INGREDIENTS
- 1/2cupsugar
- 1/2cupbutter
- 1egg, beaten
- 1 1/2cupsflour(divided)
- 1teaspoonbaking soda
- 1/2teaspoonsalt
- 1tablespoonlemon juice
- 1teaspoonlemon rind, grated
- 1/4cupsugar(about 1/4 cup additional for dipping dough)
DIRECTIONS
- Cream together butter and sugar until very light.
- Add the beaten egg.
- Add the lemon rind.
- Sift together 1 cup of the flour, the baking soda, and salt, and stir into the mixture.
- Stir in the lemon juice.
- Now add the remaining 1/2 cup of flour a little at a time beating between additions.
- Note: if the dough looks like it will be to dry it is not necessary to add the entire 1/2 cup, thats why you are not adding it in all at once.
- You need to end up with a dough you can roll into balls with the palms of your hands.
- If it’s too dry it will crumble instead.
- Put 1/4 cup sugar in a bowl.
- Dip fingers into the sugar, pinch off a ball of dough and roll it to the size of a walnut and then dip the ball in sugar.
- Arrange balls on greased baking sheet three inches apart.
- You can leave the balls as is to bake and they will spread on their own.
- However to make traditional 4 O’Clocks, lightly press an oiled cookie stamp in a flower pattern into each ball.
- Bake at 375ºF for 12 to 15 minutes.

INGREDIENTS
- 2-3cups freshrose petals, and leaves gently washed
- coarse salt, such as kosher or rock salt, as required
DIRECTIONS
- Pat dry the rose petals and leaves between a layer of cotton towels or paper towels.

- Over each layer, sprinkle a thin covering of salt.
- Repeat until the crock or jar is full.

- The salt extracts the moisture from the petals and leaves, which should collect in the bottom of your jar.
- Strain the liquid through a coffee filter or several layers of cheesecloth.
- This is the wonderful scented attar of roses for you.
- To make fresh rose water, add a drop or two of this oil to 1 cup of distilled water.

INGREDIENTS
- 1 1/4cupsbread flouror unbleached flour, plus
- 2tablespoonsbread flouror unbleached flour, divided
- 2tablespoonswhole grain cornmeal
- 2tablespoonswheat bran
- 2tablespoonsquick-cooking oats
- 1 1/2teaspoonsfast rising yeast
- 1/4teaspoonsalt
- 1/2cupwateror skim milk, plus
- 2tablespoonswateror skim milk, divided
- 1teaspoonhoney
DIRECTIONS
- Place 3/4 C of the flour and all of the cornmeal, wheat bran, oats, yeast, and salt in a large bowl, and stir to mix well.
- Place the water or milk and the honey in a small saucepan, and heat until very warm (125 F to 130 F.) Add the water mixture to the flour mixture and stir for 1 minute.
- Stir in enough of the remaining flour, 2 Tablespoons at a time, to form a soft dough.
- Sprinkle 2 Tablespoons of the remaining flour over a flat surface and turn the dough onto the surface.
- Knead the dough for 5 minutes, gradually adding just enough of the remaining flour to form a smooth, satiny ball.
- (Be careful not to make the dough too stiff, or it will be hard to roll out.) Coat a large bowl with nonstick cooking spray and place the ball of dough in the bowl.
- Cover the bowl with a clean kitchen towel and let rise in a warm place for about 35 minutes, or until doubled in size.
- When the dough has risen, punch it down, shape it into a ball, and turn it onto a floured surface.
- The dough is now ready for shaping, topping, and baking.
- To make pizza dough in bread machine: Place all of the dough ingredients except for 2 Tablespoons of the bread flour in the machine’s bread pan.
- (Do not heat the water or milk.) Turn the machine on to the”rise”,”dough”, or”manual” setting so that the machine will mix, knead, and let the dough rise once.
- Check the dough about 5 minutes after the machine has started.
- If the dough seems too sticky, add more of the remaining flour, a Tablespoon at a time.
- When the dough is ready, remove it from the machine and proceed to shape, top, and bake it as directed in the recipe.
