Crispy Parmesan Breaded Chicken for One Recipe

INGREDIENTS

  1. 1boneless skinless chicken breast
  2. 1tablespoonnonfat plain yogurt
  3. 1teaspoongarlic powder
  4. 1tablespoonItalian style breadcrumbs
  5. 1/2tablespoonparmesan cheese
  6. 1/2teaspoonbasil
  7. salt and pepper

DIRECTIONS

  1. Preheat oven to 350°.
  2. Combine breadcrumbs, cheese, basil, salt and pepper and stir together.
  3. Place these ingredients on a plate.
  4. Coat chicken with a thin layer of non-fat yogurt on each side.
  5. Sprinkle garlic powder, salt and pepper onto each side of chicken breast.
  6. Dip both sides of coated chicken into breadcrumb mixture and shake off excess.
  7. Place chicken in a Pam-coated pan and brown on medium-high heat for about 3 minutes on each side.
  8. Place breast on a foil-lined baking sheet and bake for 30-35 minutes, flipping chicken half-way thru baking to ensure even browning.

Yet Another Ham Ball Recipe

INGREDIENTS

  1. 2 1/2lbsground ham
  2. 2lbsground beef
  3. 1lbground pork
  4. 2cupsgraham cracker crumbs
  5. 3eggs
  6. 2 1/2cupsbrown sugar
  7. 2 (10 1/2 ounce)canstomato soup
  8. 2/3cupvinegar
  9. 2teaspoonsdry mustard
  10. 1tablespoonpure maple syrup

DIRECTIONS

  1. Combine craham cracker crumbs, eggs and meat mixture.
  2. Roll into balls about the size of golf balls.
  3. Place in baking pan.
  4. Combine brown sugar, tomato soups,vinegar , dry mustard and maple syrup.
  5. Pour over ham balls.
  6. Bake at 300 for 45 minutes.
  7. *can be made ahead and frozen.

Chinese Meat Balls Recipe

INGREDIENTS

  1. 2lbsground beef
  2. 1/2cupmilk
  3. 1/4cupbreadcrumbs
  4. 1/4teaspoonsalt
  5. 2teaspoonssoy sauce
  6. 1/4teaspoonginger
  7. FLOUR MIXTURE

  8. 1/3cupflour
  9. 1/2teaspoonground ginger
  10. SAUCE

  11. 3green peppers, cut into 1/2 inch strips
  12. 1 (14 ounce)canbean sprouts, including liquid
  13. 1 (7 ounce)canmushrooms, including liquid
  14. 1/3cupsoy sauce
  15. 1/4cupbrown sugar
  16. 1tablespooncornstarch
  17. 2tablespoonswater

DIRECTIONS

  1. Mix together gr. beef, milk,bread crumbs,salt, 2 teaspoons soy sauce, and 1/4 teaspoons ginger.
  2. Form into 24 balls.
  3. Roll in flour mixture.
  4. Brown in skillet with 2 T. oil.
  5. Remove and drain on paper towels.
  6. Saute pepper strips 5 minutes in skillet.
  7. Add bean sprouts, mushrooms, soy sauce,and brown sugar.
  8. Bring to boil, then simmer 5 minutes.
  9. Stir in cornstarch-water mixture.
  10. Cook and stir until thickened.
  11. Add meat balls and heat thoroughly.

Orange Roughy Mozzarella Recipe

INGREDIENTS

  1. 1lborange roughy
  2. 1/4teaspoonseasoning salt
  3. 3tablespoonsmargarine
  4. 1/3cupsour cream
  5. 1/2cupmozzarella cheese
  6. 1tablespoon choppedparsley
  7. 1teaspoonpaprika

DIRECTIONS

  1. Wipe and dry fish.
  2. Arrange in glass dish.
  3. Sprinkle with salt.
  4. Dot with margarine.
  5. Microwave on high for 2 minutes.
  6. Blend sour cream and cheese.
  7. Spread on fish.
  8. Sprinkle with parsley and paprika,.
  9. Cover with waxed paper.
  10. Microwave 3 minutes or unil fish flakes with fork.

Honey Mustard Chicken Recipe

INGREDIENTS

  1. 4boneless skinless chicken breasts
  2. 1/3cupmargarine, melted
  3. 1/3cuphoney
  4. 2tablespoonsmustard
  5. 1/4teaspoonsalt

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Arrange thawed chicken breasts in shallow baking dish.
  3. Mix all four ingredients into saucy consistency.
  4. Pour mixture over chicken.
  5. Bake for 1 hour basting every 15 minutes.
