INGREDIENTS
- 6ouncescouscous
- 4tablespoonsolive oil
- 1eggplant, finely diced
- 1onion, finely diced
- 2garlic cloves, crushed
- 2teaspoonsground cumin
- 2teaspoonsground coriander
- 1red capsicum, finely diced
- 3tablespoons choppedfresh coriander
- 2teaspoons gratedfresh lemon rind
- 2teaspoonslemon juice
- 5tablespoonsnatural yoghurt(preferably Greek)
- 1egg, lightly beaten
- oil, for shallow frying
DIRECTIONS
- Place the couscous in a bowl and add 1 cup (250ml/8fl. oz) of boiling water and leave for 10 mintues or until the water has been absorbed.
- Fluff up with a fork.
- Heat 2 tablespoons of the oil in a large fry pan and fry the eggplant until soft and golden, then place in a bowl.
- Heat 1 tablespoon of the oil in the pan and add the onion, garlic, cumin and ground coriander.
- Cook over medium heat for 4 minutes or until soft, then add to the bowl.
- Heat th remaining oil and cook the capsicum for 5 minutes or until soft.
- Place in the bowl and stir well.
- Add the vegetable mixture to the couscous with the fresh coriander, lemon rind, lemon juice, yoghurt and egg and season to taste and mix well.
- Using damp hands, divide the mixture into four portions and form into large patties, they should be about 2cm thick.
- Cover and refrigerate for 15 minutes.
- Shallow fry the patties over medium heat for 5 minutes each side.
- Drain well and serve with yoghurt, can mix some mint into it.

INGREDIENTS
- 2cupsflour
- 1cupquick-cooking oats
- 1teaspoonbaking soda
- 1teaspooncinnamon
- 1/2teaspoonsalt
- 1cupbutter, softened
- 1cupbrown sugar
- 1cupsugar
- 1egg
- 1teaspoonvanilla
- 1cuppumpkin
- 1cupchocolate chips, i use milk chocolate
- 1cupcinnamon baking chips (optional)
DIRECTIONS
- Cream butter with both sugars until light and fluffy.
- Add in egg, pumpkin, and vanilla and mix.
- Then add flour oats, baking soda, cinnamon, and salt and mix well.
- Then stir in CHocolate chips and cinnamon chips.
- Bake at 350 for 18-20 minutes or until firm and lightly brown.
- (OPT) You can shape these into pumpkins before baking and when done and cooled decorate with frosting or peanut butter (I love them just plain).
- I usually eat mine when they are totally cooled.

INGREDIENTS
- 1cupflour
- 1/4teaspoonbaking powder
- 1/4teaspoonsalt
- 1/4teaspoonnutmeg
- 1/2cupbutter
- 1cupbrown sugar
- 1/2teaspoonvanilla
- 1egg
- 1cupnuts (optional)
- 1cupchocolate chips
DIRECTIONS
- Cream together butter, sugar, vanilla, and egg.
- Stir in dry ingredients.
- Add chips and nuts (I dont ever use nuts, but I have used mint chips before…. mmmmmmm).
- Drop by spoonfuls onto a lightly greased cookie sheet and bake at 375 for 10-14 minutes.

INGREDIENTS
- 2garlic cloves, chopped
- 1/2cupolive oil
- 2tablespoons finely choppedfresh dill
- 1/4cup finely choppedfresh Italian parsleyor flat leaf parsley
- 2tablespoons finely choppedfresh basil
- 2tablespoonslemon juice
- 2 (400 g)cansartichokes
- 1/4cup finely dicedred capsicums
DIRECTIONS
- To make the marinade, whisk together the garlic, oil, herbs and lemon juice in a bowl then season with salt and cracked black pepper.
- Drain the artichokes and add to the bowl with the capsicum.
- Mix well to coat.
- Cover and marinade in the refrigerator overnight.
- These will keep in the refrigerator in an airtight container for a week.

INGREDIENTS
- 1pizza dough(the best is the already formed ones)
- 1/4cupsour cream
- 1/2cupsalsa
- 1cup cooked slicedchickens
- 1packetfajita seasoning mix
- 1/4cupwater
- 1/2cup shreddedmonterey jack cheese
- 1/2yellow pepper
- 1/2red pepper
- 1/2onion
DIRECTIONS
- In a med.
- saucepan cook together chicken and mixture of fajita mix and water, set aside.
- Combine sour cream and salsa, spread all over pizza dough.
- (leaving 1 in. crust) Top w/ chicken.
- Cook peppers and onion over med.
- heat w/cooking spray until soft.
- Top pizza w/peppers.
- Sprinkle cheese all over the top.
- Bake@ 350 degrees F for 12 min.
- ,or what the pizza dough says.
