INGREDIENTS
- 2lbslean ground beef
- 2cups choppedonions
- 1cup choppedgreen peppers
- 6garlic cloves, minced
- 3 (15 ounce)canskidney beans, rinsed and drained
- 2 (15 ounce)cansblack beans, rinsed and drained
- 2 (14 1/2 ounce)cansdiced tomatoes, undrained
- 2 (8 ounce)canstomato sauce
- 5teaspoonschili powder
- 1teaspoondried oregano
- 1tablespoondried basil, crushed
- 1/2teaspoonblack pepper
DIRECTIONS
- In a large saucepan cook ground beef, onion, sweet pepper, and garlic until meat is brown and onion is tender; drain, fat.
- Stir in beans, undrained tomatoes, tomato sauce, chili powder, basil, oregano, and black pepper.
- Bring to boiling; reduce heat. Simmer, covered, for 20 minutes.

INGREDIENTS
- 1/2cupbutteror margarine
- 1cupwater
- 1/2cupshortening
- 2cupssugar
- 2cupsflour
- 4tablespoonscocoa
- 1teaspoonbaking soda
- 1pinchsalt
- 2eggs, beaten
- 1teaspoonvanilla extract
- 1/2cupbuttermilk

ICING
- 1/2cupbutteror margarine
- 1/3cupmilk
- 4cupspowdered sugar(1 lb box)
- 4tablespoonscocoa
- 1teaspoonvanilla
DIRECTIONS
- In a saucepan, add butter or margarine, water and shortening. Bring to a boil.
- In a bowl, mix together sugar, flour, cocoa, baking soda, and salt. Add the dry mix to the liquid mix in saucepan.
- Add eggs, vanilla and buttermilk.
- Bake in 9×13 pan at 400 degrees until toothpick comes out clean (about 30 minutes.).
- ICING:.
- In saucepan, melt butter or margarine.
- Add cocoa and milk. Bring to a boil, but do not allow to boil long.
- Stir in sugar and vanilla.
- Spread on slightly cooled cake. You may have to spoon the icing from the corners to the middle a few times until it starts to set up.

INGREDIENTS

Dough
- 1 (3/8 ounce)packagedry yeast
- 1/4cupwarm water
- 2tablespoonssugar
- 1teaspoonsalt
- 1 1/2cupsmilk
- 1egg
- 1/4cupoilor butter
- 4 1/2cupsflour

Filling
- 1mediumonion, chopped
- 2lbsground beef
- 1garlic clove, minced
- salt
- pepper
DIRECTIONS
- Dissolve yeast in water and let stand 10 minutes. In large bowl, combine flour, sugar and salt. Make a well in flour and add milk, egg, oil and yeast. Combine to make a soft dough. Knead about 10 minutes. Let rise one half hour to one hour.
- Brown chopped onion and garlic. In separate pan, brown ground beef. Season with salt, pepper, garlic and onion. Cool meat mixture and remove solidified fat.
- Pinch a golf-ball sized piece of dough, flatten with fingers or roll out to 1/8” thickness. Place 2 Tbsp filling in center and bring opposite edges of circle together. Pinch securely. (The traditional shape is a plump center with tapering ends.).
- Let piroshkis rise seam side down, 30 minutes. Heat oven to 350. Brush with egg and bake until golden brown (approx 20 min, it depends on the size). The piroshky may also be deep fried.
- Ed. Note: I also like to add about 1 cup cheese sauce powder (sometimes found in bulk food stores) to the meat mix. I find it gives a slightly cheesy taste. If I do that, I omit the salt.

INGREDIENTS
- 12 1/2ouncesfresh lasagna noodles(cook according to directed on package if not using fresh)

Sauce
- 2tablespoonsolive oil
- 1mediumonion, diced
- 4largegarlic cloves, minced
- 2largecarrots, fine dice
- 2largecelery ribs, thinly sliced
- 1bell pepper, diced
- 2tablespoonsfresh basil, chopped
- 2tablespoonsdried oregano
- 1tablespoonfresh parsley
- 1teaspoonsalt
- 1teaspoonpepper
- 1bay leaf
- 2 (28 ounce)canscrushed tomatoes

Cheese mixture
- 2eggs
- 4ouncesmozzarella cheese, cubed
- 12ouncesmozzarella cheese, shredded
- 1 1/2lbsricotta cheese
- 1/4cupromano cheese, grated
- nutmeg, fresh grated to taste

Filling
- 1 1/2cups leftovermashed potatoes

Topping
- 4ouncesmozzarella cheese, sliced
- 1/8cupromano cheese, grated
DIRECTIONS
- Preheat oven to 350 degree.
- Boil a large pot of salted water, set aside for noodles.
- Sauce:.
- Heat oil in large heavy pot.
- Saute vegetables for 10 minutes.
- Add the canned tomatoes and herbs bring to a boil then reduce and simmer for 30 minutes stirring often.
- Cheese mixture:.
- Mix all cheese ingredients together,set aside.
- In a 9×13 casserole dish place 1 cup of the sauce in bottom of dish.
- Take 2 of the noodles dip into the water and shake to remove water and place over the sauce on bottom of pan; spread with 1 cup of cheese mixture; follow with 1/2 cup mashed potatoes; then 1 cup sauce.
- Repeat step #10 for two more layers.
- Place the last two noodles on top spread remaining cheese mixture on noodles; arrange the sliced mozzarella cheese on top of the cheese mixture; top with remaining sauce; sprinkle with grated cheese.
- Bake lightly covered with foil for 30 minutes uncover and bake 15-20 more minutes. Let rest 15 minutes before slicing.
