Salmon Rollups Recipe

INGREDIENTS

  1. 7 3/4ouncescanned salmon(drained, flaked)
  2. 1teaspoonparsley, dried
  3. 1/2teaspoondill weed
  4. cayenne pepper
  5. 1egg, beaten
  6. 1teaspooninstant minced onion
  7. 1cancrescent rolls

DIRECTIONS

  1. Mix salmon, egg, parsely, onion and dill weed and spread on rolls.
  2. Roll up from wide end after spreading.
  3. Bake on cookie sheet at 350 degrees for 12 to 15 minutes.
  4. Serve with a cheese sauce topping.

Salsa Fresca Recipe

  2. 2hot red chili peppers
  3. 2 big jimnew mexico peppers

  10. 1/4cuplemon juice
  11. cilantro

Crab and Cream Cheese Hors D’oeuvre Recipe

INGREDIENTS

  1. 1 (8 ounce)packagecream cheese, softened
  2. 1tablespoonmilk
  3. 1/2teaspoonhorseradish
  4. salt
  5. 8ouncescrabmeat
  6. 2tablespoons choppedonions
  7. 2ouncesslivered almonds
  8. pepper

DIRECTIONS

  1. Blend together all ingredients except almonds and put in shallow baking dish (salt and pepper to taste).
  2. Sprinkle almonds over top and bake at 350 degrees until slightly browned on top.
  3. Serve hot on crackers.

Peanut Butter Kiss Mini Muffins Recipe

INGREDIENTS

  1. 1cupflour
  2. 1/4cup packeddark brown sugar
  3. 1 1/2teaspoonsbaking powder
  4. 1/8teaspoonsalt
  5. 1/3cupcreamy peanut butter, at room temperature
  6. 1tablespoonvegetable oil
  7. 1largeegg, at room temperature
  8. 1/2cupmilk, at room temperature
  9. 1/2teaspoonvanilla extract
  10. 24Hershey’s chocolate kisses, unwrapped

DIRECTIONS

  1. Preheat oven to 400*F.
  2. Butter 24 mini muffin cups, or line with mini cupcake paper liners; set aside.
  3. In a large bowl, stir together the flour, brown sugar, baking powder, and salt.
  4. In another bowl, stir together the peanut butter and oil; blend in the egg until smooth.
  5. Stir in the milk and vanilla until blended.
  6. Make a well in the center of the flour mixture; add the milk mixture and stir just to combine–do not overmix.
  7. Spoon batter into the prepared muffin tins; bake for 10 minutes, or until a toothpick tests out clean.
  8. Remove pan to a wire rack and cool for 1 minute before inverting.
  9. Place a Hershey’s Kiss in the center of each hot muffin; cool for 30 minutes.
  10. Lightly press the melted bottoms of the Kisses onto the muffins; refrigerate for 1 hour to cool completely.
  11. Store in an airtight container at room temperature.

Low Fat Scalloped Potatoes Recipe

INGREDIENTS

  1. 1tablespoonbutter, melted
  2. 1/8cupflour(2 oz.)
  3. 1cupskim milk
  4. 1 1/2tablespoonsdried onion flakes
  5. salt and pepper
  6. 20ounces peeledraw potatoes, sliced thin(approximately 3 medium potatoes)
  7. paprika
  8. pambutter-flavored cooking spray

DIRECTIONS

  1. In a 2 cup measuring cup mix melted butter& flour.
  2. Gradually add milk, stirring until smooth.
  3. Add onion, Salt& Pepper.
  4. Microwave at medium High (70% power) until smooth and slightly thick (4- 6 min) stirring every 3 minutes or less.
  5. Spray a 2 qt. casserole with Pam Butter flavored spray and alternate layers of potatoes and sauce,spraying each layer with Pam Butter flavored spray.
  6. Cover and bake at Fast Bake (Micro-Convection) for 25 min at 350 degrees (Will register 325 deg.).
  7. Preheat before putting potatoes in oven.
  8. Cover to let stand while making rest of dinner.
  9. OR preheat thermal oven to 350 deg.
  10. and bake for about 45 minutes.
