Green Pea-Goober Salad Recipe

INGREDIENTS

  1. 1packagefrozen green peas
  2. 1cupdry roasted salted peanuts
  3. 3tablespoonssour cream

DIRECTIONS

  1. Thaw peas; do not cook.
  2. Break peanuts in half at seam and add to peas.
  3. Add sour cream and stir well.
  4. Refrigerate 2 hours before serving.

INGREDIENTS

  3. 3-4slices of lightbread
  4. 1bagonion rings
  5. ketchup

DIRECTIONS

  1. Preheat oven to 350 Mix salt, meat, egg,tore up bread,together.
  2. (I like to Get my hands in there and squish it all together!) Fill each muffin cup of muffin pan almost to the top.
  3. Top with a onion ring and ketchup in the middle of the ring.
  4. Place in oven untill thoughly cooked about 20-30 minutes.

Lobster and Corn Bisque Recipe

INGREDIENTS

  1. 1tablespoonblack peppercorns
  2. 1bay leaf
  3. 1 1/2-2lbslobsters
  4. 2carrots, cut into 2 inch chunks
  5. 2celery ribs, cut into 2 inch chunks
  6. 1fennel bulb, cut into quarters
  7. 1onion, cut into large chunks
  8. 4earscorn, kernels removed,cobs reserved
  9. 1/2cuptomato paste
  10. 1/2cuppastisor Pernodor anise-flavored liqueur
  11. 1/4cupheavy cream
  12. salt & freshly ground black pepper

DIRECTIONS

  1. Preheat oven to 400°.
  2. In a large saucepan, bring 4 quarts water, peppercorns and bay leaf to a boil; add lobster.
  3. Cook 7 minutes.
  4. Strain broth and reserve.
  5. Allow lobster to cool to touch, then remove meat from shells.
  6. Cut lobster meat into 1/2- to 1-inch chunks and refrigerate.
  7. Place shells on a baking sheet.
  8. Add carrots, celery, half the fennel, onion and reserved cobs.
  9. Roast 1 hour, turning shells, vegetables and cobs so they don’t burn.
  10. Ten minutes before removing, spread with tomato paste.
  11. Remove pan from oven and pour liquor onto vegetables, shells and cobs.
  12. Transfer to saucepan of reserved broth.
  13. Bring to a boil; simmer until reduced by half (8 cups), about 30 minutes.
  14. Strain; discard solids.
  15. Thinly slice remaining fennel; add to soup with corn and simmer 10 minutes.
  16. Add cream and reserved lobster meat; cook until lobster is heated through, about 5 minutes.
  17. Season generously with salt and pepper.

Brown Sugar Oatmeal Cookies Recipe

INGREDIENTS

  1. 1 3/4cups firmly packedbrown sugar
  2. 1/2cupshortening
  3. 1/2cupmargarine or butter, softened
  4. 1teaspoonvanilla
  5. 2eggs
  6. 1cupall-purpose flour
  7. 1cupwhole wheat flour
  8. 1teaspoonbaking powder
  9. 3cupsold fashioned oats

DIRECTIONS

  1. In a big mixing bowl, add the brown sugar, shortening, and margarine; beat until fluffy.
  2. Add in the vanilla and eggs; mix until well blended.
  3. Add in the flours, and baking powder; stir to mix.
  4. Add in the oats; stir well to mix.
  5. Drop heaping tablespoonfuls of dough 2-inches apart onto an ungreased cookie sheet.
  6. Bake at 350° for 10-14 minutes or until a light golden brown.
  7. Cool for 1 minute, then transfer to cooling rack.

Impossibly Easy Lasagna Pie Recipe

INGREDIENTS

  1. 2lbsground beef
  2. 1mediumonion, chopped
  3. 2clovesgarlic, minced
  4. 1cupsmall curd cottage cheese
  5. 1/2cup gratedparmesan cheese
  6. 3cups shreddedmozzarella cheese, divided
  7. 1 1/2teaspoonsitalian seasoning
  8. 1 (15 ounce)cantomato paste
  9. 1cupBisquick baking mix
  10. 2cupsmilk
  11. 1/2teaspoonpepper
  12. 3eggs

DIRECTIONS

  1. In a large skillet, cook the ground beef, onion, and garlic until meat is browned; drain.
  2. In a 13×9 inch baking dish sprayed with non-stick cooking spray, layer the cottage cheese and parmesan cheese.
  3. To the beef mixture, add 1 1/2 cups mozzarella cheese, Italian seasoning, and tomato paste; stir to combine.
  4. Spoon evenly over the cheese.
  5. In a mixing bowl, add the Bisquick, milk, pepper, and eggs; stir to blend.
  6. Pour over the beef mixture.
  7. Baked at 400°, uncovered, for 40-42 minutes or until knife comes out clean.
  8. Sprinkle with remaining 1 1/2 cups mozzarella cheese.
  9. Bake 1-2 minutes longer or until cheese melts.
  10. Let stand 5 minutes before serving.
