Mushroom-Walnut Stroganoff Potatoes Recipe

INGREDIENTS

  1. 4large bakedpotatoes
  2. 8mediumshallots, minced
  3. 2tablespoonsolive oil
  4. 3cups choppedmushrooms
  5. 1/4cupbalsamic vinegar
  6. 1/2teaspoonsalt
  7. 1cupsour cream
  8. 1/2cup choppedwalnuts
  9. 8slicessmoked gouda cheese, chedder or mozzarella cheese

DIRECTIONS

  1. In a heavy skiiler over meduin-high heat, heat thge olive oil, then add the minced shallots and saute until golden.
  2. Stir in the mushrooms and walnuts saute for 2 minutes, then pour on the balsamic vinegar, stirring constantly until the liquid has steamed off.
  3. Remove from heat and stir in the sour cream.
  4. Split the potatoes lengthwise and gently scoop the insides into the hot skillet.
  5. Mix thouroughly, then mound the filling back into the potato skins and place the potaoes into a shallow baking dish.
  6. Top each with a slice of smoked cheese, then place under the broiler until the cheese is brown and bubbly.

Seven Layer Chinese Chicken Salad Recipe

INGREDIENTS

  1. 5cups shreddedromaine lettuce
  2. 1 (3 ounce)packageoriental-flavor instant ramen noodles
  3. 2cups dicedcooked chicken
  4. 1 (11 ounce)canwhite shoepeg corn, drained
  5. 1largetomato, diced
  6. 2green onions, sliced
  7. 1/2cup coarsely chopped unsalted dry-roastpeanuts
  8. Dressing Ingredients

  9. 2tablespoonssugar
  10. 1teaspoonsalt
  11. 3/4teaspoon gratedgingerroot
  12. 1/2teaspoonpepper
  13. 1/4cupoil
  14. 3tablespoonsvinegar

DIRECTIONS

  1. Salad: Arrange romaine in bottom of large (3 quart) clear glass serving bowl.
  2. Discard seasoning packet from soup mix; Coarsely crush noodles.
  3. Layer noodles and all remaining salad ingredients, on order listed, over romaine lettuce.
  4. Dressing: In small jar with tight-fitting lid, combine all dressing ingredients.
  5. Shake until well blended.
  6. Pour over salad.
  7. Serve immediately.

Easy Tuna Casserole Recipe

INGREDIENTS

  1. 1boxmacaroni and cheese mix(Kraft for me)
  2. 1cancream of mushroom soup(or celery)
  3. 3/4cupmilk
  4. 2tablespoonsmargarine
  5. 1cantuna, drained
  6. 1canpeas, drained
  7. potato chipsor cracker crumbs or breadcrumbs, for topping

DIRECTIONS

  1. Cook macaroni as instructed on box.
  2. For a casserole, I like to take a minute or 2 off the recommended cooking time.
  3. In casserole dish mix peas, tuna, soup, margarine, milk and cheese packet from box.
  4. Salt and pepper to taste.
  5. Add macaroni and stir gently.
  6. Sprinkle with crumb topping.
  7. Bake at 350 for 20 to 30 minutes or until bubbly.

Easy Pleasing Meatloaf Recipe

INGREDIENTS

  1. 1cupwater
  2. 2lbslean ground beef
  3. 1/2cup finely dicedonions
  4. 1 (6 1/4 ounce)packageStove Top stuffing mix
  5. 2eggs
  6. 1/2cupketchup, divided

DIRECTIONS

  1. Mix all ingredients except 1/4 cup ketchup.
  2. Shape meat mixture into an oval loaf and place in a 9×13 baking dish.
  3. Top with remaining ketchup.
  4. Bake at 375 for 1 hour.

Chunky Chicken Salad Recipe

INGREDIENTS

  1. 4cupschicken breast halves, diced
  2. 3/4cup choppedcelery, chopped
  3. 1/2cupwhite onions, minced
  4. 3/4cupred grapes or green grapes, halved
  5. 3/4cupcashews
  6. mayonnaise
  7. salt and pepper
  8. romaine lettuce
  9. 1 slicedcucumber
  10. 1tomato

DIRECTIONS

  1. Add mayonnaise to salad consistency.
  2. Serve on bed of Romaine Lettuce, sliced cucumbers, tomatoes, sliced red onions.
  3. Add cashews to salad right before serving.
