Crock Pot Curry Split Pea Soup Recipe

INGREDIENTS

  1. 16ouncesdried split peas, rinsed, drained and picked over
  2. 1mediumonion, chopped
  3. 6cupsboiling water
  4. 2 1/2tablespoonscurry powder
  5. 6carrots, peeled and chopped
  6. 2celery ribs, chopped
  7. 1/4teaspoonseasoning salt(to taste)
  8. 1/4teaspoonfresh ground pepper(to taste)
  9. 2cupsCanadian bacon, chopped

DIRECTIONS

  1. Place all ingredients except 1/2 Tbls. of the curry powder in a crock pot.
  2. Cover and cook on low setting for 10 to 11 hours.
  3. Stir in the remaining 1/2 Tbls. curry powder.
  4. Add more seasoned salt and pepper to taste, if needed.
  5. Garnish with chopped chives and croutons.

Chicken Broccoli Cheesy Recipe

INGREDIENTS

  1. 1cuplow fat cottage cheese
  2. 1/2cuplight sour cream
  3. 1/4cupskim milk
  4. 1egg
  5. 1cupreduced-fat sharp cheddar cheese, shredded
  6. 2tablespoonsolive oil
  7. 2boneless skinless chicken breasts, cubed
  8. 1smallyellow onion, diced
  9. 1tablespoongarlic, minced
  10. 1 (14 1/2 ounce)canno-salt-added diced tomatoes, drained
  11. 4cupsbroccoli florets, steamed
  12. 1tablespoonred pepper flakes
  13. 1teaspooncumin

DIRECTIONS

  1. Preheat oven to 350.
  2. Blend cottage cheese and sour cream in a blender until smooth.
  3. Add milk, egg, and cheddar cheese to blender and mix ingredients well.
  4. Set aside cheese mixture.
  5. Heat oil over medium heat in a nonstick skillet.
  6. Add onion, chicken, and garlic to skillet and saute until chicken is done.
  7. Add tomatoes, broccoli, red pepper flakes, and cumin to skillet and stir to combine.
  8. Transfer chicken mixture into 9×9 pan.
  9. Pour cheese mixture over chicken mixture.
  10. Bake at 350 for 25-30 minutes.

Delicious Indoor S’mores Recipe

INGREDIENTS

  1. 8cupsGolden Grahams cereal(13-oz box)
  2. 6cupsminiature marshmallows, divided(10.5-oz bag)
  3. 1 1/2cupsmilk chocolate chips(9 oz)
  4. 5tablespoonsbutter, cut into pieces
  5. 1/4cuplight corn syrup (optional)
  6. 1teaspoonvanilla extract

DIRECTIONS

  1. Grease 13X9 inch baking pan.
  2. Pour cereal into large bowl.
  3. Heat 5 cups marshmallows, chocolate chips, butter and corn syrup in medium heavy-duty saucepan over low heat, stirring constantly, until smooth.
  4. Remove from heat and stir in vanilla extract.
  5. Pour marshmallow mixture over cereal; stir until well coated.
  6. Stir in remaining marshmallows.
  7. Press mixture into prepared pan.
  8. Refrigerate for 1 hour or until firm. Cut into bars.

Garlicky Roasted Potatoes With Herbs Recipe

INGREDIENTS

  1. 2tablespoonsgarlic, chopped
  2. 1tablespoonolive oil
  3. 1 1/2-2lbsyukon gold potatoesor red potatoes, quartered
  4. 1/2teaspoonsalt
  5. 1/4teaspoonpepper
  6. 1/4cupflat leaf parsley, chopped
  7. 1/2teaspoonlemon rind, grated

DIRECTIONS

  1. Preheat oven to 475.
  2. Combine garlic and oil in a small saucepan over med heat.Cook 2 min or til golden, stirring frequently.Do not burn.
  3. Remove garlic from oil with slotted spoon or by pouring through a sieve.Set aside.Drizzle garlic infused oil over potatoes tossing well to coat.Arrange on a baking sheet coated with cooking spray in a single layer.Sprinkle with salt and pepper.
  4. Bake 30-40 min or til golden and tender. Combine reserved garlic, parsley and lemon rind in a small bowl.Sprinkle over potatoes.
