INGREDIENTS
- 6cups maseca cornmasa harina flour, mix for tamales
- 6cupschicken broth
- 1cupcorn oil or othervegetable oil(corn will enhance the flavor)
- 2teaspoonssalt
- 1teaspoonbaking powder
- 2large rotisseriechickens
- 2 (15 ounce)jarsgreen tomatillo sauce
- 1bagcorn husks
DIRECTIONS
- Soak the corn husks in warm water until soft.
- Using an electric mixer, blend the masa flour (Maseca for Tamales), corn oil, salt, baking powder and the chicken broth to obtain a consistent mixture.
- Shred the chicken and marinate in the green salsa or tomatillo sauce.
- Spread masa evenly over corn husks, and spread a spoonful of marinated chicken on top of the masa.
- Fold the sides of the corn husk to center over the masa so that they overlap to make a long package.
- Fold the empty part of the husk under so that it rests against the side of the tamale with a seam.
- Place the tamales in a steamer and cook tamales for 35-40 minutes.
- Check every 20 minutes.
- The tamale is cooked when it separates easily from the corn husk.

INGREDIENTS
- 1 (18 1/4 ounce)boxchocolate cake mix
- 1 (6 ounce)packageinstant chocolate pudding mix
- 1cupsour cream
- 4eggs
- 1/2cupoil
- 1/2cupwater
- 1 (12 ounce)packagemint chocolate chips
DIRECTIONS
- Mix together all ingredients except chips for 4 minutes with mixer.
- Add chips and mix by hand.
- Place in greased bundt pan and bake at 350° for 60 minutes or until tests done.
- Cool completely before removing from pan.
- Sprinkle with confectioner’s sugar before serving.

INGREDIENTS
- 1canprepared pizza crust
- 1/2cupwater
- 3tablespoonsolive oil
- 1envelopepesto sauce mix
- 1packagefrozen chopped spinach, thawed and squeezed dry
- 1/2cupricotta cheese
- 1/4cup choppedonions
- 2cups shreddedcooked chicken
- 1jarsliced mushrooms, drained
- 4plum tomatoes, sliced
- 1cup shreddedswiss cheese
- 1/4cup gratedromano cheese
DIRECTIONS
- Set oven to 425 degrees.
- Unroll pizza crust into an ungreased 15×10 baking pan; flatten dough and build up edges slightly.
- Prick dough several times with a fork.
- Bake at 425 degrees for 7 mins, or until lightly browned.
- Meanwhile, combine the water, oil and pesto sauce mix in a saucepan.
- Cook until heated through (DO NOT BOIL).
- Add spinach, ricotta and onion; mix well.
- Spread over crust.
- Top with chicken, mushrooms, tomatoes and Swiss and Romano cheese.
- Bake at 425 degrees for 7 mins or until crust is golden brown, and cheese is melted.

INGREDIENTS
- 1lbground beef
- 1-2tablespoon fresh mincedgarlic
- 1smallgreen bell pepper, seeded and chopped
- 1/4cup gratedparmesan cheese (optional)
- salt and pepper
- 2eggs
- 1 (14 3/4 ounce)cancream-style corn
- 1cupmilk
- 1/2cupvegetable oil
- 1cupcornmeal
- 3tablespoonsflour
- 1 1/2teaspoonsbaking powder
- 3/4teaspoonsalt
- 4cups shreddedcheddar cheese, divided
- 1mediumonion, chopped
- 3jalapeno peppers(seeded and chopped, or to taste)
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 13×9 baking dish.
- In a skillet, cook beef with garlic and bell pepper, until no longer pink, then season with salt and pepper; drain and add in Parmesan if using; set aside.
- In a bowl, beat eggs, corn, milk and oil.
- Combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well.
- Pour half of the batter into a greased baking dish; sprinkle with 2 cups cheese; top with the beef, onion and jalapenos.
- Sprinkle with remaining cheese; top with remaining batter.
- Bake, uncovered for 55-60 mins or until a toothpick inserted into corn bread topping comes out clean.
- Serve warm.

INGREDIENTS
- 1loafItalian bread
- 1/2cup gratedparmesan cheese
- 1/3cupmayonnaise
- 1/4teaspoondried basil
- 1/4teaspoongarlic powder
- 1/8teaspoondried oregano
- 1/8teaspoononion salt
DIRECTIONS
- Cut bread to, but not through the bottom into 12 slices.
- Place on baking sheet.
- Combine all other ingredients in a small bowl and mix well.
- Spread the mixture between the slices and over the top of the bread.
- Bake at 400° for about 12 minutes or until golden.
