Rocky Road Frosting Recipe

INGREDIENTS

  1. 1 3/4cupssemi-sweet chocolate chips
  2. 1ounceunsweetened chocolate, chopped
  3. 1/2cupbutter, softened
  4. 1teaspoonvanilla extract
  5. 1pinchsalt
  6. 1cupmini marshmallows
  7. 3/4cup finely choppednuts(any kind–I used cashews)

DIRECTIONS

  1. In a medium, heavy saucepan over low heat, melt 1 cup of the semisweet chocoalte chips with the unsweetened chocoalte; remove pan from heat.
  2. Add the butter, vanilla, and salt to the melted chocolate and stir until the butter melts and is incorporated into the chocolate.
  3. Let stand until the mixture is at room temperature.
  4. Using an electric mixer at high speed, whip the chocolate until it holds soft peaks.
  5. Fold in the remaining chocolate chips, marshmallows, and nuts.
  6. Frost as desired.

Italian Wedding Cookies Recipe

INGREDIENTS

  1. 8ouncesalmond paste
  2. 1 1/2cupsbutter
  3. 1cupwhite sugar
  4. 4eggs
  5. 1teaspoonalmond extract
  6. 2cupsall-purpose flour
  7. 1/4teaspoonsalt
  8. 1 (12 ounce)jarseedless raspberry jam
  9. 12ouncessemisweet chocolate, melted
  10. 5dropsgreen food coloring
  11. 5dropsyellow food coloring
  12. 5dropsred food coloring

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl break up the almond paste.
  3. Add the softened butter, sugar, eggs and almond extract.
  4. Beat batter until light and fluffy.
  5. Beat in the flour and the salt.
  6. Split the batter into thirds and add enough of the three different food colorings to each third to color the batter nicely.
  7. Spread the batters into three 9×13 and 1/4 inch deep aluminum baking pans.
  8. Be sure the batter is only about 1/8 inch thick or it will rise too high.
  9. Bake at 350 degrees F (175 degrees C) for 12 to minutes.
  10. Cool Remove baked and cooled cakes from pans and place on a cookie sheet or cutting board.
  11. Heat the jam and spread between the layers as you stack them.
  12. Spread the melted chocolate over the top layer and refrigerate.
  13. When stiff remove cookies from the refrigerator and let chocolate soften slightly before cutting into small rectangles.

Raisin and oat with strawberry Parfait Recipe

INGREDIENTS

  1. 3strawberries, chopped into little pieces
  2. 3ouncesvanilla yogurt
  3. 1 raisin ‘n oatgranola cereal, bar
  4. 3ounces mixedberry juice
  5. 4almonds
  6. 3blueberries
  7. crushed pineapple, with juice (optional)

DIRECTIONS

  1. Get 3 of each: Strawberries, Blueberries,and Pineapples (If Wanted, your choice.) Put fruits in the blender And press”liqiufy” (pulse) for 5 minutes.
  2. Before pouring, put yogurt in.
  3. Then Pour.
  4. Next put on Nuts.
  5. Put nuts on like this (these /, are nuts.////.) Now, Granola.
  6. Break it in half then pour it in.

Apple Beet & Red Cabbage Salad Recipe

  1. 2largeapples, cored,peel on,chopped(Granny Smith is good or other green apple)
  2. 1 1/2cupspickled beets, finely chopped
  3. 4cupsred cabbage, finely shredded
  4. 3tablespoonsfresh lemon juice
  5. 1/8teaspoonsugar

DIRECTIONS

  1. Combine Apples, Beets & Cabbage.
  2. Sprinkle with the Lemon Juice and sugar.
  3. Toss & serve well chilled.

Banana Crumble Recipe

INGREDIENTS

  1. 4bananas, sliced(in circles)
  2. 1/4cupflour
  3. 1/4cupbrown sugar
  4. 1cuprolled oatsor granola cereal
  5. 1/2teaspooncinnamon
  6. 1/8teaspoonsalt
  7. 4tablespoonsbutter, softened

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Evenly distribute bananas among 4 ramekins, lightly sprayed with Pam.
  3. Place all dry ingredients in a medium mixing bowl, add the butter and work mixture with your hands till crumbly.
  4. Sprinkle over bananas, crumbling further with your fingers, enough to cover.
  5. Bake till crumble get firm and golden in color, about 10-12 minutes.
  6. Serve warm.
