O’charley’s Caramel Pie Recipe

INGREDIENTS

  1. 1graham cracker crust
  2. 2 (14 ounce)canssweetened condensed milk
  3. 4ounceswhipped topping
  4. choppednuts (optional)

DIRECTIONS

  1. Cook sweetened condensed milk in a 1 qt slow cooker (dip size) for 6-7 hours or until mixture is the color of peanut butter, stirring with a wire whisk every 30 minutes.
  2. Pour into pie crust.
  3. Chill.
  4. Top with cool whip.
  5. If using nuts, sprinkle over top of cool whip.
  6. Enjoy!

Whoopie Pies Recipe

INGREDIENTS

  1. 2/3cupshortening
  2. 2eggs, at room temperature
  3. 2teaspoonsvanilla
  4. 4cupsflour
  5. 2cupssugar
  6. 1cupcocoa
  7. 2teaspoonsbaking soda
  8. 2teaspoonssalt
  9. 2cupsmilk, at room temperature
  10. Filling

  11. 2egg whites, beaten stiff
  12. 1/2cupshortening
  13. 2cupspowdered sugar
  14. 1teaspoonvanilla
  15. 1/2teaspoonsalt

DIRECTIONS

  1. preheat oven at 350.
  2. cream shortening.
  3. add eggs and vanilla.
  4. sift together the dry ingredients.
  5. add dry ingredients to the shortening mixture alternating with the milk, beginning and ending with the dry ingredient drop by T on a greased cookie sheet.
  6. bake 15 minutes.
  7. cool.
  8. Filling: Mix all the filling ingredients together.
  9. spread a tsp (or a little more) on a cookie.
  10. top with another cookie.
  11. enjoy.
  12. makes 2 dozen cookies.

Pizza Soup Recipe

INGREDIENTS

  1. 1 1/4cups slicedfresh mushrooms
  2. 1/2cuponions, finely chopped
  3. 1/2cupgreen peppers, chopped
  4. 1teaspoonvegetable oil
  5. 2cupswater
  6. 1 (15 ounce)canpizza sauceor pasta sauce
  7. 1cuppepperoni, chopped
  8. 1cupfresh tomatoes
  9. 1/2cup cookedItalian sausage
  10. 1/4teaspoonitalian seasoning
  11. 1/4cup gratedparmesan cheese
  12. shreddedmozzarella cheese

DIRECTIONS

  1. In a large sauce pan, sautee mushrooms, onion & green pepper in oil for 2-3 minutes or until tender.
  2. Add water, sauce, pepperoni, tomatoes, sausage and italian seasoning.
  3. bring to a boil over medium heat.
  4. Reduct heat; cover and simmer for 20 minutes, stirring occasionally.
  5. Before serving, stir in parmesan cheese.
  6. Garnish with Mozzarella cheese.

Ginger Chicken and Lime Patties Recipe

INGREDIENTS

  1. 340gchicken breast fillets
  2. 1tablespoon gratedlime rind
  3. 1tablespoon gratedfresh ginger
  4. 2teaspoonsground cumin
  5. 1egg white
  6. 2spring onions, sliced
  7. 35gplain flour
  8. chilli SAUCE

  9. 2mediumred capsicums(400g)
  10. 1mediumyellow onion, chopped finely(150g)
  11. 4birds eye chiles, chopped finely
  12. 1 (415 g)candiced tomatoes
  13. 1tablespoonbrown sugar

DIRECTIONS

  1. Blend or process chicken until finely chopped.
  2. Add rind, ginger, cumin, egg white and onion and process until the mixture forms a paste.
  3. Using hands, shape mixture into 8 patties and toss in flour, shake away any excess flour.
  4. Heat a large oiled non stick pan and cook the patties about 2 minutes on each side until browned.
  5. Place the patties on an oven tray and bake uncovered in a moderate oven (180C) for about 15 minutes until cooked.
  6. chilli sauce: Quarter capsicums and remove and discard the seeds and membranes.
  7. Roast under a grill skin side up, until skin blisters and blackens.
  8. Cover capsicum pieces in plastic for 5 mins, peel away skin, and chop pieces finely.
  9. Heat oiled small pan and cook onion and chilli for about 2 minutes, stirring all the time, onion should be soft.
  10. Stir in tomato and sugar, simmer uncovered for 5 mins then stir in the capsicum.

Lamb and Feta Rissoles Recipe

INGREDIENTS

  1. 400gground lamb, very lean
  2. 1onion, chopped finely(80g)
  3. 1garlic clove, crushed
  4. 40g seededblack olives, chopped
  5. 60glow-fat feta, crumbled
  6. 35g stalebreadcrumbs
  7. 1egg white

DIRECTIONS

  1. Combine all the ingredients in a bowl and mix well.
  2. Shape mixture into 8 patties.
  3. Heat a large oiled pan, cook the patties until browned and cooked through.
  4. Serve with low fat tomato chutney or chili.
