INGREDIENTS
- 1graham cracker crust
- 2 (14 ounce)canssweetened condensed milk
- 4ounceswhipped topping
- choppednuts (optional)
DIRECTIONS
- Cook sweetened condensed milk in a 1 qt slow cooker (dip size) for 6-7 hours or until mixture is the color of peanut butter, stirring with a wire whisk every 30 minutes.
- Pour into pie crust.
- Chill.
- Top with cool whip.
- If using nuts, sprinkle over top of cool whip.
- Enjoy!

INGREDIENTS
- 2/3cupshortening
- 2eggs, at room temperature
- 2teaspoonsvanilla
- 4cupsflour
- 2cupssugar
- 1cupcocoa
- 2teaspoonsbaking soda
- 2teaspoonssalt
- 2cupsmilk, at room temperature

Filling
- 2egg whites, beaten stiff
- 1/2cupshortening
- 2cupspowdered sugar
- 1teaspoonvanilla
- 1/2teaspoonsalt
DIRECTIONS
- preheat oven at 350.
- cream shortening.
- add eggs and vanilla.
- sift together the dry ingredients.
- add dry ingredients to the shortening mixture alternating with the milk, beginning and ending with the dry ingredient drop by T on a greased cookie sheet.
- bake 15 minutes.
- cool.
- Filling: Mix all the filling ingredients together.
- spread a tsp (or a little more) on a cookie.
- top with another cookie.
- enjoy.
- makes 2 dozen cookies.

INGREDIENTS
- 1 1/4cups slicedfresh mushrooms
- 1/2cuponions, finely chopped
- 1/2cupgreen peppers, chopped
- 1teaspoonvegetable oil
- 2cupswater
- 1 (15 ounce)canpizza sauceor pasta sauce
- 1cuppepperoni, chopped
- 1cupfresh tomatoes
- 1/2cup cookedItalian sausage
- 1/4teaspoonitalian seasoning
- 1/4cup gratedparmesan cheese
- shreddedmozzarella cheese
DIRECTIONS
- In a large sauce pan, sautee mushrooms, onion & green pepper in oil for 2-3 minutes or until tender.
- Add water, sauce, pepperoni, tomatoes, sausage and italian seasoning.
- bring to a boil over medium heat.
- Reduct heat; cover and simmer for 20 minutes, stirring occasionally.
- Before serving, stir in parmesan cheese.
- Garnish with Mozzarella cheese.

INGREDIENTS
- 340gchicken breast fillets
- 1tablespoon gratedlime rind
- 1tablespoon gratedfresh ginger
- 2teaspoonsground cumin
- 1egg white
- 2spring onions, sliced
- 35gplain flour

- 2mediumred capsicums(400g)
- 1mediumyellow onion, chopped finely(150g)
- 4birds eye chiles, chopped finely
- 1 (415 g)candiced tomatoes
- 1tablespoonbrown sugar
DIRECTIONS
- Blend or process chicken until finely chopped.
- Add rind, ginger, cumin, egg white and onion and process until the mixture forms a paste.
- Using hands, shape mixture into 8 patties and toss in flour, shake away any excess flour.
- Heat a large oiled non stick pan and cook the patties about 2 minutes on each side until browned.
- Place the patties on an oven tray and bake uncovered in a moderate oven (180C) for about 15 minutes until cooked.
- chilli sauce: Quarter capsicums and remove and discard the seeds and membranes.
- Roast under a grill skin side up, until skin blisters and blackens.
- Cover capsicum pieces in plastic for 5 mins, peel away skin, and chop pieces finely.
- Heat oiled small pan and cook onion and chilli for about 2 minutes, stirring all the time, onion should be soft.
- Stir in tomato and sugar, simmer uncovered for 5 mins then stir in the capsicum.

- 400gground lamb, very lean
- 1onion, chopped finely(80g)
- 1garlic clove, crushed
- 40g seededblack olives, chopped
- 60glow-fat feta, crumbled
- 35g stalebreadcrumbs
- 1egg white
DIRECTIONS
- Combine all the ingredients in a bowl and mix well.
- Shape mixture into 8 patties.
- Heat a large oiled pan, cook the patties until browned and cooked through.
- Serve with low fat tomato chutney or chili.
