Atjar Tumis Djamur (Mushroom Pickles) Recipe

INGREDIENTS

  1. 8ouncesmushrooms, fresh sliced
  2. 3cupswhite vinegar
  3. 3ouncesshallots, slivered
  4. 1teaspooncumin powder

DIRECTIONS

  1. Heat vinegar and cumin in a non-aluminum pan until boiling.
  2. Simmer five minutes.
  3. Place mushrooms and shallots in a small pan (not aluminum) and cover with a saucer and weight to hold it down.
  4. Pour vinegar mixture over mushrooms to cover.
  5. Return pan to stove andbring to a simmer.
  6. Simmer 10 to 15 minutes or until mushrooms are just tender.
  7. Remove from heat and let mushrooms cool in the vinegar.
  8. Drain and refrigerate until ready to serve.

Chewy Chocolate Chip Cookies - Good Eats Recipe

INGREDIENTS

  1. 1cupunsalted butter
  2. 2 1/4cupsbread flour
  3. 1teaspoonkosher salt
  4. 1teaspoonbaking soda
  5. 1/4cupsugar
  6. 1 1/4cupsbrown sugar
  7. 1egg
  8. 1egg yolk
  9. 2tablespoonsmilk
  10. 1 1/2teaspoonsvanilla extract
  11. 2cupssemi-sweet chocolate chips

DIRECTIONS

  1. Heat oven to 375 degrees F.
  2. Melt the butter in a heavy-bottom medium saucepan over low heat.
  3. Sift together the flour, salt, and baking soda and set aside.
  4. Pour the melted butter in the mixer’s work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed.
  5. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined.
  6. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.
  7. Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet.
  8. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.

Dorito Chicken With Mexican Rice Recipe

INGREDIENTS

  1. 2cups shreddedcooked chicken
  2. 1 (10 3/4 ounce)canrotel, undrained
  3. 1 (10 3/4 ounce)canlow-fat cream of chicken soup
  4. 1 (10 3/4 ounce)canlow-fat cream of mushroom soup
  5. 1/4loafVelveeta cheese, diced
  6. 2teaspoonscumin powder
  7. crushedDoritos
  8. Rice

  9. 1tablespoonolive oil
  10. 1mediumonion, diced
  11. 2cupsMinute Rice
  12. 1 1/2cupschicken broth
  13. 1/4cuptomato sauce

DIRECTIONS

  1. Heat olive oil in a saucepan over medium-high. Add onion and cook until tender.
  2. Add rice and stir to coat in oil and cook about one minute.
  3. Add broth and tomato sauce, bring to a boil, then cover and reduce heat to low for 5-10 minutes.
  4. While rice is cooking, combine soups, Rotel, Velveeta and cumin in a large microwave-safe bowl. Microwave on High for 2 minutes.
  5. Add chicken and continue heating in the microwave until Velveeta is melted and mixture is hot.
  6. Serve chicken over rice, topped with crushed Doritoes. Yum!

Super Simple & Fantastic Chili Dogs (Or Just Chili) Recipe

INGREDIENTS

  1. 1 (28 ounce)canstewed tomatoes
  2. 1 (398 ml)canbeans(i like the maple syrup type, might only be in Canada)
  3. 1/2cupsugar
  4. 1lbhamburger(I use lean)
  5. 1/4cupchili powder
  6. 12hot dogs
  7. 12hotdog buns
  8. 1cup gratedcheese(I like cheddar)

DIRECTIONS

  1. Brown off the hamburger, drain and put aside.
  2. Pour stewed tomato into pot, blend with hand blender until smooth.
  3. Add hamburger, beans, sugar and chili powder.
  4. Stir together.
  5. Simmer on medium low for 1 hour.
  6. After chili is cooked cook the hot dogs.
  7. Put some chili in hot dog bun with cheese, then insert hot dog, then top with more chili and cheese and enjoy.
