INGREDIENTS
- 4piecesbacon
- 1largeyellow onion, finely chopped
- 2stalkscelery, finely chopped
- 1largebell pepper, finely chopped
- 2clovesgarlic, finely chopped
- 2tablespoonssalt
- 1tablespoonpepper
- 1tablespoonthyme
- 1tablespoon of louisianacajun seasoning
- 1/2teaspoonwhite pepper
- 2teaspoonsTabasco jalapeno sauce
- 1tablespoongarlic salt
- 2teaspoonscornstarch
- 64ouncesfrozen okra(thawed)
- 1lbsirloin steaks, finely sliced into chunks
- 1sausage, quartered
- 1ham steak, sliced into cubes
- 20ouncestomato sauce
- 2canschicken broth(about 24 ounces total)
- 1-2lb of uncookedshrimp, peeled and deveined
- 1lbcrabmeat (optional)
- 2cupsrice (optional)
DIRECTIONS
- In a large Dutch oven pot, fry the bacon until crispy.
- Remove bacon and set aside.
- In the bacon grease, fry down and onion, celery, Bell-pepper, and garlic.
- Add salt, pepper, thyme, Cajun seasoning, white pepper, Tabasco, and garlic salt.
- Cook until reduced.
- About 15 minutes.
- Meanwhile, go through all of your thawed frozen okra and remove the hard okra tops.
- Add your cornstarch to your onion mixture and stir to remove any lumps.
- Stir until nice and thick.
- Add your okra to the pot and simmer on low heat until all the slime is gone.
- (1 ½-2 hours).
- Stir occasionally to prevent burning.
- Fry your sausage in a separate skillet and drain.
- Take a hand mixer and mix the okra mixture until all the okra is broken up into small pieces.
- Add sirloin steak, ham, sausage, tomato sauce, and chicken broth.
- Stir well and let simmer on low heat for another hour.
- Be very careful not to burn.
- Add shrimp and crab meat (cook for 30 more minutes until fishy smell is gone and shrimp is thoroughly cooked) Serve over rice (or alone if you can’t eat rice).

INGREDIENTS
- 1 1/2cupsflour
- 1/2cupwhole wheat flour
- 1/2cupwhite sugar
- 1/2cupbrown sugar
- 2teaspoonsbaking soda
- 2teaspoonscinnamon
- 1/2teaspooncloves
- 2cups gratedcarrotsor zucchini
- 1/2cupraisins
- 1/2cup choppedwalnuts
- 1/2cupunsweetened coconut
- 1apple, peeled and grated
- 3eggs, beaten
- 1cupapplesauce
- 2teaspoonsvanilla
DIRECTIONS
- Mix the first 7 ingredients (flours, sugars, baking soda, and spices).
- Stir in the rest of the ingredients.
- (You can substitute vegetable oil for the applesauce but then it’s not low fat anymore!) Fill muffin cups 2/3 full of batter.
- Bake for 20 minutes at 350 degrees F.

INGREDIENTS
- 1cansweetened condensed milk
- 8ouncescream cheese(softened at room temp)
- 1jarmarshmallow cream
- 16ouncesnon-dairy whipped topping
DIRECTIONS
- Beat cream cheese and sweetened condensed milk together until all lumps of cream cheese are blended.
- Mix in marshmallow cream on low until well blended.
- Stir in whipped topping with spoon.
- DO NOT USE MIXER.
- Refrigerate and serve with fruit.

INGREDIENTS
- 1 2/3cups finely crushedtortilla chips
- 1/4cupbutter or margarine, melted
- 3 (8 ounce)packagescream cheese, softened
- 4largeeggs
- 1/2cupmayonnaise(not Miracle Whip)
- 1 (1 1/4 ounce)packagetaco seasoning mix
- 2tablespoonsall-purpose flour
- 1 1/2cups drained and finely chopped canned premiumwhite chicken meat
- 1 1/2cups shreddedcolby-monterey jack cheese(6 oz)
- 1 (8 ounce)cartonsour cream

TOPPINGS
- sliced ripe olives
- cookedwhole kernel corn
- choppedgreen onions
- choppedfresh tomatoes
- picante sauceor salsa
DIRECTIONS
- Combine tortilla chips and butter; stir well.
- Firmly press into bottom of 10” spring form pan; set aside.
- Beat cream cheese until creamy; add eggs one at a time beating well after each addition.
- Add mayonnaise, taco seasoning and flour; beat at low speed until smooth.
- Stir in chicken and cheese.
- Pour batter into prepared pan.
- Bake at 325 for 55 minutes.
- Spread sour cream on top of cheesecake and bake 10 additional minutes.
- Let cool to room temperature in pan on wire rack.
- Cover and chill at least 8 hours.
- To serve carefully remove sides of pan.
- Arrange toppings on cheesecake.
- Serve with picante sauce.

INGREDIENTS
- 1 1/2cupscooked chickenor cooked turkey
- 1cupbreadcrumbs
- 1cancream of mushroom soup
- 2tablespoonsbutter
- 2tablespoons mincedonions
- 2tablespoonscelery, diced
- broth
- mashed potatoes (optional)
DIRECTIONS
- Melt butter in a skillet.
- Add onion, celery and bread crumbs.
- Cook until golden brown.
- Stir in chicken, salt and pepper to taste.
- Add a little broth and the can of mushroom soup.
- Serve over buns.
- Or make a chicken sandwich with 2 slices of bread, top with mashed potatoes and then the chicken mixture.
