INGREDIENTS
- 1cup uncookedwhite rice
- 1lbground sausage(I used Jimmy Dean Hot)
- 3/4cupsalsa, thick and chunky
- 1/2cuplight sour cream
- 1 1/2cups shreddedcheddar cheese
- 6largeeggs
- salt and pepper
DIRECTIONS
- Preheat oven to 350 degrees.
- Cook rice according to directions (I used Mean Chef’s recipe # 53520).
- Cook sausage in a skillet until no longer pink.
- Combine sausage, rice, salsa, sourcream and 1 cup of the cheese.
- Spread in a greased 9×13 baking dish.
- Using a small cup, make 6 deep indentions in the rice mixture.Break one egg into each indention and sprinkle with salt and pepper.
- Bake 15 minutes.
- Sprinkle with remaining cheese and bake for 8-10 minutes more or until eggs are just set in center.

INGREDIENTS
- 1cupwhole milk
- 2cupsheavy cream
- 3tablespoonsfresh ginger, grated
- 14ouncescoconut milk
- 15ouncescoconut cream
- 6largeegg yolks
- 1/2cupsugar
- 1pinchsalt
- 2/3cupcandied ginger, cut in small cubes
- 2/3cupmacadamia nuts, pieces
DIRECTIONS
- Heat milk, cream, and fresh ginger in pan over medium heat. As it begins to boil, take off heat, and strain ginger out. Return mixture to pan.
- In a bowl, beat the egg yolk with the sugar and then beat in the coconut milk, salt,and coconut cream. Slowly add this mixture to the hot mixture while stirring. Put on burner on low and cook until the mixture coats the back of a spoon.
- Chill in the fridge or freezer until very cold. Put in ice-cream maker and follow directions. Add the nuts and candied ginger just before putting the finished mixture into the freezer for final chilling.

- 1 1/2ouncesKahlua
- 1/2ouncevanilla vodka
- 1ouncemilk
- 2ounces chilledcoffee
DIRECTIONS
- Mix all ingredients in a shaker with ice.Pour into a chilled glass, over ice.

INGREDIENTS
- 8chai tea teabags
- 4cupshot water
- 1tablespoonvanilla
- 1/4-1/2cup packedbrown sugar
- 1/2cup orange-flavoredcream soda
- 1/2cup vanilla-flavoredcream soda
- 1/2cupmilk
- cinnamon sticks, if desired
DIRECTIONS
- Chill glasses in freezer several hours before serving.
- Steep tea bags in hot water 3 - 5 minutes.Remove bags.
- Stir in vanilla and brown sugar into tea until sugar is dissolved.
- Stir in all remaining ingredients except cinnamon sticks.
- Refrigerate at least 1 - 2 hours to blend flavors.
- Serve over ice.Garnish with cinnamon sticks, if desired.
