INGREDIENTS
- 8-12largeprawns
- 1green bell pepper, washed, de-seeded and cut into cubes
- 1red bell pepper, washed, de-seeded and cut into cubes
- 1yellow bell pepper, washed, de-seeded and cut into cubes
- 5leavesfresh basil, cleaned, washed and finely chopped
- 2tablespoonsolive oil
- 1/2tablespoonlemon juice
- salt
- 1teaspoonblack peppercorns, crushed
- 1/2teaspoondried rosemary
DIRECTIONS
- Shell and de-vein the prawns, making sure you keep the tail intact.
- Wash well and keep aside.
- Mix together the olive oil, lemon juice, salt, peppercorns, basil leaves and rosemary to prepare a marinade.
- Thread prawns on satay sticks.
- Marinate them in the above marinade.
- Refrigerate for 30 minutes.
- Pre-heat the barbecue.
- Arrange the prawns on the hot barbecue and cook till done.
- Heat oil in a pan.
- Add the bell peppers and saute.
- Add the remaining marinade and mix.
- Serve the barbecued prawns with sauteed bell peppers.

INGREDIENTS
- 1tablespooncurry powder

- 3 1/2lbsbeef stew meat
- 2tablespoonscoriander seeds
- 1tablespooncumin seeds

- 1cinnamon stick
- 2red chilies
- 3bay leaves
- 2tablespoonssugar
- 1/2teaspooncardamom
- salt
- 1tablespoonolive oil, divided
- 3cupsonions, vertically sliced
- 3tablespoons minced peeledginger
- 1/4cup mincedgarlic
- 2tablespoonspaprika
- 2cupsplain yogurt
DIRECTIONS
- combine beef with curry, salt, pepper, rub well, cover and chill 2 hrs heat corinder seeds and next 6 spices in a hot skillet, cook 1 minute until fragrant.
- remove and place spices in a grinder, grind well, add cinammon sugar and salt and set aside in a dutch oven, over high heat, add some olive oil and brown beef in batches, remove to a bowl reduce heat to medium add onions,and ginger, cook until softened add garlic, toasted spice mixture, paprika, stir well add beef, yogurt and remaining ingredients, bring to a boil cover, reduce to simmer and cook 1 1/2 hrs until done.

INGREDIENTS
- 1cupboiling water
- 1/2cupdried porcini mushrooms
- 8ounces mixed freshwild mushrooms
- 2tablespoonsolive oil
- 2tablespoonsbutter
- 1teaspoon choppedgarlic
- salt & freshly ground black pepper
- 2tablespoons choppedparsley

RISOTTO
- 5cupschicken stock(approx)
- 2tablespoonsolive oil
- 2tablespoonsbutter
- 1/2cup finely choppedonions
- 1 1/2cupsarborio riceor carnarolirice
- 1/2cupwhite wine
- 1/2cup gratedparmesan cheese
- salt & freshly ground black pepper
DIRECTIONS
- Pour boiling water over dried mushrooms in a bowl& let sit for 30 minutes.
- Drain mushrooms; reserve both mushrooms& liquid separately.
- Remove stems from fresh mushrooms& slice.
- Heat oil& butter in skillet over medium-high heat; add garlic& fresh mushroom slices.
- Saute until mushrooms excude their liquid; saeson with salt& pepper.
- Cover& leave in skillet for reheating.
- Bring stock to a simmer on the back burner.
- Heat oil& 1 tbsp of the butter in a heavy pot over medium heat.
- Add onion& saute for 3 minutes or until softened.
- Add rice& saute until it is covered with oil.
- Pour in wine& simmer steadily until it has been absorbed by the rice.
- Pour in mushroom soaking liquid& dried mushrooms; stir and cook until most of the liquid has been absorbed by the rice.
- Add 1 cup of stock; cook& stir until most is absorbed.
- Continue to add stock in 1 cup increments, stirring most of the time, until the rice is creamy with a slight bite in the center, about 20 minutes.
- Reheat mushrooms in the skillet& stir into rice.
- Remove from heat, stir in remaining 1 tbsp butter& Parmesan cheese.
- Season with salt& pepper and serve immediately.

INGREDIENTS
- 2cupsolive oil
- 1/2cuplye, granules
- 2cups coldwater
DIRECTIONS
- Heat the olive oil on low flame to approximately 80-85 F.
- Dissolve the lye in the water.
- Cool to about 70-75 F.
- Pour the lye solution in a thin, steady stream, into the oil with slow, even stirring.
- You shouldn’t be heating the mixture at this time.
- Continue stirring until a thick, honeylike texture is obtained.
- This will take 10-20 minutes.
- Note: If the soap mixture does not become thick within 30 minutes, and there is a greasy layer on top, it may be too warm.
- If this happens, set the container in cool water and keep stirring from the sides and the bottom.
- Contrastingly, if the mixture is lumpy, it may be too cold.
- If this happens, set it in a pan of warm water and stir until the lumps disappear.
- Pour the thickened soap mixture into your molds.
- Cover.
- Keep warm for a minium of 24 hours.
- This allows the saponification process to take place slowly and will prevent the mixture from separating.
- You can wrap your soap molds in an old blanket.
- When the soap is set, remove it from the molds and cut it into bars.
- Allow the soap to age for atleast 2 weeks in a dry place.
- Note: If the soap is crumbly or has streaks of grease, it may be reclaimed as follows: Cut the soap into fine pieces.
- Add 2 cups of water and dissolve over low flame.
- Stir occasionally.
- When the lumps have disappeared, increase the heat and boil until the soap appears thick.
- Pour soap in molds and continue as explained above.

INGREDIENTS
- 2cupsflour
- 3/4teaspoonbaking powder
- 1/2teaspoonsalt
- 1/2cupsugar
- 1/2cup packedbrown sugar
- 1/4cupbutter, softened
- 2largeeggs
- 1 1/2cups mashedbananas(about 3)
- 1/3cupsour cream
- 1/2teaspooncardamom
- 1/2cup choppedpistachios
- cooking spray
DIRECTIONS
- preheat oven to 350 spray a 9×5 loaf pan with cooking spray combine flour, baking powder and salt in a bowl, whisk well place sugars and butter in a large bowl, mix well.
- add eggs one at a time, beat well after each addition add bananas, sour cream, cardamom, beat well add flour mixture, beat well until a moist batter is formed.
- stir in pistachios pour batter into loaf pan bake 1 hour until a toothpick inserted into the center comes out clean cool on a rack for 10 minutes, remove from pan, cool on wire rack completely.
