INGREDIENTS
- 5garlic cloves
- 2teaspoonsground annatto seed
- 3lbslamb chops
- 1lblamb ribs
- 3teaspoonscoarse grain mustard
- 1/2teaspoonsalt
- 1 1/2teaspoonsground black pepper
- 1 (12 ounce)bottle mexicanpilsner beer
- 1bunchcilantro
- 1/4bunchparsley
- 1tomato
- 1onion
- 1 1/2teaspoonscumin
- 1 (8 ounce)canchicken broth
- 1/2cupoil
- 1 1/2lbsyucca root
DIRECTIONS
- Slice lamb into about 4 ounce size pieces, place the bones aside, but do not dispose of them.
- Lay lamb chunks flat in a flat bottom bowl or pie dish.
- Mix together 2 cloves diced garlic, 1 tspn. annatto, 1/2 tspn. salt, 1/2 tspn. pepper, 1/2 cup of the beer and 2 tspn. of the mustard.
- Pour evenly over your lamb.
- Spread the last tspn. of mustard over the top of the lamb meat.
- Let stand for 2-4 hours.
- Place in blender 1/2 tomatoe, the onion coarsley chopped, the cilantro, parsly, 1 tspn. of the cumin and 1/4 cup of broth/stock.
- Mix until well blended.
- Peel yucca root and slice into 1 inch cubes.
- Place cubes in a pot full of water and bring to a boil.
- Boil until yucca is easily penetrated with a fork, then set aside.
- Once the meat is marinated, place oil in pan and heat.
- When oil is warm, add the meat without the marinade.
- Sear the outside evenly and place aside. Now add the vegable blend to the pan and fry for about 1 minute.
- Add the meat back in, stir and cook for another 5 minutes over meduim high heat. Add the marinade left over, the bones you set aside before and the rest of the broth/stock.
- When stew comes to a boil, reduce heat to medium, add the rest of the chopped tomatoe and leave to simmer for about 1 hour or until meat is very tender.
- Stir occasionally. At this time, add the rest of the cumin, annato, pepper and beer.
- Bring heat back up to med-high and bring to a boil. Leave boiling for 2 minutes, then reduce heat to low.
- Add yucca root and stir.
- Let sit for 5 more minutes, then remove from heat.
- Serve with spiced rice.

INGREDIENTS
- 1/2loafwhole wheat bread
- 1/2cupmilk
- 1/2cupheavy whipping cream
- 1cup organiccinnamon applesauce
- 1/2-1cupraisins
- 3/4teaspooncinnamon
- 1teaspoonvanilla
- 1/4cupbrown sugar
- 3eggs
DIRECTIONS
- Preheat oven to 350.
- Tear bread into bite sized pieces and place into oven safe baking dish.
- Whisk together eggs in a mixing bowl.
- Add milk, cream, apple sauce, vanilla, cinnamon and brown sugar to the mixing bowl and combine.
- Sprinkle raisins over bread.
- Pour liquid over bread and raisins.
- Stir all together so that bread is moist.
- Bake at 350 for 1 hour.
- Serve hot out of the oven or after cooling and refrigerating.

INGREDIENTS
- 1teaspoonsalt
- 1teaspoonblack pepper, ground
- 1teaspoonoregano
- 1teaspoonbasil
- 1teaspoononion salt
- 3cupswater
- 1teaspoonparsley
- 1teaspoongarlic powder
- 1bay leaf
- 1 (2/3 ounce)packagedried Italian salad dressing mix
- 5lbsrump roast
- 3beef bouillon cubes (optional)
- 1green pepper, sliced (optional)
DIRECTIONS
- In a medium saucepan over medium heat. Combine the salt, pepper, oregano, basil, onion salt, water, parsley, garlic powder, water, bay leaf and salad dressing mix. Stir well and bring just to a boil.
- Place roast in a slow cooker and pour mixture over the roast. cover and cook on low setting for 10-12 hrs or high for 4-5 hours.
- Optional - Last 45 minutes add bullion cubes and green pepper.
- Remove bay leaf and shred meat with a fork.
- Serve on Italian bread.

INGREDIENTS
- 2cupsmozzarella cheese, shredded
- 1/2cupparmesan cheese, grated
- 1/2cupromano cheese, grated
- 1/3cupgarlic, minced
- 1/3cupolive oil
- 1teaspoonpepper
- 1tablespoonfresh parsley, minced
- 16ouncesFrench bread, sliced
DIRECTIONS
- Mix first seven ingredients together.
- Place bread slices on ungreased cookie sheet.
- Top each slice with cheese mixture.
- Bake or broil until cheese is melted and lightly browned.
