Chocolate Peanut Butter Surprise Cookies Recipe

INGREDIENTS

  1. Cookies

  2. 1/2cupbutter
  3. 1/2cupshortening
  4. 1/2cupsugar
  5. 1cupbrown sugar
  6. 2largeeggs
  7. 1teaspoonvanilla
  8. 2cupsflour
  9. 1/2cupcocoa
  10. 1/2teaspoonbaking powder
  11. 1/2teaspoonbaking soda
  12. 1cupsemi-sweet chocolate chips
  13. Filling

  14. 1/2cuppeanut butter
  15. 1/4cupbrown sugar

DIRECTIONS

  1. Cookies: Cream butter, shortening and sugars; add eggs and vanilla and beat until well mixed; sift dry ingredients except chocolate chips together, add to creamed mixture and mix well; stir in chocolate chips.
  2. Firm dough by chilling 1 hour.
  3. Filling: Cream peanut butter and brown sugar together.
  4. Assemble Cookies: Scoop dough by 1 1/4″ scoop or heaping tablespoonful onto baking sheet; make thumbprint in center of cookie; drop peanut butter filling into each thumbrint.
  5. Flatten another scoop of dough in hand and cover each cookie, pressing edges together a bit.
  6. Bake at 350° for 12-15 minutes or until bottom cookie edge is slightly browned.
  7. Carefully transfer to rack and cool.

Famous Amos’s Recipe

INGREDIENTS

  1. 2cupsbutter
  2. 4cupsflour
  3. 2teaspoonsbaking soda
  4. 2cupsgranulated sugar
  5. 2cupsbrown sugar
  6. 5cupsblended oatmeal(measure oatmeal and blend in blender to a fine powder)
  7. 24ounceschocolate chips
  8. 1teaspoonsalt
  9. 18ounces cadburychocolate(grated)
  10. 4largeeggs
  11. 2teaspoonsbaking powder
  12. 3cups choppednuts(your choice)
  13. 2teaspoonsvanilla

DIRECTIONS

  1. Cream the butter and both sugars.
  2. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda.
  3. Add chocolate chips, Cadbury bar and nuts.
  4. Roll into balls and place two inches apart on a cookie sheet.
  5. Bake for 10 minutes at 375°.

Apple Dumpling Pudding Recipe

INGREDIENTS

  1. 1 (46 ounce)jar sweetenedapplesauce(6 cups)
  2. 3/4cupbrown sugar
  3. 1teaspoonnutmeg
  4. 1/2teaspooncinnamon
  5. 2cupsflour
  6. 4teaspoonsbaking powder
  7. 1/2teaspoonsalt
  8. 1egg
  9. 3tablespoons meltedbutter
  10. 2/3cupmilk, room temperature

DIRECTIONS

  1. Combine applesauce, brown sugar, 3/4 tsp nutmeg and cinnamon in a large saucepan.
  2. Heat over medium low heat untilsugar is dissolved and sauce is bubbling.
  3. In mixing bowl combine flour, baking powder, salt and 1/4 tsp nutmeg.
  4. Beat the egg, stir into buter and milk and add all at once to flour mixture.
  5. Stir together until just moistened and stiff.
  6. Drop by heaping TBS onto bubbling applesauce.
  7. Cover and cook 20 minutes.
  8. Do not lift lid.
  9. Serve with pouring cream or whipped cream.

DIRECTIONS

  1. Cut the cauliflower into small flowerettes Cut the broccoli into small bunches Slice the carrots In a bowl, mix the fat free Italian Dressing and 1 1/2 T horseradish Mix cauliflower, broccoli, carrots with the dressing mixture and refrigerate.

Grilled Eggplant, Tomato and Mozzarella Salade Recipe

INGREDIENTS

  1. Vinagrette

  2. 2clovesgarlic, peeled
  3. 2shallots, peeled
  4. 1teaspoonolive oil
  5. kosher salt
  6. black pepper
  7. 1/3cup freshbasil leaves, packed tightly
  8. 1jalapeno pepper, seeded & quartered
  9. 1inchginger, peeled & sliced
  10. 1tablespoontamari soy sauce
  11. 1tablespoonrice wine vinegar
  12. 3tablespoonswater
  13. 3tablespoonsolive oil
  14. Baste Sauce

  15. 2tablespoonstamari soy sauce
  16. 2tablespoonsolive oil
  17. black pepper
  18. Amounts depend on size or poundage of available vegetables

  19. eggplants, slice into 12 1/2 inch thick unpeeled rounds prepare by kosher salting each side,placing slices in a
  20. tomatoes, slice into 12 1/4 inch thick unpeeled rounds
  21. 1/2lbmozzarella cheese, slice into 12 1/4 inch thick rounds

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Place garlic cloves, shallots and olive oil in a small nonreactive baking dish, stir to coat Season with salt and pepper.
  3. Cover dish with foil.
  4. Bake 30- 40 minutes till soft.
  5. In a blender combine the cooked and remaining vinaigrette ingredients, puree till smooth Preheat grill or broiler.
  6. Combine tamari, olive oil and pepper in a small bowl.
  7. Brush on eggplant slices.
  8. Grill or broil eggplant slices 1-2 minutes per side or until browned and soft Alternate 3 slices each of tomato, mozzerella and eggplant on 4 plates.
  9. Lightly drizzle vinaigrette on the prepared slices or serve on the side.
