30 Minute Chicken Tamales Recipe

INGREDIENTS

  1. 6cups maseca cornmasa harina flour, mix for tamales
  2. 6cupschicken broth
  3. 1cupcorn oil or othervegetable oil(corn will enhance the flavor)
  4. 2teaspoonssalt
  5. 1teaspoonbaking powder
  6. 2large rotisseriechickens
  7. 2 (15 ounce)jarsgreen tomatillo sauce
  8. 1bagcorn husks

DIRECTIONS

  1. Soak the corn husks in warm water until soft.
  2. Using an electric mixer, blend the masa flour (Maseca for Tamales), corn oil, salt, baking powder and the chicken broth to obtain a consistent mixture.
  3. Shred the chicken and marinate in the green salsa or tomatillo sauce.
  4. Spread masa evenly over corn husks, and spread a spoonful of marinated chicken on top of the masa.
  5. Fold the sides of the corn husk to center over the masa so that they overlap to make a long package.
  6. Fold the empty part of the husk under so that it rests against the side of the tamale with a seam.
  7. Place the tamales in a steamer and cook tamales for 35-40 minutes.
  8. Check every 20 minutes.
  9. The tamale is cooked when it separates easily from the corn husk.

Chocolate Mint Bundt Cake Recipe

INGREDIENTS

  1. 1 (18 1/4 ounce)boxchocolate cake mix
  2. 1 (6 ounce)packageinstant chocolate pudding mix
  3. 1cupsour cream
  4. 4eggs
  5. 1/2cupoil
  6. 1/2cupwater
  7. 1 (12 ounce)packagemint chocolate chips

DIRECTIONS

  1. Mix together all ingredients except chips for 4 minutes with mixer.
  2. Add chips and mix by hand.
  3. Place in greased bundt pan and bake at 350° for 60 minutes or until tests done.
  4. Cool completely before removing from pan.
  5. Sprinkle with confectioner’s sugar before serving.

Ckicken-pesto Pan Pizza Recipe

INGREDIENTS

  1. 1canprepared pizza crust
  2. 1/2cupwater
  3. 3tablespoonsolive oil
  4. 1envelopepesto sauce mix
  5. 1packagefrozen chopped spinach, thawed and squeezed dry
  6. 1/2cupricotta cheese
  7. 1/4cup choppedonions
  8. 2cups shreddedcooked chicken
  9. 1jarsliced mushrooms, drained
  10. 4plum tomatoes, sliced
  11. 1cup shreddedswiss cheese
  12. 1/4cup gratedromano cheese

DIRECTIONS

  1. Set oven to 425 degrees.
  2. Unroll pizza crust into an ungreased 15×10 baking pan; flatten dough and build up edges slightly.
  3. Prick dough several times with a fork.
  4. Bake at 425 degrees for 7 mins, or until lightly browned.
  5. Meanwhile, combine the water, oil and pesto sauce mix in a saucepan.
  6. Cook until heated through (DO NOT BOIL).
  7. Add spinach, ricotta and onion; mix well.
  8. Spread over crust.
  9. Top with chicken, mushrooms, tomatoes and Swiss and Romano cheese.
  10. Bake at 425 degrees for 7 mins or until crust is golden brown, and cheese is melted.

Beefy Jalapeno Corn Bake Recipe

INGREDIENTS

  1. 1lbground beef
  2. 1-2tablespoon fresh mincedgarlic
  3. 1smallgreen bell pepper, seeded and chopped
  4. 1/4cup gratedparmesan cheese (optional)
  5. salt and pepper
  6. 2eggs
  7. 1 (14 3/4 ounce)cancream-style corn
  8. 1cupmilk
  9. 1/2cupvegetable oil
  10. 1cupcornmeal
  11. 3tablespoonsflour
  12. 1 1/2teaspoonsbaking powder
  13. 3/4teaspoonsalt
  14. 4cups shreddedcheddar cheese, divided
  15. 1mediumonion, chopped
  16. 3jalapeno peppers(seeded and chopped, or to taste)

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Grease a 13×9 baking dish.
  3. In a skillet, cook beef with garlic and bell pepper, until no longer pink, then season with salt and pepper; drain and add in Parmesan if using; set aside.
  4. In a bowl, beat eggs, corn, milk and oil.
  5. Combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well.
  6. Pour half of the batter into a greased baking dish; sprinkle with 2 cups cheese; top with the beef, onion and jalapenos.
  7. Sprinkle with remaining cheese; top with remaining batter.
  8. Bake, uncovered for 55-60 mins or until a toothpick inserted into corn bread topping comes out clean.
  9. Serve warm.

Savory Italian Bread Recipe

INGREDIENTS

  1. 1loafItalian bread
  2. 1/2cup gratedparmesan cheese
  3. 1/3cupmayonnaise
  4. 1/4teaspoondried basil
  5. 1/4teaspoongarlic powder
  6. 1/8teaspoondried oregano
  7. 1/8teaspoononion salt

DIRECTIONS

  1. Cut bread to, but not through the bottom into 12 slices.
  2. Place on baking sheet.
  3. Combine all other ingredients in a small bowl and mix well.
  4. Spread the mixture between the slices and over the top of the bread.
  5. Bake at 400° for about 12 minutes or until golden.
