INGREDIENTS
- 2tablespoonsall-purpose flour
- 1/4teaspoonpepper
- 1pinchsalt
- 1lbcalf liver, sliced thin
- 3slicesbacon
- 1onion, sliced into rings
- 1/2cupraisins
- 2tablespoonsbrandy
- 1tablespooncider vinegar
DIRECTIONS
- On sheet of wax paper, combine flour, pepper and salt.
- Dredge liver in flour mixture.
- In large non-stick skillet over medium heat, cook bacon until crisp.
- Remove to paper towel to drain; crumble when cool.
- To drippings in pan, add liver and saute, in batches if necessary, until golden brown– about 1 1/2 minutes per side.
- Remove to serving platter, keep warm.
- Add onions to skillet, cook until soft, about 3 minutes.
- Stir in raisins, brandy and cider vinegar, cook one minute.
- Add crumbled bacon, pour over liver.
- Serve Hot!

INGREDIENTS
- 1/2lbVelveeta cheese, sliced
- 1cupbutter
- 1teaspoonpure vanilla extract
- 1cup choppednuts, pecans,walnuts
- 2 (16 ounce)boxesconfectioners’ sugar
- 1/2cupcocoa powder
DIRECTIONS
- Spray lightly the bottom of a 9 by 2-inch square pan with a nonstick spray.
- In a saucepan over medium heat, melt the cheese and butter together, stirring constantly until smooth.
- Remove from the heat and add the vanilla and nuts.
- In a large bowl sift together the sugar and cocoa.
- Pour the cheese mixture into the sugar and cocoa mixture and stir until completely mixed.
- The candy will be very stiff.
- Using your hands, remove candy from bowl and press evenly and firmly into pan.
- Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil.
- Place pan in refrigerator until candy is firm.
- To serve candy, cut into squares.
- Enjoy!

INGREDIENTS
- 4mediumsweet red peppers
- 9lasagna noodles
- 4clovesgarlic, minced
- 1tablespoonolive oil
- 1 (28 ounce)cancrushed tomatoes
- 1teaspoondried parsley
- 1teaspoonsugar
- 1teaspoondried basil
- 1/2teaspoonpepper
- 1/4cupbutteror margarine
- 1/3cupall-purpose flour
- 2 1/2cupslow-fat milkor nonfat milk
- 2cups shreddedparmesan cheese
DIRECTIONS
- Cut each peper into quarters remove seeds.
- Place peppers cut side down on a foil lined baking sheet.
- Broil 4 inches from heat for 20-25 minuets or until skin is blistered& blackened.
- Immediately place peppers in a bowl,cover& let stand 15-20 minutes.
- Peel off& discard skin.
- Cut peppers in 1/4 in.
- strips.
- Cook lasagna noodles according to package directions;drain.
- In saucepan cookred peppers& garlic in oil for about 1 minute; add tomatos, parsley, sugar, basil& pepper.
- Simmer uncovered 20 minutes.
- In another sauce pan melt butter.
- Stir in flour until smooth.
- Gradually add milk.
- Bring to a boil; cook& stir for 2 minutes or until thickened.
- Spred 1 cup pepper sauce in a 13×9x2nich baking dish coated with nonstick cooking spray.
- Top with 3 noodles 1 1/2 cups pepper sauce, 1 cup white sauce 1/3 of parmesan cheese.
- Repeat layers ending with cheese.
- Bake uncovered at 350 degrees for 30-35 minutes or until bubbly.
- Or covered for 15-20 minutes then uncover for last 10-15 minuets.
- Let stand about 15 minutes befor cutting.

INGREDIENTS
- 1 1/2cupsall-purpose flour
- 1tablespoonvanilla sugar
- 1/2teaspoonsalt
- 1/2cupcanola oil
- 3tablespoonsmilk
DIRECTIONS
- Preheat oven to 375.
- Put all ingredients into a 9 inch pie pan.
- mix with fork until well blended and pat into the pan.
- Push the pastry up the sides and form a nice edge with your thumb and finger.
- Generously prick the crust with a fork to prevent bubbling during baking.
- Bake 15 to 17 minutes at 375, until nicely browned.

INGREDIENTS
- 2lbsginger, cut into 1 inch pieces
- 1gallonboiling water
- 1 1/2cups freshly squeezedlime juice(about 8 limes)
- 1 1/2cupssuperfine sugar
DIRECTIONS
- Place ginger in a food processor, and process until finely chopped.
- Transfer to a large pot, and add boiling water.
- Allow to stand for 1 hour.
- Drain with a fine sieve lined with a double thickness of damp cheesecloth.
- Discard solids.
- Add lime juice and sugar, and stir to disolve.
