INGREDIENTS
- 4mediumkumara(orange or golden)
- 1dashoil
- 1/2cup well drainedcrushed pineapple
- 1teaspoon mincedfresh ginger (optional)
- 2-3 trimmed and choppedspring onions
- 340gcorned beef(try a lower fat, lower sodium version(you won’t taste the difference!)
- 1/4-1/2cup gratedcheese
DIRECTIONS
- Wash the kumala and dry well. Trim the ends. Rub the kumala with oil and place on a baking tray. Cook at 200oC for 45-50 minutes or until well cooked. Alternatively prick the kumara with a fork and microwave on high power for 15 minutes or until tender.
- Slice a top off each kumala and scoop the flesh into a bowl.
- Add the pineapple, ginger, spring onions and Corned Beef and mix gently with a fork to break up the corned beef and mix the ingredients lightly. Do not mash.
- Re-fill each kumala with 1/4 of the mixture and return or place on the baking tray. Sprinkle each with a little grated cheese.
- Cook at 200oC for 15 minutes until piping hot and golden.

INGREDIENTS

For Biscuits
- 2cupsself-rising flour
- 3/8cup coldunsalted butter, cut into 1/2-inch pieces
- 1cupwhole milk
- all-purpose flour, for dusting

For Chicken In Gravy
- 1mediumonion, finely chopped
- 1 1/2carrots, finely chopped
- 1 1/2celery ribs, finely chopped
- 1/4teaspoonsalt
- 3/4teaspoonblack pepper
- 3tablespoonsunsalted butter
- 2tablespoonsall-purpose flour
- 1 3/4cupsreduced-sodium chicken broth(14 fl oz)
- 1/2teaspoon choppedfresh thyme
- 1/2cuphalf-and-half
- 3cups choppedcooked chicken(from a 3- to 3 1/2-lb rotisserie chicken)
- 1/2teaspoonfresh lemon juice
DIRECTIONS
- Make Biscuits:.
- Put oven rack in middle position and preheat oven to 450°F.
- Blend together flour and butter in a bowl with a pastry blender or your fingertips until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Stir in milk with a fork just until a sticky dough forms.
- Turn dough out onto a floured surface and gently knead 7 or 8 times, (Do not overwork, or biscuits will be tough).
- Pat dough into a 9- by 6-inch rectangle on a lightly floured surface, then cut into 6 (3-inch) squares.
- Arrange squares 1 inch apart on an ungreased baking sheet and bake until golden brown, 15 to 18 minutes.
- Cool to warm on baking sheet on a rack.
- Make Chicken In Gravy While Biscuits Bake:.
- Cook onion, carrot, celery, salt, and pepper in butter in a 10-inch heavy skillet over moderate heat, stirring occasionally, until vegetables are softened, 8 to 10 minutes. Sprinkle flour over vegetables and cook, stirring, 1 minute.
- Stir in broth and thyme and bring to a boil, stirring, then boil over moderate heat, stirring occasionally, 2 minutes.
- Add half-and-half and chicken to gravy and gently simmer until chicken is heated through, about 3 minutes.
- Stir in lemon juice.
- To Serve:.
- Halve biscuits and put each bottom half in a shallow bowl.
- Spoon chicken in gravy over biscuit bottoms and cover with biscuit tops.

INGREDIENTS
- 2tablespoonsolive oil
- 2tablespoonsunsalted butter
- 4garlic cloves, finely minced(go ahead and add more if you prefer)
- 1/8teaspoonsalt, plus
- 1/4teaspoonsalt
- 1lb freshbread dough(if using frozen bread dough, thaw first)
DIRECTIONS
- Heat the olive oil and butter over low-medium heat until butter is melted.
- Add garlic and 1/8 teaspoon of the salt. Cook 3-4 minutes to infuse. BE CAREFUL NOT TO BURN, stirring constantly! Lower heat if necessary.
- Set aside.
- Roll out the bread dough on a floured surface to a 12 inch by 10 inch rectangle. Cut the dough horizontally into 12 strips, thencut in half down the center vertically. You will have a total of 24, 5 inch by 1 inch strips.
- Tie each strip into a knot stretching dough [slightly] to aid in tying. Transfer the knots to two large baking sheets. Sprinkle with the remaining 1/4 teaspoon salt.
- Cover knots with a clean flour sacking towel and proof in a warm place to rise for 30 minutes.
- Heat oven to 350 degrees. Uncover the knots and brush each one with a small amount of the garlic-butter sauce.
- Bake for about 20 minutes, rotating pans at the halfway mark.
- Once baked, immediately transfer to a large bowl and toss with the remaining garlic-butter sauce.

INGREDIENTS
- 2tablespoonsbutter
- 1tablespoonolive oil
- 2largeonions, chopped
- 2stickscelery, chopped
- 2carrots, chopped or thinly sliced
- 2 (28 ounce)canstomatoes in puree, diced
- 1 (28 ounce)canwater
- 1tablespoonchicken base(or amount of bullion for 3 cups)
- 1/4teaspoongarlic powder(see note)
- 3/4teaspoonthyme
- 1teaspoonbasil
- 1 1/2teaspoonssugar
- 2dashesfresh ground black pepper(a few grinds)
DIRECTIONS
- In a large pot, melt the butter and olive oil.Add the onions, and saute until transparent.
- Add the carrots and celery, and cook until soft, cooked, concentrated and a bit caramelized.
- Add the rest of the ingredients, bring to a simmer, and cook about 20 minutes.
- NOTES:.
- This is delicious as it is, but I sometimes puree about ½.
- It would probably be terrific fully pureed, maybe with some cream added.(Add less water.).
- Ingredient amounts can be adjusted to taste.I am pretty sure this would still be good with all olive oil, or veggie stock, or even no stock.Actually, the taste is very full, and more water could be added if desired.
- If you have the time, instead of the garlic powder, add a bit of crushed garlic with 1 T of water a couple of minutes before adding the tomatoes and water.
- Prep time is the chopping and opening cans.The Cooking time will include some mixing while sauteeing.Your number of servings can also vary.

INGREDIENTS
- 2cupswhite flour
- 1tablespoonfine sugar
- 2teaspoonsbaking powder
- 1/2teaspoonbaking soda
- 1/4teaspoonsalt
- 1/8cup toastedcoconut flakes
- 1/4cupbutter, cold
- 3/4cupmilk, cold
- 1/4teaspoonvanilla
- 1largebanana, mashed
DIRECTIONS
- Preheat oven to 400 degrees.
- Combine, flour, sugar, baking powder, soda, salt and coconut in a large bowl.
- Cut in butter until crumbly, set aside.
- Add the milk, vanilla and banana together.
- Make a well in the center of the flour bowl and pour in milk mixture.
- Stir to moisten only.
- Drop dough by spoonful onto greased cookie sheet.
- Bake at 400 degrees for 15 - 20 minutes.
- Serve hot.
