INGREDIENTS
- 1lbground beef
- 1cup choppedonions
- 1teaspoonsalt
- 1teaspoongarlic powder
- 1canRo-Tel tomatoes
- 3cupscooked rice
- 1/2cupsour cream
- 1cup gratedmonterey jack cheese
DIRECTIONS
- Saute ground beef, onion, and seasonings until meat browns and onions are tender; drain.
- Add Ro-Tel tomatoes, rice, and sour cream.
- Put into a buttered casserole dish.
- Sprinkle top with cheese.
- Bake at 350 for 20 minutes.

INGREDIENTS
- 1/2cupbutter, unsalted
- 3/4cupsugar
- 1teaspoonvanilla extract
- 2eggs
- 2cupscream of wheat, uncooked
- 1teaspoonbaking powder
- 1/2teaspoonbaking soda
- 3/4cupplain yogurt(not low fat, use regular or it’ll be too moist)
- blanched splitalmonds(garnish)

- 2cupssugar
- 1 1/2cupswater
- 1tablespoonlemon juice(if using concentrated juice in a bottle, add a little water or it’ll be too strong)
DIRECTIONS
- Cream the butter, sugar and vanilla extract together in a medium bowl until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Sift the cream of wheat with the baking powder and baking soda two times, then fold into the butter mix alternately with the yogurt.
- Grease a 8×12 inch pan and fold the batter into it evenly.
- Arrange the almonds along the top so that each half will be in the center of a piece when it’s cut, you should have about 4 almonds across and 7 almonds down.
- Bake in preheated oven at 350 degrees about 30-35 minutes or until a toothpick comes out clean.
- Meanwhile, make the syrup by dissolving the sugar into the water in a small heavy saucepan over high heat until it begins to boil.
- Add the lemon juice.
- Turn the heat down to med-high, and boil rapidly about 10 minutes, then cool by standing the pan in a larger pan of cold water.
- When the cake is cooled, cut as desired.
- We usually make diamond shapes or squares, and serve by spooning the syrup over the cake.
- If desired, thick whipped cream can be served over top instead, or a bit of honey syrup.

INGREDIENTS
- 1teaspoongarlic powder
- 1tablespoonvinegar
- 1teaspoonsugar
- 2lbsbeef stew meat
- 1packageonion soup mix
- 1cancream of mushroom soup
DIRECTIONS
- Cut stew meat in small pieces.
- Combine all other ingredients in casserole dish; add meat.
- Bake at 300 for 2 1/2 hours.

INGREDIENTS
- 2canstomato sauce
- 1smallonion, chopped
- 1green bell pepper, chopped
- 1/4cupwater
- 1canmushrooms, drained
- 1teaspoonWorcestershire sauce
- 2tablespoonschili powder
- 2canstuna, drained
DIRECTIONS
- Mix all ingredients, except tuna, in saucepan and simmer for 5 minutes.
- Add tuna and mix until heated through.
- Serve with crackers or over rice.

INGREDIENTS
- 4chicken breasts
- 1packetspinach dip mix(I use Knorr)
- 2/3cupsour cream
- 1/4cupwhite wine
- 1cancream of celery soup
- 1 (6 ounce)can slicedblack olives
- 1jarmarinated artichoke hearts
- 1tablespoon choppedgarlic
- gratedparmesan cheese
DIRECTIONS
- Put chicken in oiled baking dish.
- Sprinkle garlic over breasts and pat in.
- Pour artichokes over chicken with drained chopped olives.
- Mix soup, dip mix.
- sour cream& wine together and pour over chicken.
- Spread to edges.
- Top with cheese.
- Bake@ 375 for 40-60 minutes.
