Sunny Cream of Cauliflower Soup Recipe

INGREDIENTS

  1. 2tablespoonsolive oil
  2. 2clovesgarlic, diced
  3. 1onion, chopped
  4. 1/4teaspoonlight brown sugar
  5. 1pinchsalt and pepper
  6. 7cupscauliflower, chopped
  7. 3cupschicken stockor vegetable stock
  8. 1/3cupheavy cream
  9. 2/3cupmilk
  10. 1tablespoonturmeric
  11. 1teaspooncurry powder
  12. 1/3 freshground nutmeg
  13. hot pepper sauce
  14. salt & pepper

DIRECTIONS

  1. Heat oil in a large pot.
  2. Saute onions, garlic, brown sugar, salt and pepper till translucent.
  3. Add cauliflower and stock cook till fork tender.
  4. Puree in vita mix or blender Return to pot with rest of ingredients.
  5. Season with salt and pepper if needed.

Garlic Sundried Tomato Bread Recipe

INGREDIENTS

  1. 1loafItalian bread, cut into 1 inch slices toasted(about 12 slices)
  2. 3tablespoonsolive oil
  3. 3tablespoonsbutter
  4. 3clovesgarlic, diced finely
  5. 1shallot, diced finely
  6. 4sun-dried tomatoes packed in oil, diced finely
  7. 1teaspoonitalian seasoning
  8. 1-2tablespoon gratedparmesan cheese

DIRECTIONS

  1. On a cookie sheet lay bread out in one layer.
  2. Melt butter with olive oil in microwave oven or stove top.
  3. Add rest of ingredients except for cheese.
  4. Spread evenly on bread slices and top with a srinkle of cheese.
  5. Broil till bubbly and cheese is slightly browned.

Corn & Potato Chowder Recipe

INGREDIENTS

  1. 1onion, chopped
  2. 1clovegarlic, crushed
  3. 1mediumpotato, chopped
  4. 2stalkscelery, sliced
  5. 1smallgreen bell pepper, seeded,halved & sliced
  6. 2tablespoonssunflower oil
  7. 2tablespoonsbutter
  8. 2 1/2cupsstockor water
  9. salt & freshly ground black pepper
  10. 1 1/4cupsmilk
  11. 1 (7 ounce)canlima beans
  12. 1 (11 ounce)cancorn kernels
  13. 1pinchdried sage

DIRECTIONS

  1. Put the onion, garlic, potato, celery and green pepper into a large saucepan with the oil and butter.
  2. Heat the ingredients untill sizzling, then turn the heat down to low.
  3. Cover and sweat the vegetables gently for 10 minutes, shaking the pan occaionally.
  4. Pour in the stock or water, season to taste and bring to the boil.
  5. Turn down the heat, cover and simmer gently for about 15 minutes.
  6. Add the milk, beans and corn-including their liquors- and the sage.
  7. Simmer again for 5 minutes.
  8. check the seasoning and serve hot.

French Beef Slice Recipe

INGREDIENTS

  1. 1loafFrench bread
  2. 1lbground beef
  3. 1mediumonion, chopped
  4. 1cantomato soup
  5. 1cancheddar cheese soup

DIRECTIONS

  1. Cut bread in half lengthwise.
  2. Scoop out inside and break into bite size pieces.
  3. Combine ground beef& onion in a large skillet.
  4. Cook until browned, drain off grease.
  5. Stir in soup& bread pieces.
  6. Spoon meat mixture into bottom half of bread shell.
  7. Cover with top half of bread shell.
  8. Wrap loaf in foil.
  9. Bake at 350 for 30 minutes.
  10. Cut into slices& serve.

Chocolate Clouds Recipe

INGREDIENTS

  1. 3egg whites
  2. 1/8teaspooncream of tartar
  3. 3/4cupwhite sugar
  4. 1teaspoonvanilla
  5. 2tablespoonscocoa powder
  6. 2cupschocolate chips

DIRECTIONS

  1. Heat oven to 300 F.
  2. Cover cookie sheet with parchment paper or foil.
  3. Beat egg whites and cream of tartar in large bowl at high speed, til stiff, sugar is dissolved and mix.
  4. is glosssy.
  5. Sift cocoa into egg mix.
  6. gently fold.
  7. Fold in chocolate chips.
  8. Drop mix.
  9. by heaping T.
  10. onto cookie sheet.
  11. Bake 35- 45 min.
  12. Cool slightly, peel paper from cookies.
  13. Cool completely.
