INGREDIENTS

  1. 10potatoes, cut
  2. 1/2lbbacon, fried
  3. 1cuppickles, diced

DIRECTIONS

  1. Mash potatoes until creamy.
  2. Add bacon and pickles and stir into potato mixture.
  3. Serve! Yum!

Emerald Soup Recipe

INGREDIENTS

  1. 1/2cuponions, chopped
  2. 1garlic clove, minced
  3. 2tablespoonsbutter
  4. 1tablespoonolive oil
  5. 1 1/2cupschicken broth
  6. 5ouncesfrozen spinach, chopped
  7. 2mediumpotatoes, peeled and chopped(2 cups)
  8. 2cupsbroccoli florets
  9. 1teaspoondry oregano
  10. 1teaspoondry mustard
  11. 1/4teaspoonsalt
  12. 1/4teaspoonnutmeg
  13. 1 1/2cupsmilk
  14. 1dashhot sauce

DIRECTIONS

  1. In a saucepan, cook onion and garlic in hot butter and olive oil over medium high heat 4 to 5 minutes or until onions are tender.
  2. Stir in broth, spinach, potatoes, broccoli, oregano, mustard, salt, nutmeg and hot sauce.
  3. Bring to boil; reduce heat.
  4. Cover; simmer 15 minutes or until vegetables are very tender. Cool slightly.
  5. Transfer mixture to a blender and blend until smooth.
  6. Return to pan. Stir in milk. Heat through.
  7. Serve with croutons if desired.

Basil Orange Chicken Recipe

Basil Orange Chicken Recipe

INGREDIENTS

  1. 8boneless skinless chicken breast halves
  2. 1/3cuporange juice
  3. 3tablespoonscanola oil
  4. 3tablespoonshoney
  5. 2 1/4teaspoons choppedfresh basil or3/4 teaspoondried basil
  6. 3tablespoonsvegetable oil

DIRECTIONS

  1. Rinse the chicken and pat dry.Place in a sealable plastic food storage bag.
  2. Pour a mixture of the orange juice, canola oil, honey and basil over the chicken, tossing to coat; seal tightly.
  3. Marinate in the refrigerator for 6 to 8 hours, tossing occasionally.Drain, reserving the marinade.
  4. Brown the chicken on both sides in the vegetable oil in a skillet; drain.Arrange the chicken in a glass baking dish.Pour the reserved marinade over the chicken.
  5. Bake at 350 degrees for 25 minutes or until tender.Serve hot or cold.

Ila’s Throw at the Wall Cookies Recipe

INGREDIENTS

  1. 1cupbutter
  2. 1cupsugar
  3. 1cup firmly packedbrown sugar
  4. 1largeegg
  5. 1cupcanola oil
  6. 3 1/2cups siftedflour
  7. 1teaspoonbaking soda
  8. 1teaspoonsalt
  9. 1cuprolled oats
  10. 1/2cupcoconut
  11. 1cupcorn flakes, crushed
  12. 1 1/4cupswalnutsor pecans
  13. 1teaspoonvanilla

DIRECTIONS

  1. Cream the butter and sugars together. Add egg and beat until light and fluffy.
  2. Add the oil and blend. Add flour, baking soda and salt. Mix well.
  3. Mix in remaining ingredients and form into balls.
  4. Place on ungreased cookie sheet and bake for 12 minutes at 350°.

Parmesan and Pine-Nut Crusted Chicken Breasts Recipe

INGREDIENTS

  1. 1cupItalian seasoned breadcrumbs
  2. 1/4cup shreddedparmesan cheese
  3. 3tablespoonspine nuts
  4. 1teaspooncrushed red pepper flakes
  5. 1/2teaspooncoarse black pepper
  6. 2garlic cloves, minced
  7. 4boneless skinless chicken breasts, pounded thin
  8. 1/4cupEgg Beaters egg substitute
  9. 2tablespoonsolive oil

DIRECTIONS

  1. Place first 6 ingredients in food processor, process until nuts are chopped finely. Pour mixture onto a plate.
  2. Coat chicken in Egg Beaters and dredge in bread crumb mixture
  3. Heat olive oil in a large skillet over medium-high. Place chicken breasts in the skillet and cook 3 minutes on each side, until browned.
  4. Transfer chicken to a baking dish and finish cooking in the oven at 375 degrees for 15-20 minutes.
  5. Serve chicken topped with jarred pesto sauce or heated marinara sauce.
