Lemon Chicken (Chinese Style) Recipe

INGREDIENTS

  1. 2wholeboneless chicken breasts
  2. 2garlic cloves, minced
  3. 1/2teaspoongingerroot, minced
  4. 1/8teaspoonsalt & pepper
  5. 1/4cupflour
  6. 1egg, beaten
  7. 1cuppanko(japanese bread crumbs)
  8. 3cupsoil(for frying)
  9. sauce

  10. 1/3cuplemon juice
  11. 1/3cupwater
  12. 1/3cupsugar
  13. 1/8teaspoonwhite pepper
  14. 1tablespooncornstarch
  15. 1dashsalt

DIRECTIONS

  1. Cut chicken in half and pound to 1/2 inch thickness.
  2. Rub chicken with garlic, ginger, salt, and pepper.
  3. Coat chicken with flour, dip in beaten egg and press on panko.
  4. Deep fry at 350 degrees F, turning once or twice until golden brown on both sides.
  5. Combine sauce ingredients and bring to a boil.
  6. To serve, cut chicken into bite size pieces and pour sauce over.

An Oatmeal Poached Egg Recipe

INGREDIENTS

  1. 1/4cupoatmeal
  2. 1/2cupwateror milk
  3. 1egg
  4. butter, to taste
  5. all purpose Greek seasoning, to taste

DIRECTIONS

  1. mix the oatmeal and the water in a microwave safe bowl.
  2. microwave on high for just over a minute (I’m sorry, I only have a dial on my micorwave).
  3. stir.
  4. hollow out a hole in the center of the oatmeal.
  5. gently break the egg into the hole.
  6. microwave on high for about a minute, depending on how you like your yolk.
  7. add butter and seasoning to taste.

Soy Ginger Flank Steak With Garlic Recipe

INGREDIENTS

  1. 1/3cupsoy sauce
  2. 1/3cuphoney
  3. 1tablespoon mincedgarlic
  4. 1tablespoon gratedgingerroot
  5. 1-2lbflank steaks

DIRECTIONS

  1. Lay flank steak flat and, with a sharp knife, score deep cuts diagonally at one-inch intervals across the entire steak.
  2. Repeat at a 90-degree angle to create one-inch squares across the surface of the steak.
  3. Repeat on other side of meat.
  4. Combine soy sauce and honey in a small glass bowl.
  5. Whisk until blended.
  6. Stir in garlic and ginger.
  7. Place steak in 13X9-inch pan.
  8. Pour marinade over meat, and turn to fully coat.
  9. Cover pan with lid or foil and store in refrigerator overnight.
  10. Turn steak at least once while marinating.
  11. Grill 3 to 5 minutes on each side, or until desired temperature is reached.
  12. Do not overcook.
  13. Steak should be pink in the middle.
  14. The ends will be on the well done side for those who prefer it.
  15. Slice meat thinly at an angle.
  16. Note: You can make an extra batch of sauce to save and serve warm at the table for pouring on top of the meat.

Gluten-Free Cornmeal Muffins Recipe

INGREDIENTS

  1. 3/4cupcornmeal
  2. 1 1/4cupsmilk
  3. 1cupgluten-free flour(I use Gluten-Free Flour Blend)
  4. 1tablespoonbaking powder
  5. 1/2teaspoonsalt
  6. 1/2cupsugar
  7. 1 1/2teaspoonsguar gum(or xanthan gum)
  8. 1egg, slightly beaten
  9. 1/4cupcooking oil

DIRECTIONS

  1. Combine cornmeal and milk in a microwave safe bowl.Microwave on high for one minute, and let stand.
  2. Preheat oven to 400°FLine muffin tin with paper baking cups, and spray with oil or non-stick spray.
  3. Combine remaining dry ingredients in a separate bowl.
  4. Add egg and oil to cornmeal mixture.
  5. Add cornmeal mixture to dry ingredients, and stir with a fork until blended.Do not over mix.
  6. Fill cups 2/3 full, and bake for 20 - 25 minutes.

Super Soft Bread Machine Rolls With Wheat Germ Recipe

INGREDIENTS

  1. 1cup warmmilk(70 to 80 degrees F.)
  2. 2teaspoonsvanilla essence
  3. 1/2cupbutteror margarine, softened
  4. 1/4cupsugar
  5. 2eggs
  6. 1 1/2teaspoonssalt
  7. 3 1/2cupsall-purpose flour
  8. 1/2cupwheat germ
  9. 2 1/4teaspoonsquick-rising yeast

DIRECTIONS

  1. In bread machine pan, put in the following order: butter, warm milk, vanilla essence, eggs, sugar, flour, salt and wheat germ. And lastly yeast.
  2. Select dough setting.
  3. When cycle is completed, turn dough onto a lightly floured surface.
  4. Shape the dough into about 16 balls and placed them into 2 greased loaf pans, but you can also shape them into buns.
  5. Cover the pan (and dough) with saran wrap and leave it in a warm, draft-free place to rise for about an hour - the dough should have expanded to at least double it’s original size.
  6. Bake at 350 degrees for 13-16 minutes or until golden brown.
