Egg Salad Recipe

INGREDIENTS

  1. 6largeeggs
  2. 1/4cupmayonnaise
  3. 2tablespoons mincedonions
  4. 1tablespoonprepared mustard
  5. 1/4teaspoonWorcestershire sauce
  6. salt and pepper

DIRECTIONS

  1. Place eggs in a pot and cover with water.
  2. Bring to a boil.
  3. Boil 2 minutes.
  4. Remove from heat and allow to sit in hot water for 5 minutes.
  5. Run cold water into the pot until the overflow is cold.
  6. Cool the eggs in the cold water.
  7. Peel eggs and cut into small pieces.
  8. Add remaining ingredients and stir.

Smothered Chicken Recipe

INGREDIENTS

  1. 4boneless skinless chicken breast halves
  2. 1/2teaspoonsalt
  3. 1/4teaspoonpepper
  4. 1tablespoonvegetable oil
  5. 2cups diagonally slicedcarrots
  6. 1cup slicedonions
  7. 1clovegarlic, minced
  8. 2 (8 ounce)packagessliced mushrooms
  9. 1/4cupflour
  10. 1 (14 1/2 ounce)canchicken broth
  11. 1tablespoon chopedfresh thyme or1 teaspoondried thyme
  12. choppedfresh chives

DIRECTIONS

  1. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  2. Add chicken and sprinkle with salt and pepper.
  3. Cook for 4 minutes on each side or until lighty browned.
  4. Remove from pan.
  5. Heat the oil in pan over medium high heat.
  6. Add carrot, onion, and garlic.
  7. Cook 2 minutes.
  8. Add mushrooms.
  9. Cook 5 minutes or until the vegetables are tender.
  10. Spinkle with flour.
  11. Cook 2 minutes, stirring constantly.
  12. Add broth and thyme.
  13. Bring to a boil and cook until slightly thick, stirring frequently.
  14. Return chicken to pan.
  15. Cover, reduce heat and simmer for 10 minutes or until chicken is done.
  16. Garnish with chives.

Artichoke Nibbles Recipe

INGREDIENTS

  1. 2jarsartichokes(reserve liquid)
  2. 1/4cup choppedonions(I like yellow)
  3. 4eggs
  4. 3-4clovesgarlic, chopped
  5. 1/8teaspoonoregano
  6. 1teaspoonTabasco sauce(or more if you like)
  7. 1/4cupdried breadcrumbs
  8. 1/4teaspoonsalt
  9. 1/4teaspoonpepper
  10. 8ouncescheddar cheese, shredded

DIRECTIONS

  1. Pre-heat oven to 325-350 f.
  2. grease pan (I use a 9×9 brownie pan).
  3. chop artichokes.
  4. saute onion in artichoke liquid until soft,drain, set aside.
  5. beat eggs.
  6. add spices,artichokes,cheese and onion.
  7. bake 30 minutes.
  8. cool and cut into squares.

Chicken with Orange and Honey Recipe

INGREDIENTS

  1. 3/4cupfine dry breadcrumbs
  2. 1tablespoonorange rind, grated
  3. 1/2teaspoonsalt
  4. 1/4teaspoonpepper
  5. 6boneless skinless chicken breasts
  6. 1/2cuporange juice
  7. 1chicken bouillon cube
  8. 1/2cupboiling water
  9. 4tablespoonsbutter
  10. 1/2cuphoney

DIRECTIONS

  1. Mix together bread crumbs, orange rind, salt and pepper.
  2. Dip each piece of chicken in orange juice, then coat with crumb mixture.
  3. Place coated chicken on a lightly greased, foil-lined, 9×13 inch pan.
  4. Bake at 350 degrees for 30 minutes.
  5. Dissolve bouillon cube in boiling water, add butter and honey; stir until butter melts.
  6. After chicken has baked for 30 minutes, baste with honey glaze.
  7. Bake chicken 35-40 minutes longer, or until chicken is browned and tender, basting several times with glaze.

Catalina Pasta Salad Recipe

INGREDIENTS

  1. 1packagetri-color spiral pasta
  2. Miracle Whip
  3. Catalina dressing
  4. 1packagefrozen green peas
  5. 1-2cucumber, peeled and diced
  6. 1packagecherry tomatoes, halved
  7. 1packagebaby carrots

DIRECTIONS

  1. Boil pasta according to package directions.
  2. I usually add the baby carrots to the pasta about midway thru cooking.
  3. Place frozen peas in a large colinder and dump cooked pasta& carrots on top.
  4. Let drain.
  5. When carrots have cooled, I slice them in half lengthwise.
  6. Place pasta, peas& carrots in a large mixing bowl.
  7. Add miracle whip and catalina dressing until moistened.
  8. Sorry, I have no measurements as this is how I got the recipe.
  9. You just have to keep tasting and adding until you find the right taste.
  10. I like mine with more Catalina than Miracle Whip.
  11. I like to chill mine at least an hour before serving.
  12. Prior to serving add cherry tomatoes and cucumbers.
  13. After it chills, you may need to add more Catalina and/or Miracle Whip.
  14. If you make this the day before, don’t add your cucumbers and tomatoes-it will make it watery.
  15. Feel free to change up your vegetables!
