INGREDIENTS
- 6largeeggs
- 1/4cupmayonnaise
- 2tablespoons mincedonions
- 1tablespoonprepared mustard
- 1/4teaspoonWorcestershire sauce
- salt and pepper
DIRECTIONS
- Place eggs in a pot and cover with water.
- Bring to a boil.
- Boil 2 minutes.
- Remove from heat and allow to sit in hot water for 5 minutes.
- Run cold water into the pot until the overflow is cold.
- Cool the eggs in the cold water.
- Peel eggs and cut into small pieces.
- Add remaining ingredients and stir.

INGREDIENTS
- 4boneless skinless chicken breast halves
- 1/2teaspoonsalt
- 1/4teaspoonpepper
- 1tablespoonvegetable oil
- 2cups diagonally slicedcarrots
- 1cup slicedonions
- 1clovegarlic, minced
- 2 (8 ounce)packagessliced mushrooms
- 1/4cupflour
- 1 (14 1/2 ounce)canchicken broth
- 1tablespoon chopedfresh thyme or1 teaspoondried thyme
- choppedfresh chives
DIRECTIONS
- Heat a large nonstick skillet coated with cooking spray over medium-high heat.
- Add chicken and sprinkle with salt and pepper.
- Cook for 4 minutes on each side or until lighty browned.
- Remove from pan.
- Heat the oil in pan over medium high heat.
- Add carrot, onion, and garlic.
- Cook 2 minutes.
- Add mushrooms.
- Cook 5 minutes or until the vegetables are tender.
- Spinkle with flour.
- Cook 2 minutes, stirring constantly.
- Add broth and thyme.
- Bring to a boil and cook until slightly thick, stirring frequently.
- Return chicken to pan.
- Cover, reduce heat and simmer for 10 minutes or until chicken is done.
- Garnish with chives.

INGREDIENTS
- 2jarsartichokes(reserve liquid)
- 1/4cup choppedonions(I like yellow)
- 4eggs
- 3-4clovesgarlic, chopped
- 1/8teaspoonoregano
- 1teaspoonTabasco sauce(or more if you like)
- 1/4cupdried breadcrumbs
- 1/4teaspoonsalt
- 1/4teaspoonpepper
- 8ouncescheddar cheese, shredded
DIRECTIONS
- Pre-heat oven to 325-350 f.
- grease pan (I use a 9×9 brownie pan).
- chop artichokes.
- saute onion in artichoke liquid until soft,drain, set aside.
- beat eggs.
- add spices,artichokes,cheese and onion.
- bake 30 minutes.
- cool and cut into squares.

INGREDIENTS
- 3/4cupfine dry breadcrumbs
- 1tablespoonorange rind, grated
- 1/2teaspoonsalt
- 1/4teaspoonpepper
- 6boneless skinless chicken breasts
- 1/2cuporange juice
- 1chicken bouillon cube
- 1/2cupboiling water
- 4tablespoonsbutter
- 1/2cuphoney
DIRECTIONS
- Mix together bread crumbs, orange rind, salt and pepper.
- Dip each piece of chicken in orange juice, then coat with crumb mixture.
- Place coated chicken on a lightly greased, foil-lined, 9×13 inch pan.
- Bake at 350 degrees for 30 minutes.
- Dissolve bouillon cube in boiling water, add butter and honey; stir until butter melts.
- After chicken has baked for 30 minutes, baste with honey glaze.
- Bake chicken 35-40 minutes longer, or until chicken is browned and tender, basting several times with glaze.

INGREDIENTS
- 1packagetri-color spiral pasta
- Miracle Whip
- Catalina dressing
- 1packagefrozen green peas
- 1-2cucumber, peeled and diced
- 1packagecherry tomatoes, halved
- 1packagebaby carrots
DIRECTIONS
- Boil pasta according to package directions.
- I usually add the baby carrots to the pasta about midway thru cooking.
- Place frozen peas in a large colinder and dump cooked pasta& carrots on top.
- Let drain.
- When carrots have cooled, I slice them in half lengthwise.
- Place pasta, peas& carrots in a large mixing bowl.
- Add miracle whip and catalina dressing until moistened.
- Sorry, I have no measurements as this is how I got the recipe.
- You just have to keep tasting and adding until you find the right taste.
- I like mine with more Catalina than Miracle Whip.
- I like to chill mine at least an hour before serving.
- Prior to serving add cherry tomatoes and cucumbers.
- After it chills, you may need to add more Catalina and/or Miracle Whip.
- If you make this the day before, don’t add your cucumbers and tomatoes-it will make it watery.
- Feel free to change up your vegetables!
