Grilled Prawns Italiano Recipe

INGREDIENTS

  1. 8-12largeprawns
  2. 1green bell pepper, washed, de-seeded and cut into cubes
  3. 1red bell pepper, washed, de-seeded and cut into cubes
  4. 1yellow bell pepper, washed, de-seeded and cut into cubes
  5. 5leavesfresh basil, cleaned, washed and finely chopped
  6. 2tablespoonsolive oil
  7. 1/2tablespoonlemon juice
  8. salt
  9. 1teaspoonblack peppercorns, crushed
  10. 1/2teaspoondried rosemary

DIRECTIONS

  1. Shell and de-vein the prawns, making sure you keep the tail intact.
  2. Wash well and keep aside.
  3. Mix together the olive oil, lemon juice, salt, peppercorns, basil leaves and rosemary to prepare a marinade.
  4. Thread prawns on satay sticks.
  5. Marinate them in the above marinade.
  6. Refrigerate for 30 minutes.
  7. Pre-heat the barbecue.
  8. Arrange the prawns on the hot barbecue and cook till done.
  9. Heat oil in a pan.
  10. Add the bell peppers and saute.
  11. Add the remaining marinade and mix.
  12. Serve the barbecued prawns with sauteed bell peppers.

beef curry Recipe

INGREDIENTS

  1. 1tablespooncurry powder
  2. salt and pepper
  3. 3 1/2lbsbeef stew meat
  4. 2tablespoonscoriander seeds
  5. 1tablespooncumin seeds
  6. 2teaspoonsfenugreek seeds
  7. 3wholecloves
  8. 1cinnamon stick
  9. 2red chilies
  10. 3bay leaves
  11. 2tablespoonssugar
  12. 1/2teaspooncardamom
  13. salt
  14. 1tablespoonolive oil, divided
  15. 3cupsonions, vertically sliced
  16. 3tablespoons minced peeledginger
  17. 1/4cup mincedgarlic
  18. 2tablespoonspaprika
  19. 2cupsplain yogurt

DIRECTIONS

  1. combine beef with curry, salt, pepper, rub well, cover and chill 2 hrs heat corinder seeds and next 6 spices in a hot skillet, cook 1 minute until fragrant.
  2. remove and place spices in a grinder, grind well, add cinammon sugar and salt and set aside in a dutch oven, over high heat, add some olive oil and brown beef in batches, remove to a bowl reduce heat to medium add onions,and ginger, cook until softened add garlic, toasted spice mixture, paprika, stir well add beef, yogurt and remaining ingredients, bring to a boil cover, reduce to simmer and cook 1 1/2 hrs until done.

Mushroom Risotto Recipe

INGREDIENTS

  1. 1cupboiling water
  2. 1/2cupdried porcini mushrooms
  3. 8ounces mixed freshwild mushrooms
  4. 2tablespoonsolive oil
  5. 2tablespoonsbutter
  6. 1teaspoon choppedgarlic
  7. salt & freshly ground black pepper
  8. 2tablespoons choppedparsley
  9. RISOTTO

  10. 5cupschicken stock(approx)
  11. 2tablespoonsolive oil
  12. 2tablespoonsbutter
  13. 1/2cup finely choppedonions
  14. 1 1/2cupsarborio riceor carnarolirice
  15. 1/2cupwhite wine
  16. 1/2cup gratedparmesan cheese
  17. salt & freshly ground black pepper

DIRECTIONS

  1. Pour boiling water over dried mushrooms in a bowl& let sit for 30 minutes.
  2. Drain mushrooms; reserve both mushrooms& liquid separately.
  3. Remove stems from fresh mushrooms& slice.
  4. Heat oil& butter in skillet over medium-high heat; add garlic& fresh mushroom slices.
  5. Saute until mushrooms excude their liquid; saeson with salt& pepper.
  6. Cover& leave in skillet for reheating.
  7. Bring stock to a simmer on the back burner.
  8. Heat oil& 1 tbsp of the butter in a heavy pot over medium heat.
  9. Add onion& saute for 3 minutes or until softened.
  10. Add rice& saute until it is covered with oil.
  11. Pour in wine& simmer steadily until it has been absorbed by the rice.
  12. Pour in mushroom soaking liquid& dried mushrooms; stir and cook until most of the liquid has been absorbed by the rice.
  13. Add 1 cup of stock; cook& stir until most is absorbed.
  14. Continue to add stock in 1 cup increments, stirring most of the time, until the rice is creamy with a slight bite in the center, about 20 minutes.
  15. Reheat mushrooms in the skillet& stir into rice.
  16. Remove from heat, stir in remaining 1 tbsp butter& Parmesan cheese.
  17. Season with salt& pepper and serve immediately.

Basic Castile Soap Recipe

INGREDIENTS

  1. 2cupsolive oil
  2. 1/2cuplye, granules
  3. 2cups coldwater

DIRECTIONS

  1. Heat the olive oil on low flame to approximately 80-85 F.
  2. Dissolve the lye in the water.
  3. Cool to about 70-75 F.
  4. Pour the lye solution in a thin, steady stream, into the oil with slow, even stirring.
  5. You shouldn’t be heating the mixture at this time.
  6. Continue stirring until a thick, honeylike texture is obtained.
  7. This will take 10-20 minutes.
  8. Note: If the soap mixture does not become thick within 30 minutes, and there is a greasy layer on top, it may be too warm.
  9. If this happens, set the container in cool water and keep stirring from the sides and the bottom.
  10. Contrastingly, if the mixture is lumpy, it may be too cold.
  11. If this happens, set it in a pan of warm water and stir until the lumps disappear.
  12. Pour the thickened soap mixture into your molds.
  13. Cover.
  14. Keep warm for a minium of 24 hours.
  15. This allows the saponification process to take place slowly and will prevent the mixture from separating.
  16. You can wrap your soap molds in an old blanket.
  17. When the soap is set, remove it from the molds and cut it into bars.
  18. Allow the soap to age for atleast 2 weeks in a dry place.
  19. Note: If the soap is crumbly or has streaks of grease, it may be reclaimed as follows: Cut the soap into fine pieces.
  20. Add 2 cups of water and dissolve over low flame.
  21. Stir occasionally.
  22. When the lumps have disappeared, increase the heat and boil until the soap appears thick.
  23. Pour soap in molds and continue as explained above.

pistachio banana bread Recipe

INGREDIENTS

  1. 2cupsflour
  2. 3/4teaspoonbaking powder
  3. 1/2teaspoonsalt
  4. 1/2cupsugar
  5. 1/2cup packedbrown sugar
  6. 1/4cupbutter, softened
  7. 2largeeggs
  8. 1 1/2cups mashedbananas(about 3)
  9. 1/3cupsour cream
  10. 1/2teaspooncardamom
  11. 1/2cup choppedpistachios
  12. cooking spray

DIRECTIONS

  1. preheat oven to 350 spray a 9×5 loaf pan with cooking spray combine flour, baking powder and salt in a bowl, whisk well place sugars and butter in a large bowl, mix well.
  2. add eggs one at a time, beat well after each addition add bananas, sour cream, cardamom, beat well add flour mixture, beat well until a moist batter is formed.
  3. stir in pistachios pour batter into loaf pan bake 1 hour until a toothpick inserted into the center comes out clean cool on a rack for 10 minutes, remove from pan, cool on wire rack completely.
