Mexican Lasagna Recipe

INGREDIENTS

  1. 8largetortillas
  2. 3cupscheese
  3. salsa
  4. ground beef
  5. 3-4cupsrefried beans
  6. lettuce(for topping when serving)
  7. tomatoes(for topping when serving)
  8. onions(for topping when serving)
  9. sour cream

DIRECTIONS

  1. Preheat oven to 375.
  2. Brown ground beef and drain.
  3. In a deep lasagna pan, put down a layer of tortillas.
  4. (You may want to cut and turn them different ways each layer for maximun coverage).
  5. Spread with a layer of refried beans.
  6. Top with a layer of meat, then cheese, and finally salsa.
  7. Repeat layers until pan is full.
  8. Bake for about 25 minutes or until cheese is melted.
  9. Remove from oven and let cool for 10-15 minutes.
  10. Cut and serve just as you would regular lasagna.
  11. Top each piece with a dab of sour cream, and chopped lettuce, tomato and onion as you serve it.

Hot Fudge Sauce Recipe

INGREDIENTS

  1. 4ouncesunsweetened baking chocolate
  2. 1 1/2cupssugar
  3. 1cupevaporated milk
  4. 4tablespoonsbutter
  5. 1 1/2teaspoonsvanilla extract

DIRECTIONS

  1. Mix together chocolate, sugar, and evaporated milk in a medium saucepan.
  2. Stir constantly over medium heat until chocolate is melted.
  3. Raise heat, bring to boil, stirring constantly.
  4. Boil 6 minutes, stirring constantly.
  5. Remove from heat, and beat in butter and vanilla.

Zinger Dill Dressing Recipe

INGREDIENTS

  1. 3 lemon zinger herbaltea bags
  2. 1/2cupwhite vinegar
  3. 1cupolive oil
  4. 2teaspoonsdill

DIRECTIONS

  1. Combine tea bags and vinegar in a jar with a tight-fitting lid.
  2. Let steep for 10 minutes, then remove tea bags, gently squeezing the remaining drops into the vinegar before discarding.
  3. Add olive oil and dill.
  4. Shake well and serve.
  5. I also like to use Red Zinger and Raspberry Zinger tea for this dressing.

Teriyaki Sauce Recipe

INGREDIENTS

  1. 1/2cupsoy sauce(preferably Kikkoman)
  2. 2tablespoonsoil
  3. 2tablespoonsdark molasses(full flavor)
  4. 1tablespoonlemon juice
  5. 1tablespoonbrown sugar
  6. 1tablespoondry mustard
  7. 1-2minced garlic clove(or to taste)
  8. 1/2teaspoonground ginger
  9. 2lbs thinly sliced across the grainsteakor chickensor pork

DIRECTIONS

  1. Mix all together in a one-gallon zip-lock bag, using a whisk if necessary. Set some sauce aside for dipping.
  2. Add thinly sliced meat.
  3. Rest in refrigerator for at least 1-2 hours, turning occasionally.
  4. The longer this marinates (and the thinner the meat), the stronger the flavor.
  5. Thread on scewers, reserving left-over marinade.
  6. Barbeque or broil until done.
  7. Heat set-aside marinade to use as an additional dipping sauce.

Lazy Day Blueberry Pie Recipe

INGREDIENTS

  1. 6tablespoonsbutter
  2. 1cupflour
  3. 1/2cupsugar
  4. 1/2cupSplenda sugar substitute
  5. 1tablespoonbaking powder
  6. 1cupskim milk
  7. 2 1/2cupsfresh blueberries
  8. 1tablespoonsugar(topping, optional)

DIRECTIONS

  1. Place butter in 8×8 square baking dish.
  2. Set oven temperature to 350º and put baking dish in oven.
  3. While oven is pre-heating, and butter is melting, combine flour, sugar, baking powder and milk.
  4. Pour onto melted butter in baking dish, sprinkle blueberries on top.
  5. DO NOT MIX!
  6. Bake at 350º for 45 minutes or until a toothpick inserted in the center comes out clean.
  7. DO NOT UNDERBAKE!
  8. After baking, sprinkle 1 TBS sugar on top.
