INGREDIENTS
- 16ouncesdried split peas, rinsed, drained and picked over
- 1mediumonion, chopped
- 6cupsboiling water
- 2 1/2tablespoonscurry powder
- 6carrots, peeled and chopped
- 2celery ribs, chopped
- 1/4teaspoonseasoning salt(to taste)
- 1/4teaspoonfresh ground pepper(to taste)
- 2cupsCanadian bacon, chopped
DIRECTIONS
- Place all ingredients except 1/2 Tbls. of the curry powder in a crock pot.
- Cover and cook on low setting for 10 to 11 hours.
- Stir in the remaining 1/2 Tbls. curry powder.
- Add more seasoned salt and pepper to taste, if needed.
- Garnish with chopped chives and croutons.

INGREDIENTS
- 1cuplow fat cottage cheese
- 1/2cuplight sour cream
- 1/4cupskim milk
- 1egg
- 1cupreduced-fat sharp cheddar cheese, shredded
- 2tablespoonsolive oil
- 2boneless skinless chicken breasts, cubed
- 1smallyellow onion, diced
- 1tablespoongarlic, minced
- 1 (14 1/2 ounce)canno-salt-added diced tomatoes, drained
- 4cupsbroccoli florets, steamed
- 1tablespoonred pepper flakes
- 1teaspooncumin
DIRECTIONS
- Preheat oven to 350.
- Blend cottage cheese and sour cream in a blender until smooth.
- Add milk, egg, and cheddar cheese to blender and mix ingredients well.
- Set aside cheese mixture.
- Heat oil over medium heat in a nonstick skillet.
- Add onion, chicken, and garlic to skillet and saute until chicken is done.
- Add tomatoes, broccoli, red pepper flakes, and cumin to skillet and stir to combine.
- Transfer chicken mixture into 9×9 pan.
- Pour cheese mixture over chicken mixture.
- Bake at 350 for 25-30 minutes.

INGREDIENTS
- 8cupsGolden Grahams cereal(13-oz box)
- 6cupsminiature marshmallows, divided(10.5-oz bag)
- 1 1/2cupsmilk chocolate chips(9 oz)
- 5tablespoonsbutter, cut into pieces
- 1/4cuplight corn syrup (optional)
- 1teaspoonvanilla extract
DIRECTIONS
- Grease 13X9 inch baking pan.
- Pour cereal into large bowl.
- Heat 5 cups marshmallows, chocolate chips, butter and corn syrup in medium heavy-duty saucepan over low heat, stirring constantly, until smooth.
- Remove from heat and stir in vanilla extract.
- Pour marshmallow mixture over cereal; stir until well coated.
- Stir in remaining marshmallows.
- Press mixture into prepared pan.
- Refrigerate for 1 hour or until firm. Cut into bars.

INGREDIENTS
- 2tablespoonsgarlic, chopped
- 1tablespoonolive oil
- 1 1/2-2lbsyukon gold potatoesor red potatoes, quartered
- 1/2teaspoonsalt
- 1/4teaspoonpepper
- 1/4cupflat leaf parsley, chopped
- 1/2teaspoonlemon rind, grated
DIRECTIONS
- Preheat oven to 475.
- Combine garlic and oil in a small saucepan over med heat.Cook 2 min or til golden, stirring frequently.Do not burn.
- Remove garlic from oil with slotted spoon or by pouring through a sieve.Set aside.Drizzle garlic infused oil over potatoes tossing well to coat.Arrange on a baking sheet coated with cooking spray in a single layer.Sprinkle with salt and pepper.
- Bake 30-40 min or til golden and tender. Combine reserved garlic, parsley and lemon rind in a small bowl.Sprinkle over potatoes.
