INGREDIENTS
- 2boneless skinless chicken breasts
- 1cupchicken broth
- 1/2onion, sliced thin
- 2tablespoons mincedgarlic
- 1tablespoonbutter
- 2tablespoonsolive oil
- 1/2cup choppedcilantro
- 3green onions, diced
- 1/2cup shreddedMexican blend cheese
- 1cupflour, seasoned with
- ranch dressing mix
- salt and pepper
DIRECTIONS
- Place Flour in a small bowl, and add about 1/3 of a package of Ranch Dressing Mix to flour.
- Also add salt and pepper if you wish.
- In a medium pan, add olive oil, and heat oil.
- Flour both chicken breasts in Ranch Flour mixture, and add to oil.
- Brown chicken on both sides until crispy.
- Remove chicken from pan and place on paper towel to drain any extra oil.
- Add chicken broth, sliced onion, garlic, and 2 tablespoons of flour mixture to the pan.
- Heat until the mixutre thickens, about 5 minutes or so.
- Add chicken back to the pan.
- Stir the cilantro and green onion into the mixture.
- Cover pan, and let it cook for about 3-4 minutes.
- Top chicken breasts with cheese and cover pan for another minute, or until cheese melts.
- Serve chicken over rice if you prefer, and pour sauce over chicken breasts.

INGREDIENTS
- 1 (8 ounce)canpineapple chunks in juice, drained(reserve 3 tablespoons juice)
- 2tablespoonssoy sauce
- 1/4teaspoonground ginger
- 1dashgarlic powder
- 6slicesbacon, each cut into thirds
DIRECTIONS
- Combine the 3 tablespoons juice, soy sauce, ginger and garlic powder in small bowl.
- Marinade the pineapple chunks in this for 1- 2 hours.
- Drain.
- Wrap a piece of bacon around each chunk.
- Secure with a toothpick.
- Line microwave carousel with several layers of paper towel.
- Arrange around the outer edge of carousel with space between each one.
- Microwave at 100% power until bacon is lightly browned (5 to 9 minutes).
- Serve.

INGREDIENTS
- 1lbhamburger
- 1onion, sliced thinly
- 4-5carrots, sliced
- 4-5potatoes, peeled and sliced
- 1/2cup rawlong grain rice(I use a combo of white and wild)
- 1tablespoonsalt
- 1tablespoonsugar
- 1clovegarlic, minced
- pepper
- 1 (10 3/4 ounce)cancream of mushroom soup
- 1 (10 3/4 ounce)cancream of chicken soup
- 3cupswater
DIRECTIONS
- Brown hamburger and drain grease.
- Place meat in large casserole dish.
- Layer the onions, carrots, potatoes and rice over meat.
- Mix soups, seasonings and water- until blended.
- Pour over layers.
- Bake at 350 for 1 1/2 hours.
- Optional- add cheese and bake until melted.
- We serve with ketchup.

INGREDIENTS
- 8 lebaneseeggplants
- 2red sweet peppers
- 2yellow sweet peppers
- 2red onions, cut into thin wedges
- 2tablespoonsolive oil
- 1tablespoonlemon juice
DIRECTIONS
- Cut eggplants and peppers into 2 cm pieces.
- Combine all of the ingredients in a bowl and add a little salt to taste.
- Toss together so vegetables are coated.
- Preheat BBQ plate on medium-high heat.
- Add the vegetables and cook for about 10 minutes, stirring and tossing every minute or so until vegetables are done.
- Season to taste with salt and pepper and serve warm or room temperature.

INGREDIENTS
- 2teaspoonsolive oil
- 4zucchini, trimmed and cut into thin strips(1-2″long x 1/4″wide)
- 2tablespoons mincedfresh herbs(parsley, basil and tarragon)
- salt and pepper, to taste
- 2teaspoons gratedparmesan cheese (optional)
DIRECTIONS
- Heat oil in large skillet ovr high heat.
- Add zucchini to skillet and stir-fry until crisp-tender and bright green (5 minutes).
- Season zucchin with herbs, salt and pepper.
- Sprinkle with grated cheese, if desired.
