Chocolate Iced Coffee Recipe

INGREDIENTS

  1. 3 1/2cupswater
  2. 1cupground coffee
  3. 2tablespoonssugar
  4. 3/4teaspoonground cinnamon
  5. 2cupshalf-and-half
  6. 1/2cupchocolate syrup

DIRECTIONS

  1. Bring water and coffee to a boil in a saucepan.
  2. Remove from heat and let stand 10 minutes.
  3. Pour mixture through a fine wire-mesh strainer into a bowl, discarding coffee grounds.
  4. Stir sugar and cinnamon into coffee until sugar dissolves.
  5. Let cool.
  6. Stir in half and half and chocolate syrup.
  7. Chill 2 hours.
  8. Serve over ice.
  9. Note:To keep coffee from diluting, freeze cubes of half and half and coffee to use in place of ice.

Hugs & Kisses Ice Cream Sundae Recipe

INGREDIENTS

  1. CARAMEL SAUCE

  2. 1cupsugar
  3. 1/4cupbutter
  4. 3/4cupheavy cream, whipping
  5. FOR THE SUNDAE

  6. ice cream, of your choice
  7. Hershey’s Hugs chocolates, chocolates with almonds
  8. hershey’schocolate kisses with almonds
  9. whipped topping
  10. maraschino cherries

DIRECTIONS

  1. SAUCE:.
  2. Stir in sugar and butter in a saucepan over low heat until caramel-color; about 10 minutes.
  3. Heat cream until warm.
  4. Slowly stir in cream.
  5. Boil 1 minute to thicken.
  6. Let cool.
  7. TO ASSEMBLE SUNDAE:.
  8. Put scoops of ice cream into a bowl.
  9. Drizzle with 2 tablespoons caramel sauce; sprinkle with hershey’s candy.
  10. Top with whipped topping and a cherry.

Luby’s Cafeteria Lemon Icebox Pie Recipe

INGREDIENTS

  1. 1 (14 ounce)cansweetened condensed milk
  2. 4extra-large eggs, separated
  3. 1/2cupfresh lemon juice(3 to 4 lemons)
  4. 1teaspoon gratedlemon peel
  5. 1/4cupgranulated sugar
  6. 1 (9 inch)graham cracker crust

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In medium bowl, combine sweetened condensed milk, egg yolks, lemon juice and lemon peel.
  3. Mix until well blended.
  4. Pour into crust.
  5. Bake 5 minutes.
  6. Refrigerate at least 2 hours.
  7. In large bowl, beat egg whites until soft peaks form.
  8. Add sugar, a tablespoon at a time, beating constantly until stiff peaks form.
  9. Spread over filling making sure to go to edge of crust.
  10. Bake 12 to 15 minutes or until lightly browned.
  11. Refrigerate until served.

Red Bean Ice Cream (Azuki Ice Cream) Recipe

INGREDIENTS

  1. 1/2cupsugar
  2. 3egg yolks
  3. 1cupmilk
  4. 1 1/2cups sweetenedred bean paste
  5. 1 1/2cupsheavy whipping cream

DIRECTIONS

  1. In a large bowl, beat sugar and egg yolks till pale and yellow. Set aside.
  2. Bring the milk to a boil in a heavy medium saucepan and then turn off heat.
  3. Slowly whisk hot milk into the yolk/sugar mixture. Pour the entire mixture back into the saucepan.
  4. Turn on to a very low heat and stir constantly, till it thickens. Do not let it boil!
  5. Take the mix off the heat and whisk in the red bean paste. Strain the entire mixture into a large bowl.
  6. Let it cool for about 2 minutes and then stir in the cream. Cover and refrigerate overnight.
  7. Process according to your ice cream maker’s instructions.

Strawberry Smoothie Ice Cream Pie Recipe

INGREDIENTS

  1. 1 (7 ounce)packagewaffle cones, broken into pieces
  2. 6tablespoonsbutter, melted
  3. 1tablespoonsugar
  4. 2 (1 quart)containers premiumvanilla ice cream
  5. 1quartstrawberries
  6. 1/4cuppowdered sugar
  7. 1pintblueberries
  8. 2 ripebananas
  9. waffle cones, pieces if desired(to garnish)
  10. 1wholestrawberryor blueberries, if desired(to garnish)

DIRECTIONS

  1. Put first 3 ingredients in food processor and process until finely crushed.Press firmly onto the bottom of a lightly greased 10 inch springform pan.Bake at 350º for 10 minutes.Cool pan completely on wire rack.
  2. Take vanilla ice cream out of the freezer and let stand for 20 minutes to soften.
  3. Put strawberries and 2 tbsps. powdered sugar in food processor and process until pureed, scraping down sides if needed.Remove mixture from food processor and set aside.
  4. Pur blueberries and 1 tablespoon powdered sugar in food processor and process until pureed, scraping down sides if needed.Remove mixture from processor and set aside.
  5. Mash bananas in a large bowl.Add remaining powdered sugar and mix well.Set aside.
  6. Place 1 quart of the ice cream in a large bowl.Fold strawberry mixture into ice cream until blended.Place in freezer until slightly firm.
  7. Divide remaining quart of ice cream in half.Put halves in different bowls.Stir blueberry mixture in one half and banana mixture in the other half.Place bowls in the freezer.
  8. Spread half of the strawberry mixture evenly into prepared crust in pan.Place pan and remeining strawberry mixture in the freezer.Freeze for 30 minutes.
  9. Spread banana mixture evenly over strawberry mixture and return to freezer for 30 minutes.
  10. Repeat same procedure with blueberry mixture.
  11. Spread remaining strawberry mixture over blueberry mixture.
  12. Freeze for 3 hours or until all layers are firm.
  13. Take pie out of freezer and let stand for 15 minutes before cutting to serve.Garnish pie if desired.
