INGREDIENTS
- 8largetortillas
- 3cupscheese
- salsa
- ground beef
- 3-4cupsrefried beans
- lettuce(for topping when serving)
- tomatoes(for topping when serving)
- onions(for topping when serving)
- sour cream
DIRECTIONS
- Preheat oven to 375.
- Brown ground beef and drain.
- In a deep lasagna pan, put down a layer of tortillas.
- (You may want to cut and turn them different ways each layer for maximun coverage).
- Spread with a layer of refried beans.
- Top with a layer of meat, then cheese, and finally salsa.
- Repeat layers until pan is full.
- Bake for about 25 minutes or until cheese is melted.
- Remove from oven and let cool for 10-15 minutes.
- Cut and serve just as you would regular lasagna.
- Top each piece with a dab of sour cream, and chopped lettuce, tomato and onion as you serve it.

INGREDIENTS
- 4ouncesunsweetened baking chocolate
- 1 1/2cupssugar
- 1cupevaporated milk
- 4tablespoonsbutter
- 1 1/2teaspoonsvanilla extract
DIRECTIONS
- Mix together chocolate, sugar, and evaporated milk in a medium saucepan.
- Stir constantly over medium heat until chocolate is melted.
- Raise heat, bring to boil, stirring constantly.
- Boil 6 minutes, stirring constantly.
- Remove from heat, and beat in butter and vanilla.

INGREDIENTS
- 3 lemon zinger herbaltea bags
- 1/2cupwhite vinegar
- 1cupolive oil
- 2teaspoonsdill
DIRECTIONS
- Combine tea bags and vinegar in a jar with a tight-fitting lid.
- Let steep for 10 minutes, then remove tea bags, gently squeezing the remaining drops into the vinegar before discarding.
- Add olive oil and dill.
- Shake well and serve.
- I also like to use Red Zinger and Raspberry Zinger tea for this dressing.

INGREDIENTS
- 1/2cupsoy sauce(preferably Kikkoman)
- 2tablespoonsoil
- 2tablespoonsdark molasses(full flavor)
- 1tablespoonlemon juice
- 1tablespoonbrown sugar
- 1tablespoondry mustard
- 1-2minced garlic clove(or to taste)
- 1/2teaspoonground ginger
- 2lbs thinly sliced across the grainsteakor chickensor pork
DIRECTIONS
- Mix all together in a one-gallon zip-lock bag, using a whisk if necessary. Set some sauce aside for dipping.
- Add thinly sliced meat.
- Rest in refrigerator for at least 1-2 hours, turning occasionally.
- The longer this marinates (and the thinner the meat), the stronger the flavor.
- Thread on scewers, reserving left-over marinade.
- Barbeque or broil until done.
- Heat set-aside marinade to use as an additional dipping sauce.

INGREDIENTS
- 6tablespoonsbutter
- 1cupflour
- 1/2cupsugar
- 1/2cupSplenda sugar substitute
- 1tablespoonbaking powder
- 1cupskim milk
- 2 1/2cupsfresh blueberries
- 1tablespoonsugar(topping, optional)
DIRECTIONS
- Place butter in 8×8 square baking dish.
- Set oven temperature to 350º and put baking dish in oven.
- While oven is pre-heating, and butter is melting, combine flour, sugar, baking powder and milk.
- Pour onto melted butter in baking dish, sprinkle blueberries on top.
- DO NOT MIX!
- Bake at 350º for 45 minutes or until a toothpick inserted in the center comes out clean.
- DO NOT UNDERBAKE!
- After baking, sprinkle 1 TBS sugar on top.
