Couscous Patties Recipe

INGREDIENTS

  1. 6ouncescouscous
  2. 4tablespoonsolive oil
  3. 1eggplant, finely diced
  4. 1onion, finely diced
  5. 2garlic cloves, crushed
  6. 2teaspoonsground cumin
  7. 2teaspoonsground coriander
  8. 1red capsicum, finely diced
  9. 3tablespoons choppedfresh coriander
  10. 2teaspoons gratedfresh lemon rind
  11. 2teaspoonslemon juice
  12. 5tablespoonsnatural yoghurt(preferably Greek)
  13. 1egg, lightly beaten
  14. oil, for shallow frying

DIRECTIONS

  1. Place the couscous in a bowl and add 1 cup (250ml/8fl. oz) of boiling water and leave for 10 mintues or until the water has been absorbed.
  2. Fluff up with a fork.
  3. Heat 2 tablespoons of the oil in a large fry pan and fry the eggplant until soft and golden, then place in a bowl.
  4. Heat 1 tablespoon of the oil in the pan and add the onion, garlic, cumin and ground coriander.
  5. Cook over medium heat for 4 minutes or until soft, then add to the bowl.
  6. Heat th remaining oil and cook the capsicum for 5 minutes or until soft.
  7. Place in the bowl and stir well.
  8. Add the vegetable mixture to the couscous with the fresh coriander, lemon rind, lemon juice, yoghurt and egg and season to taste and mix well.
  9. Using damp hands, divide the mixture into four portions and form into large patties, they should be about 2cm thick.
  10. Cover and refrigerate for 15 minutes.
  11. Shallow fry the patties over medium heat for 5 minutes each side.
  12. Drain well and serve with yoghurt, can mix some mint into it.

Its The Great Pumpkin Cookies, Charlie Brown Recipe

INGREDIENTS

  1. 2cupsflour
  2. 1cupquick-cooking oats
  3. 1teaspoonbaking soda
  4. 1teaspooncinnamon
  5. 1/2teaspoonsalt
  6. 1cupbutter, softened
  7. 1cupbrown sugar
  8. 1cupsugar
  9. 1egg
  10. 1teaspoonvanilla
  11. 1cuppumpkin
  12. 1cupchocolate chips, i use milk chocolate
  13. 1cupcinnamon baking chips (optional)

DIRECTIONS

  1. Cream butter with both sugars until light and fluffy.
  2. Add in egg, pumpkin, and vanilla and mix.
  3. Then add flour oats, baking soda, cinnamon, and salt and mix well.
  4. Then stir in CHocolate chips and cinnamon chips.
  5. Bake at 350 for 18-20 minutes or until firm and lightly brown.
  6. (OPT) You can shape these into pumpkins before baking and when done and cooled decorate with frosting or peanut butter (I love them just plain).
  7. I usually eat mine when they are totally cooled.

Chocolate Chip Cookies Recipe

INGREDIENTS

  1. 1cupflour
  2. 1/4teaspoonbaking powder
  3. 1/4teaspoonsalt
  4. 1/4teaspoonnutmeg
  5. 1/2cupbutter
  6. 1cupbrown sugar
  7. 1/2teaspoonvanilla
  8. 1egg
  9. 1cupnuts (optional)
  10. 1cupchocolate chips

DIRECTIONS

  1. Cream together butter, sugar, vanilla, and egg.
  2. Stir in dry ingredients.
  3. Add chips and nuts (I dont ever use nuts, but I have used mint chips before…. mmmmmmm).
  4. Drop by spoonfuls onto a lightly greased cookie sheet and bake at 375 for 10-14 minutes.

Garlic and Herb Marinated Artichokes Recipe

INGREDIENTS

  1. 2garlic cloves, chopped
  2. 1/2cupolive oil
  3. 2tablespoons finely choppedfresh dill
  4. 1/4cup finely choppedfresh Italian parsleyor flat leaf parsley
  5. 2tablespoons finely choppedfresh basil
  6. 2tablespoonslemon juice
  7. 2 (400 g)cansartichokes
  8. 1/4cup finely dicedred capsicums

DIRECTIONS

  1. To make the marinade, whisk together the garlic, oil, herbs and lemon juice in a bowl then season with salt and cracked black pepper.
  2. Drain the artichokes and add to the bowl with the capsicum.
  3. Mix well to coat.
  4. Cover and marinade in the refrigerator overnight.
  5. These will keep in the refrigerator in an airtight container for a week.

Chicken Fajita Pizza Recipe

INGREDIENTS

  1. 1pizza dough(the best is the already formed ones)
  2. 1/4cupsour cream
  3. 1/2cupsalsa
  4. 1cup cooked slicedchickens
  5. 1packetfajita seasoning mix
  6. 1/4cupwater
  7. 1/2cup shreddedmonterey jack cheese
  8. 1/2yellow pepper
  9. 1/2red pepper
  10. 1/2onion

DIRECTIONS

  1. In a med.
  2. saucepan cook together chicken and mixture of fajita mix and water, set aside.
  3. Combine sour cream and salsa, spread all over pizza dough.
  4. (leaving 1 in. crust) Top w/ chicken.
  5. Cook peppers and onion over med.
  6. heat w/cooking spray until soft.
  7. Top pizza w/peppers.
  8. Sprinkle cheese all over the top.
  9. Bake@ 350 degrees F for 12 min.
  10. ,or what the pizza dough says.
  11. ENJOY!
