Peruvian Lamb or Goat Stew Recipe

INGREDIENTS

  1. 5garlic cloves
  2. 2teaspoonsground annatto seed
  3. 3lbslamb chops
  4. 1lblamb ribs
  5. 3teaspoonscoarse grain mustard
  6. 1/2teaspoonsalt
  7. 1 1/2teaspoonsground black pepper
  8. 1 (12 ounce)bottle mexicanpilsner beer
  9. 1bunchcilantro
  10. 1/4bunchparsley
  11. 1tomato
  12. 1onion
  13. 1 1/2teaspoonscumin
  14. 1 (8 ounce)canchicken broth
  15. 1/2cupoil
  16. 1 1/2lbsyucca root

DIRECTIONS

  1. Slice lamb into about 4 ounce size pieces, place the bones aside, but do not dispose of them.
  2. Lay lamb chunks flat in a flat bottom bowl or pie dish.
  3. Mix together 2 cloves diced garlic, 1 tspn. annatto, 1/2 tspn. salt, 1/2 tspn. pepper, 1/2 cup of the beer and 2 tspn. of the mustard.
  4. Pour evenly over your lamb.
  5. Spread the last tspn. of mustard over the top of the lamb meat.
  6. Let stand for 2-4 hours.
  7. Place in blender 1/2 tomatoe, the onion coarsley chopped, the cilantro, parsly, 1 tspn. of the cumin and 1/4 cup of broth/stock.
  8. Mix until well blended.
  9. Peel yucca root and slice into 1 inch cubes.
  10. Place cubes in a pot full of water and bring to a boil.
  11. Boil until yucca is easily penetrated with a fork, then set aside.
  12. Once the meat is marinated, place oil in pan and heat.
  13. When oil is warm, add the meat without the marinade.
  14. Sear the outside evenly and place aside. Now add the vegable blend to the pan and fry for about 1 minute.
  15. Add the meat back in, stir and cook for another 5 minutes over meduim high heat. Add the marinade left over, the bones you set aside before and the rest of the broth/stock.
  16. When stew comes to a boil, reduce heat to medium, add the rest of the chopped tomatoe and leave to simmer for about 1 hour or until meat is very tender.
  17. Stir occasionally. At this time, add the rest of the cumin, annato, pepper and beer.
  18. Bring heat back up to med-high and bring to a boil. Leave boiling for 2 minutes, then reduce heat to low.
  19. Add yucca root and stir.
  20. Let sit for 5 more minutes, then remove from heat.
  21. Serve with spiced rice.

Bread Pudding With Raisins Recipe

INGREDIENTS

  1. 1/2loafwhole wheat bread
  2. 1/2cupmilk
  3. 1/2cupheavy whipping cream
  4. 1cup organiccinnamon applesauce
  5. 1/2-1cupraisins
  6. 3/4teaspooncinnamon
  7. 1teaspoonvanilla
  8. 1/4cupbrown sugar
  9. 3eggs

DIRECTIONS

  1. Preheat oven to 350.
  2. Tear bread into bite sized pieces and place into oven safe baking dish.
  3. Whisk together eggs in a mixing bowl.
  4. Add milk, cream, apple sauce, vanilla, cinnamon and brown sugar to the mixing bowl and combine.
  5. Sprinkle raisins over bread.
  6. Pour liquid over bread and raisins.
  7. Stir all together so that bread is moist.
  8. Bake at 350 for 1 hour.
  9. Serve hot out of the oven or after cooling and refrigerating.

Season’s Crock Pot Chicago Italian Beef Recipe

INGREDIENTS

  1. 1teaspoonsalt
  2. 1teaspoonblack pepper, ground
  3. 1teaspoonoregano
  4. 1teaspoonbasil
  5. 1teaspoononion salt
  6. 3cupswater
  7. 1teaspoonparsley
  8. 1teaspoongarlic powder
  9. 1bay leaf
  10. 1 (2/3 ounce)packagedried Italian salad dressing mix
  11. 5lbsrump roast
  12. 3beef bouillon cubes (optional)
  13. 1green pepper, sliced (optional)

DIRECTIONS

  1. In a medium saucepan over medium heat. Combine the salt, pepper, oregano, basil, onion salt, water, parsley, garlic powder, water, bay leaf and salad dressing mix. Stir well and bring just to a boil.
  2. Place roast in a slow cooker and pour mixture over the roast. cover and cook on low setting for 10-12 hrs or high for 4-5 hours.
  3. Optional - Last 45 minutes add bullion cubes and green pepper.
  4. Remove bay leaf and shred meat with a fork.
  5. Serve on Italian bread.

Cheesy Garlic Bread Recipe

Cheesy Garlic Bread Recipe

INGREDIENTS

  1. 2cupsmozzarella cheese, shredded
  2. 1/2cupparmesan cheese, grated
  3. 1/2cupromano cheese, grated
  4. 1/3cupgarlic, minced
  5. 1/3cupolive oil
  6. 1teaspoonpepper
  7. 1tablespoonfresh parsley, minced
  8. 16ouncesFrench bread, sliced

DIRECTIONS

  1. Mix first seven ingredients together.
  2. Place bread slices on ungreased cookie sheet.
  3. Top each slice with cheese mixture.
  4. Bake or broil until cheese is melted and lightly browned.
