INGREDIENTS
- 2lbsground chuck
- 1largesweet onion(diced)
- 1 (4 ounce)packageRitz crackersor townhousecrackers(crushed)
- 1/2cupItalian seasoned breadcrumbs(Walmart brand is great!)
- 1egg(slightly beaten)
- 1/2cupHeinz ketchup
- 1/4cupsugar(Most Important Ingredient)
- 1teaspoonsalt
- 2teaspoonspepper
- 1/2green pepper(diced)(optional)
- 1/2cupHeinz ketchup, reserved for the topping
DIRECTIONS
- Mix all ingredients.
- (I use my hands, it’s faster!).
- Place in a 9×13 Baking dish and top with Ketchup.
- Bake in a 375° Oven for 45-60 Minutes or until done (most ovens heat varies). Let stand for 10 minutes and slice.

INGREDIENTS
- 4boneless skinless chicken breasts
- 1cancream of broccoli soup
- 1/2cupwater
- 1green bell pepper, chopped
- 1teaspoondried parsley flakes
- 1tablespoonlemon juice
- 1teaspoonpaprika
- 4lemon slices
DIRECTIONS
- Spray nonstick skillet with vegetable cooking spray and heat 1 minute.
- Add chicken and cook until browned.
- Add soup, water, bell pepper, parsley flakes, lemon juice, and paprika.
- Heat to a boil.
- Cover and cook over low heat 5 minutes.
- Garnish with lemon slices.

INGREDIENTS
- 2largeeggplants, peeled
- coarse salt
- corn oil
- driedGreek oregano
- 15tablespoons baitacheeseor montasio cheese, grated
- 7 1/2tablespoonsparmigiano-reggiano cheese, grated
- 3mediumtomatoes, thinly sliced
DIRECTIONS
- Using a vegetable peeler, peel eggplant lengthwise.
- Slice crosswise 1/2-inch-thick.
- Layer slices in a colander, sprinkling each layer generously with salt.
- Set colander over a bowl and weight with a heavy object.
- Transfer to refrigerator, and let stand overnight.
- Preheat the oven to 400°.
- In a large cast iron skillet, heat 1/2-inch oil over high heat.
- Remove eggplant from colander, and pat dry with paper towels.
- Working in batches, add eggplant to skillet.
- Cook until golden brown, turning once.
- As each batch is finished, transfer to a paper towel-lined baking sheet to drain.
- On a nonstick rimmed baking sheet, arrange 3 slices of eggplant in an overlapping circular pattern.
- Repeat process until you have used half of the eggplant.
- Sprinkle with a small pinch of oregano.
- Top each with 1 1/2 tablespoons of each cheese.
- Using a spray bottle filled with water, lightly spray cheese to moisten.
- Top with tomato slices, and season with salt.
- Repeat process using remaining ingredients to make a second layer.
- Top each with 1 1/2 tablespoons Baita cheese.
- Spray with a little more water.
- Add 2 tablespoons water to baking sheet.
- Bake until the cheese is bubbling and beginning to brown.
- Serve immediately.

INGREDIENTS
- 1cuptomato juice
- 3/4cupquick-cooking oatsor old fashioned oats, uncooked
- 1egg, beaten
- 1/4cup choppedonions
- 1teaspoonsalt
- 1teaspoonpepper
- 1 1/2lbslean ground beef
DIRECTIONS
- Heat oven to 350.
- Combine all ingredients except ground beef, mix well.
- Add ground beef, mix lightly but thoroughly.
- Put into 8×4 inch loaf pan, and bake 1 hour.

- 2 (13 ounce)canswhite hominy
- 3tablespoons gratedonions
- 1 1/2cupssour cream
- salt, to taste
- 1 1/2cups shreddedmonterey jack cheese(cheddar works fine, too)
- 2 (4 ounce)cans choppedgreen chilies
DIRECTIONS
- Preheat oven to 350.
- Mix all the ingredients together and pour into an ovenproof casserole dish.
- Bake for 30 minutes.
