Sweet Onion Pie Recipe

INGREDIENTS

  1. Crust

  2. 1 (4 ounce)packageRitz crackersor townhousecrackers(crushed)
  3. 1/4cupbutter(melted)
  4. Filling

  5. 3cups of thinly slicedsweet onions(I use Vidalia)
  6. 2eggs(slightly beaten)
  7. 1/2cup2% low-fat milk
  8. 1/2cup of shreddedmild cheddar cheese
  9. 1teaspoonparsley flakes
  10. 1teaspoon of choppedchives
  11. paprika, sprinkled on top for the topping

DIRECTIONS

  1. Mix together cracker crumbs and butter and press into a 9″ pie pan.
  2. Place sliced onions into the microwave for 1 or 2 minute.
  3. Cook onions until clear or translucent and add all theother ingredients.
  4. Pour filling into the pie crust, & sprinkle the top with paprika and Chives, then bake in a 350° preheated oven for 30 minutes or until set, (slice able).
  5. This can be served for Breakfast, Lunch or Dinner!
  6. We like it anytime!

Peanut Butter Cup Cookies Recipe

INGREDIENTS

  1. 1cupflour
  2. 1/4teaspoonsalt
  3. 5 1/2tablespoons coldunsalted butter, cut into small bits
  4. 3tablespoonssmooth peanut butter(or chunky)
  5. 1/2teaspoonvanilla
  6. 11ouncespeanut butter cups, cut into small bits(or 14)

DIRECTIONS

  1. Preheat oven to 350 F, and position an oven rack in the middle of the oven.
  2. Mix flour and salt well.
  3. Add butter, peanut butter, and vanilla, and beat until the mixture just starts to stick together (if butter bits are too big, use a pastry blender to make them smaller).
  4. Add peanut butter cups and mix until well blended (you can also use the pastry blender in this step, if needed).
  5. Shape dough into 1″ balls and place on a large, well greased cookie sheet, about an inch or so apart.
  6. Bake 7-8 minutes, then turn tray around and bake another 8 minutes, until just slightly browned.
  7. Place baking sheet on a cooling rack for 30-40 minutes, until completely cooled (they are very crumbly until cooled).
  8. YUM!

Munch ‘n Crunch Party Mix Recipe

INGREDIENTS

  1. 2cupschow mein noodles
  2. 1/2cuppecans
  3. 2tablespoonssesame seeds
  4. 1/2teaspoonchili powder
  5. 1/2teaspoongarlic salt
  6. 1/2teaspoondry mustard
  7. 2tablespoonsbutter, melted
  8. 1tablespoonsoy sauce

DIRECTIONS

  1. Toss first 3 ingredients together in a shallow pan.
  2. Thoroughly combine remaining ingredients.
  3. Drizzle over top and toss to coat well.
  4. Heat at 350 degrees F for 25-30 minutes, stirring regularly.
  5. Cool on paper towels.
  6. Recipe can be doubled or tripled.

Onion Dip Recipe

INGREDIENTS

  1. 1cupsour cream or drainednonfat plain yogurt(I use my Yogurt Cheese, Yogurt Cheese - ‘Labanee’, in Arabic for a thicker consistency)
  2. 1cupmayonnaise
  3. 4tablespoons driedinstant onion(preferably the toasted ones, if you can find them)
  4. 1 1/2tablespoonsdried parsley flakes
  5. 3/4teaspoonWorcestershire sauce
  6. salt & freshly ground black pepper

DIRECTIONS

  1. Combine all ingredients.
  2. Cover, and refrigerate overnight, stirring twice.
  3. Adjust salt and pepper to taste.
  4. Serve with chips, crackers, and/or veggies.

Pear Cheesecake Recipe

INGREDIENTS

  1. 1cupall-purpose flour
  2. 3/4cup uncookedquick-cooking oats
  3. 1/2cup packedbrown sugar
  4. 1teaspoonground cinnamon
  5. 1/2cupbutter
  6. 1 (8 ounce)packagecream cheese, softened
  7. 1/2cupgranulated sugar
  8. 1egg
  9. 1teaspoonvanilla extract
  10. 1 ripepear, peeled,cored and thinly sliced
  11. 1/4cup choppedpecans

DIRECTIONS

  1. Preheat oven to 350.
  2. Grease a 9 inch pie pan.
  3. In a small bowl, combine the flour, oats, brown sugar and cinnamon.
  4. Stir well.
  5. Stir in butter with a fork until the mixture resembles coarse crumbs.
  6. Press 2/3 of the mixture into the bottom of the pie pan and bake for 15 minutes Remove from oven.
  7. Beat the cream cheese with the granulated sugar, egg and vanilla until well blended Spread over the baked crust.
  8. Top with pear slices arranged in a decorative circular pattern and sprinkle with the remaining crumb mixture.
  9. Return to the oven and bake an additional 30 minutes Remove from oven, cool and refrigerate at least two hours before serving.
