Southwest Chicken Breasts Recipe

INGREDIENTS

  1. 2boneless skinless chicken breasts
  2. 1cupchicken broth
  3. 1/2onion, sliced thin
  4. 2tablespoons mincedgarlic
  5. 1tablespoonbutter
  6. 2tablespoonsolive oil
  7. 1/2cup choppedcilantro
  8. 3green onions, diced
  9. 1/2cup shreddedMexican blend cheese
  10. 1cupflour, seasoned with
  11. ranch dressing mix
  12. salt and pepper

DIRECTIONS

  1. Place Flour in a small bowl, and add about 1/3 of a package of Ranch Dressing Mix to flour.
  2. Also add salt and pepper if you wish.
  3. In a medium pan, add olive oil, and heat oil.
  4. Flour both chicken breasts in Ranch Flour mixture, and add to oil.
  5. Brown chicken on both sides until crispy.
  6. Remove chicken from pan and place on paper towel to drain any extra oil.
  7. Add chicken broth, sliced onion, garlic, and 2 tablespoons of flour mixture to the pan.
  8. Heat until the mixutre thickens, about 5 minutes or so.
  9. Add chicken back to the pan.
  10. Stir the cilantro and green onion into the mixture.
  11. Cover pan, and let it cook for about 3-4 minutes.
  12. Top chicken breasts with cheese and cover pan for another minute, or until cheese melts.
  13. Serve chicken over rice if you prefer, and pour sauce over chicken breasts.

Bacon-Wrapped Pineapple Appetizers (Microwave) Recipe

INGREDIENTS

  1. 1 (8 ounce)canpineapple chunks in juice, drained(reserve 3 tablespoons juice)
  2. 2tablespoonssoy sauce
  3. 1/4teaspoonground ginger
  4. 1dashgarlic powder
  5. 6slicesbacon, each cut into thirds

DIRECTIONS

  1. Combine the 3 tablespoons juice, soy sauce, ginger and garlic powder in small bowl.
  2. Marinade the pineapple chunks in this for 1- 2 hours.
  3. Drain.
  4. Wrap a piece of bacon around each chunk.
  5. Secure with a toothpick.
  6. Line microwave carousel with several layers of paper towel.
  7. Arrange around the outer edge of carousel with space between each one.
  8. Microwave at 100% power until bacon is lightly browned (5 to 9 minutes).
  9. Serve.

Hamburger Oven Meal Recipe

INGREDIENTS

  1. 1lbhamburger
  2. 1onion, sliced thinly
  3. 4-5carrots, sliced
  4. 4-5potatoes, peeled and sliced
  5. 1/2cup rawlong grain rice(I use a combo of white and wild)
  6. 1tablespoonsalt
  7. 1tablespoonsugar
  8. 1clovegarlic, minced
  9. pepper
  10. 1 (10 3/4 ounce)cancream of mushroom soup
  11. 1 (10 3/4 ounce)cancream of chicken soup
  12. 3cupswater

DIRECTIONS

  1. Brown hamburger and drain grease.
  2. Place meat in large casserole dish.
  3. Layer the onions, carrots, potatoes and rice over meat.
  4. Mix soups, seasonings and water- until blended.
  5. Pour over layers.
  6. Bake at 350 for 1 1/2 hours.
  7. Optional- add cheese and bake until melted.
  8. We serve with ketchup.

Barbequed Spring Vegetables Recipe

INGREDIENTS

  1. 8 lebaneseeggplants
  2. 2red sweet peppers
  3. 2yellow sweet peppers
  4. 2red onions, cut into thin wedges
  5. 2tablespoonsolive oil
  6. 1tablespoonlemon juice

DIRECTIONS

  1. Cut eggplants and peppers into 2 cm pieces.
  2. Combine all of the ingredients in a bowl and add a little salt to taste.
  3. Toss together so vegetables are coated.
  4. Preheat BBQ plate on medium-high heat.
  5. Add the vegetables and cook for about 10 minutes, stirring and tossing every minute or so until vegetables are done.
  6. Season to taste with salt and pepper and serve warm or room temperature.

Zucchini Saute Recipe

INGREDIENTS

  1. 2teaspoonsolive oil
  2. 4zucchini, trimmed and cut into thin strips(1-2″long x 1/4″wide)
  3. 2tablespoons mincedfresh herbs(parsley, basil and tarragon)
  4. salt and pepper, to taste
  5. 2teaspoons gratedparmesan cheese (optional)

DIRECTIONS

  1. Heat oil in large skillet ovr high heat.
  2. Add zucchini to skillet and stir-fry until crisp-tender and bright green (5 minutes).
  3. Season zucchin with herbs, salt and pepper.
  4. Sprinkle with grated cheese, if desired.
