Rice Caliente Recipe

INGREDIENTS

  1. 1lbground beef
  2. 1cup choppedonions
  3. 1teaspoonsalt
  4. 1teaspoongarlic powder
  5. 1canRo-Tel tomatoes
  6. 3cupscooked rice
  7. 1/2cupsour cream
  8. 1cup gratedmonterey jack cheese

DIRECTIONS

  1. Saute ground beef, onion, and seasonings until meat browns and onions are tender; drain.
  2. Add Ro-Tel tomatoes, rice, and sour cream.
  3. Put into a buttered casserole dish.
  4. Sprinkle top with cheese.
  5. Bake at 350 for 20 minutes.

cream of wheat cake Recipe

INGREDIENTS

  1. 1/2cupbutter, unsalted
  2. 3/4cupsugar
  3. 1teaspoonvanilla extract
  4. 2eggs
  5. 2cupscream of wheat, uncooked
  6. 1teaspoonbaking powder
  7. 1/2teaspoonbaking soda
  8. 3/4cupplain yogurt(not low fat, use regular or it’ll be too moist)
  9. blanched splitalmonds(garnish)
  10. syrup

  11. 2cupssugar
  12. 1 1/2cupswater
  13. 1tablespoonlemon juice(if using concentrated juice in a bottle, add a little water or it’ll be too strong)

DIRECTIONS

  1. Cream the butter, sugar and vanilla extract together in a medium bowl until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift the cream of wheat with the baking powder and baking soda two times, then fold into the butter mix alternately with the yogurt.
  4. Grease a 8×12 inch pan and fold the batter into it evenly.
  5. Arrange the almonds along the top so that each half will be in the center of a piece when it’s cut, you should have about 4 almonds across and 7 almonds down.
  6. Bake in preheated oven at 350 degrees about 30-35 minutes or until a toothpick comes out clean.
  7. Meanwhile, make the syrup by dissolving the sugar into the water in a small heavy saucepan over high heat until it begins to boil.
  8. Add the lemon juice.
  9. Turn the heat down to med-high, and boil rapidly about 10 minutes, then cool by standing the pan in a larger pan of cold water.
  10. When the cake is cooled, cut as desired.
  11. We usually make diamond shapes or squares, and serve by spooning the syrup over the cake.
  12. If desired, thick whipped cream can be served over top instead, or a bit of honey syrup.

Stew Delight Recipe

INGREDIENTS

  1. 1teaspoongarlic powder
  2. 1tablespoonvinegar
  3. 1teaspoonsugar
  4. 2lbsbeef stew meat
  5. 1packageonion soup mix
  6. 1cancream of mushroom soup

DIRECTIONS

  1. Cut stew meat in small pieces.
  2. Combine all other ingredients in casserole dish; add meat.
  3. Bake at 300 for 2 1/2 hours.

Tuna Chili Recipe

INGREDIENTS

  1. 2canstomato sauce
  2. 1smallonion, chopped
  3. 1green bell pepper, chopped
  4. 1/4cupwater
  5. 1canmushrooms, drained
  6. 1teaspoonWorcestershire sauce
  7. 2tablespoonschili powder
  8. 2canstuna, drained

DIRECTIONS

  1. Mix all ingredients, except tuna, in saucepan and simmer for 5 minutes.
  2. Add tuna and mix until heated through.
  3. Serve with crackers or over rice.

Chicken Breasts with Artichokes & Olives Recipe

INGREDIENTS

  1. 4chicken breasts
  2. 1packetspinach dip mix(I use Knorr)
  3. 2/3cupsour cream
  4. 1/4cupwhite wine
  5. 1cancream of celery soup
  6. 1 (6 ounce)can slicedblack olives
  7. 1jarmarinated artichoke hearts
  8. 1tablespoon choppedgarlic
  9. gratedparmesan cheese

DIRECTIONS

  1. Put chicken in oiled baking dish.
  2. Sprinkle garlic over breasts and pat in.
  3. Pour artichokes over chicken with drained chopped olives.
  4. Mix soup, dip mix.
  5. sour cream& wine together and pour over chicken.
  6. Spread to edges.
  7. Top with cheese.
  8. Bake@ 375 for 40-60 minutes.
