Mini Pumpkin Pound Cakes Recipe

INGREDIENTS

  1. 2 1/2cupssugar
  2. 3/4cupbutter, melted
  3. 1/4cupvegetable oil
  4. 3largeeggs
  5. 3cupsflour
  6. 2teaspoonsbaking soda
  7. 1teaspooncinnamon
  8. 1teaspoonnutmeg
  9. 1/4teaspooncloves
  10. 1/2teaspoonsalt
  11. 1 (15 ounce)cansolid-pack pumpkin

DIRECTIONS

  1. Set oven to 350 degrees, (second lowest position).
  2. Grease bottoms only of mini loaf pans.
  3. In a large bowl, beat together sugar, butter, oil; add eggs, until well combined (about 2-3 minutes).
  4. Combine/sift flour, baking soda, cinnamon, nutmeg, cloves and salt.
  5. Add the dry mixture to egg mixture, with canned pumpkin; mix well.
  6. Pour/transfer into regular or fluted mini loaf pans, filling 3/4 full.
  7. Bake for about 25-30 minutes, or until cake test done with toothpick.

Best Ever BBQ Chicken Wings Recipe

INGREDIENTS

  1. 3tablespoonsoil
  2. 1smallonion, minced
  3. 2garlic cloves, minced
  4. 2teaspoons grated peeledfresh ginger
  5. 1/4teaspoonsalt
  6. 1/8-1/4teaspooncrushed red pepper flakes
  7. 3tablespoonsvinegar, perferably apple cider
  8. 2/3cupketchup
  9. 1/2cupapricot preserves
  10. 3 1/2lbschicken wings

DIRECTIONS

  1. set oven to 350 degrees.
  2. in a pot, add first 6 ingredients, cook stirring occasionally until onion is softened, about 3 minutes.
  3. add vinegar, cook 1 minute.
  4. stir in ketchup and preserves; bring to a light boil.
  5. reduce heat to low; simmer until mixture is thickened and reduced to 1 cup, about 20 mins meanwhile,line broiler pan with foil; coat with cooking spray.
  6. reserve 1/4 cup sauce.
  7. in a large bowl, toss wings with remaining sauce.
  8. place wings in pan.
  9. bake 30 mins, on lowest rack, brushing occasionally with reserved sauce.
  10. remove broiler rack from lowest position.
  11. set oven rack for broiler position.
  12. set oven heat to broiler.
  13. broil wings for 2 mins, or until browned.

The Cancun Sizzle Recipe

INGREDIENTS

  1. 3/4ouncetequila
  2. 6ounces hotcoffee
  3. whipped cream
  4. 3/4ounceraspberry liqueur

DIRECTIONS

  1. Pour tequila into a heat proof mug; top with hot coffee& a dollop of whipped cream.
  2. Drizzle raspberry liqueur on top.
  3. Garnish with a chocolate dipped raspberry (optional).

Zucchini-Pineapple Loaf Cake Recipe

INGREDIENTS

  1. 3eggs
  2. 1cupoil
  3. 2cupssugar
  4. 2teaspoonsvanilla
  5. 2cups coarsely shredded unpeeledzucchini
  6. 1 (14 ounce)can well drainedcrushed pineapple
  7. 3cupsflour
  8. 2teaspoonsbaking soda
  9. 1teaspoonsalt
  10. 1/2teaspoonbaking powder
  11. 1 1/2teaspoonscinnamon
  12. 3/4teaspoonnutmeg
  13. 1cup choppednuts
  14. 1cupraisinsor currants

DIRECTIONS

  1. Set oven to 350 degrees (second lowest rack).
  2. Grease two 9 x 5-inch loaf pans, or mini loaf pans.
  3. In a large bowl, beat eggs, oil, sugar and vanilla, continue beating until thick and foamy with a spoon, then stir in shredded zucchini and pineapple.
  4. Combine remaining dry ingredients together, then gently stir into zucchini/pineapple mixture just until blended.
  5. Add the chopped nut and raisins; stir to combine.
  6. Divide the batter evenly between two greased and floured 9×5 loaf pans.
  7. Bake for 1 hour or until cake tests done.
  8. Cool in pans for 10 minutes before removing.
  9. Muffin Variation: follow above recipe except nearly fill paper-lined muffin cups.
  10. Bake at 350 degrees for 24-30 minutes.

The Coffee Cooler Recipe

INGREDIENTS

  1. 1ouncevanilla vodka
  2. 1/2ounce whiteCreme de Cacao
  3. 2ounces coldstrong coffee
  4. 2ounceschocolate milk
  5. 2ounces whitemilk(or cream)
  6. chocolate shavings(for garnish)

DIRECTIONS

  1. Fill a cocktail shaker with ice.
  2. Add all ingredients, shake well& pour into a glass.
  3. Sprinkle with shaved chocolate.
