INGREDIENTS

Cookies
- 1/2cupbutter
- 1/2cupshortening
- 1/2cupsugar
- 1cupbrown sugar
- 2largeeggs
- 1teaspoonvanilla
- 2cupsflour
- 1/2cupcocoa
- 1/2teaspoonbaking powder
- 1/2teaspoonbaking soda
- 1cupsemi-sweet chocolate chips

Filling
- 1/2cuppeanut butter
- 1/4cupbrown sugar
DIRECTIONS
- Cookies: Cream butter, shortening and sugars; add eggs and vanilla and beat until well mixed; sift dry ingredients except chocolate chips together, add to creamed mixture and mix well; stir in chocolate chips.
- Firm dough by chilling 1 hour.
- Filling: Cream peanut butter and brown sugar together.
- Assemble Cookies: Scoop dough by 1 1/4″ scoop or heaping tablespoonful onto baking sheet; make thumbprint in center of cookie; drop peanut butter filling into each thumbrint.
- Flatten another scoop of dough in hand and cover each cookie, pressing edges together a bit.
- Bake at 350° for 12-15 minutes or until bottom cookie edge is slightly browned.
- Carefully transfer to rack and cool.

INGREDIENTS
- 2cupsbutter
- 4cupsflour
- 2teaspoonsbaking soda
- 2cupsgranulated sugar
- 2cupsbrown sugar
- 5cupsblended oatmeal(measure oatmeal and blend in blender to a fine powder)
- 24ounceschocolate chips
- 1teaspoonsalt
- 18ounces cadburychocolate(grated)
- 4largeeggs
- 2teaspoonsbaking powder
- 3cups choppednuts(your choice)
- 2teaspoonsvanilla
DIRECTIONS
- Cream the butter and both sugars.
- Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda.
- Add chocolate chips, Cadbury bar and nuts.
- Roll into balls and place two inches apart on a cookie sheet.
- Bake for 10 minutes at 375°.

INGREDIENTS
- 1 (46 ounce)jar sweetenedapplesauce(6 cups)
- 3/4cupbrown sugar
- 1teaspoonnutmeg
- 1/2teaspooncinnamon
- 2cupsflour
- 4teaspoonsbaking powder
- 1/2teaspoonsalt
- 1egg
- 3tablespoons meltedbutter
- 2/3cupmilk, room temperature
DIRECTIONS
- Combine applesauce, brown sugar, 3/4 tsp nutmeg and cinnamon in a large saucepan.
- Heat over medium low heat untilsugar is dissolved and sauce is bubbling.
- In mixing bowl combine flour, baking powder, salt and 1/4 tsp nutmeg.
- Beat the egg, stir into buter and milk and add all at once to flour mixture.
- Stir together until just moistened and stiff.
- Drop by heaping TBS onto bubbling applesauce.
- Cover and cook 20 minutes.
- Do not lift lid.
- Serve with pouring cream or whipped cream.

DIRECTIONS
- Cut the cauliflower into small flowerettes Cut the broccoli into small bunches Slice the carrots In a bowl, mix the fat free Italian Dressing and 1 1/2 T horseradish Mix cauliflower, broccoli, carrots with the dressing mixture and refrigerate.

Vinagrette

- 1jalapeno pepper, seeded & quartered
- 1inchginger, peeled & sliced
- 1tablespoontamari soy sauce
- 1tablespoonrice wine vinegar
- 3tablespoonswater
- 3tablespoonsolive oil

Baste Sauce
- 2tablespoonstamari soy sauce
- 2tablespoonsolive oil
- black pepper

Amounts depend on size or poundage of available vegetables
- eggplants, slice into 12 1/2 inch thick unpeeled rounds prepare by kosher salting each side,placing slices in a
- tomatoes, slice into 12 1/4 inch thick unpeeled rounds
- 1/2lbmozzarella cheese, slice into 12 1/4 inch thick rounds
DIRECTIONS
- Preheat oven to 400 degrees.
- Place garlic cloves, shallots and olive oil in a small nonreactive baking dish, stir to coat Season with salt and pepper.
- Cover dish with foil.
- Bake 30- 40 minutes till soft.
- In a blender combine the cooked and remaining vinaigrette ingredients, puree till smooth Preheat grill or broiler.
- Combine tamari, olive oil and pepper in a small bowl.
- Brush on eggplant slices.
- Grill or broil eggplant slices 1-2 minutes per side or until browned and soft Alternate 3 slices each of tomato, mozzerella and eggplant on 4 plates.
- Lightly drizzle vinaigrette on the prepared slices or serve on the side.
