INGREDIENTS
- 2 1/2cupssugar
- 3/4cupbutter, melted
- 1/4cupvegetable oil
- 3largeeggs
- 3cupsflour
- 2teaspoonsbaking soda
- 1teaspooncinnamon
- 1teaspoonnutmeg
- 1/4teaspooncloves
- 1/2teaspoonsalt
- 1 (15 ounce)cansolid-pack pumpkin
DIRECTIONS
- Set oven to 350 degrees, (second lowest position).
- Grease bottoms only of mini loaf pans.
- In a large bowl, beat together sugar, butter, oil; add eggs, until well combined (about 2-3 minutes).
- Combine/sift flour, baking soda, cinnamon, nutmeg, cloves and salt.
- Add the dry mixture to egg mixture, with canned pumpkin; mix well.
- Pour/transfer into regular or fluted mini loaf pans, filling 3/4 full.
- Bake for about 25-30 minutes, or until cake test done with toothpick.

INGREDIENTS
- 3tablespoonsoil
- 1smallonion, minced
- 2garlic cloves, minced
- 2teaspoons grated peeledfresh ginger
- 1/4teaspoonsalt
- 1/8-1/4teaspooncrushed red pepper flakes
- 3tablespoonsvinegar, perferably apple cider
- 2/3cupketchup
- 1/2cupapricot preserves
- 3 1/2lbschicken wings
DIRECTIONS
- set oven to 350 degrees.
- in a pot, add first 6 ingredients, cook stirring occasionally until onion is softened, about 3 minutes.
- add vinegar, cook 1 minute.
- stir in ketchup and preserves; bring to a light boil.
- reduce heat to low; simmer until mixture is thickened and reduced to 1 cup, about 20 mins meanwhile,line broiler pan with foil; coat with cooking spray.
- reserve 1/4 cup sauce.
- in a large bowl, toss wings with remaining sauce.
- place wings in pan.
- bake 30 mins, on lowest rack, brushing occasionally with reserved sauce.
- remove broiler rack from lowest position.
- set oven rack for broiler position.
- set oven heat to broiler.
- broil wings for 2 mins, or until browned.

INGREDIENTS
- 3/4ouncetequila
- 6ounces hotcoffee
- whipped cream
- 3/4ounceraspberry liqueur
DIRECTIONS
- Pour tequila into a heat proof mug; top with hot coffee& a dollop of whipped cream.
- Drizzle raspberry liqueur on top.
- Garnish with a chocolate dipped raspberry (optional).

INGREDIENTS
- 3eggs
- 1cupoil
- 2cupssugar
- 2teaspoonsvanilla
- 2cups coarsely shredded unpeeledzucchini
- 1 (14 ounce)can well drainedcrushed pineapple
- 3cupsflour
- 2teaspoonsbaking soda
- 1teaspoonsalt
- 1/2teaspoonbaking powder
- 1 1/2teaspoonscinnamon
- 3/4teaspoonnutmeg
- 1cup choppednuts
- 1cupraisinsor currants
DIRECTIONS
- Set oven to 350 degrees (second lowest rack).
- Grease two 9 x 5-inch loaf pans, or mini loaf pans.
- In a large bowl, beat eggs, oil, sugar and vanilla, continue beating until thick and foamy with a spoon, then stir in shredded zucchini and pineapple.
- Combine remaining dry ingredients together, then gently stir into zucchini/pineapple mixture just until blended.
- Add the chopped nut and raisins; stir to combine.
- Divide the batter evenly between two greased and floured 9×5 loaf pans.
- Bake for 1 hour or until cake tests done.
- Cool in pans for 10 minutes before removing.
- Muffin Variation: follow above recipe except nearly fill paper-lined muffin cups.
- Bake at 350 degrees for 24-30 minutes.

INGREDIENTS
- 1ouncevanilla vodka
- 1/2ounce whiteCreme de Cacao
- 2ounces coldstrong coffee
- 2ounceschocolate milk
- 2ounces whitemilk(or cream)
- chocolate shavings(for garnish)
DIRECTIONS
- Fill a cocktail shaker with ice.
- Add all ingredients, shake well& pour into a glass.
- Sprinkle with shaved chocolate.
