Meatloaf from Heaven Recipe

INGREDIENTS

  1. 2lbsground chuck
  2. 1largesweet onion(diced)
  3. 1 (4 ounce)packageRitz crackersor townhousecrackers(crushed)
  4. 1/2cupItalian seasoned breadcrumbs(Walmart brand is great!)
  5. 1egg(slightly beaten)
  6. 1/2cupHeinz ketchup
  7. 1/4cupsugar(Most Important Ingredient)
  8. 1teaspoonsalt
  9. 2teaspoonspepper
  10. 1/2green pepper(diced)(optional)
  11. 1/2cupHeinz ketchup, reserved for the topping

DIRECTIONS

  1. Mix all ingredients.
  2. (I use my hands, it’s faster!).
  3. Place in a 9×13 Baking dish and top with Ketchup.
  4. Bake in a 375° Oven for 45-60 Minutes or until done (most ovens heat varies). Let stand for 10 minutes and slice.

Chicken in Savory Lemon Sauce Recipe

INGREDIENTS

  1. 4boneless skinless chicken breasts
  2. 1cancream of broccoli soup
  3. 1/2cupwater
  4. 1green bell pepper, chopped
  5. 1teaspoondried parsley flakes
  6. 1tablespoonlemon juice
  7. 1teaspoonpaprika
  8. 4lemon slices

DIRECTIONS

  1. Spray nonstick skillet with vegetable cooking spray and heat 1 minute.
  2. Add chicken and cook until browned.
  3. Add soup, water, bell pepper, parsley flakes, lemon juice, and paprika.
  4. Heat to a boil.
  5. Cover and cook over low heat 5 minutes.
  6. Garnish with lemon slices.

Eggplant (Aubergine) Alla Pasta Nostra Recipe

INGREDIENTS

  1. 2largeeggplants, peeled
  2. coarse salt
  3. corn oil
  4. driedGreek oregano
  5. 15tablespoons baitacheeseor montasio cheese, grated
  6. 7 1/2tablespoonsparmigiano-reggiano cheese, grated
  7. 3mediumtomatoes, thinly sliced

DIRECTIONS

  1. Using a vegetable peeler, peel eggplant lengthwise.
  2. Slice crosswise 1/2-inch-thick.
  3. Layer slices in a colander, sprinkling each layer generously with salt.
  4. Set colander over a bowl and weight with a heavy object.
  5. Transfer to refrigerator, and let stand overnight.
  6. Preheat the oven to 400°.
  7. In a large cast iron skillet, heat 1/2-inch oil over high heat.
  8. Remove eggplant from colander, and pat dry with paper towels.
  9. Working in batches, add eggplant to skillet.
  10. Cook until golden brown, turning once.
  11. As each batch is finished, transfer to a paper towel-lined baking sheet to drain.
  12. On a nonstick rimmed baking sheet, arrange 3 slices of eggplant in an overlapping circular pattern.
  13. Repeat process until you have used half of the eggplant.
  14. Sprinkle with a small pinch of oregano.
  15. Top each with 1 1/2 tablespoons of each cheese.
  16. Using a spray bottle filled with water, lightly spray cheese to moisten.
  17. Top with tomato slices, and season with salt.
  18. Repeat process using remaining ingredients to make a second layer.
  19. Top each with 1 1/2 tablespoons Baita cheese.
  20. Spray with a little more water.
  21. Add 2 tablespoons water to baking sheet.
  22. Bake until the cheese is bubbling and beginning to brown.
  23. Serve immediately.

INGREDIENTS

  1. 1cuptomato juice
  2. 3/4cupquick-cooking oatsor old fashioned oats, uncooked
  3. 1egg, beaten
  4. 1/4cup choppedonions
  5. 1teaspoonsalt
  6. 1teaspoonpepper
  7. 1 1/2lbslean ground beef

DIRECTIONS

  1. Heat oven to 350.
  2. Combine all ingredients except ground beef, mix well.
  3. Add ground beef, mix lightly but thoroughly.
  4. Put into 8×4 inch loaf pan, and bake 1 hour.

Southwestern Hominy Casserole Recipe

  1. 2 (13 ounce)canswhite hominy
  2. 3tablespoons gratedonions
  3. 1 1/2cupssour cream
  4. salt, to taste
  5. 1 1/2cups shreddedmonterey jack cheese(cheddar works fine, too)
  6. 2 (4 ounce)cans choppedgreen chilies

DIRECTIONS

  1. Preheat oven to 350.
  2. Mix all the ingredients together and pour into an ovenproof casserole dish.
  3. Bake for 30 minutes.
