising yeast
DIRECTIONS
- In bread machine pan, put in the following order: butter, warm milk, vanilla essence, eggs, sugar, flour, salt and wheat germ. And lastly yeast.
- Select dough setting.
- When cycle is completed, turn dough onto a lightly floured surface.
- Shape the dough into about 16 balls and placed them into 2 greased loaf pans, but you can also shape them into buns.
- Cover the pan (and dough) with saran wrap and leave it in a warm, draft-free place to rise for about an hour - the dough should have expanded to at least double it’s original size.
- Bake at 350 degrees for 13-16 minutes or until golden brown.
