4 O’clocks Recipe

April 30th, 2007 by alice  Tags:

INGREDIENTS

  1. 1/2cupsugar
  2. 1/2cupbutter
  3. 1egg, beaten
  4. 1 1/2cupsflour(divided)
  5. 1teaspoonbaking soda
  6. 1/2teaspoonsalt
  7. 1tablespoonlemon juice
  8. 1teaspoonlemon rind, grated
  9. 1/4cupsugar(about 1/4 cup additional for dipping dough)

DIRECTIONS

  1. Cream together butter and sugar until very light.
  2. Add the beaten egg.
  3. Add the lemon rind.
  4. Sift together 1 cup of the flour, the baking soda, and salt, and stir into the mixture.
  5. Stir in the lemon juice.
  6. Now add the remaining 1/2 cup of flour a little at a time beating between additions.
  7. Note: if the dough looks like it will be to dry it is not necessary to add the entire 1/2 cup, thats why you are not adding it in all at once.
  8. You need to end up with a dough you can roll into balls with the palms of your hands.
  9. If it’s too dry it will crumble instead.
  10. Put 1/4 cup sugar in a bowl.
  11. Dip fingers into the sugar, pinch off a ball of dough and roll it to the size of a walnut and then dip the ball in sugar.
  12. Arrange balls on greased baking sheet three inches apart.
  13. You can leave the balls as is to bake and they will spread on their own.
  14. However to make traditional 4 O’Clocks, lightly press an oiled cookie stamp in a flower pattern into each ball.
  15. Bake at 375ºF for 12 to 15 minutes.

INGREDIENTS

  1. 2-3cups freshrose petals, and leaves gently washed
  2. coarse salt, such as kosher or rock salt, as required

DIRECTIONS

  1. Pat dry the rose petals and leaves between a layer of cotton towels or paper towels.
  2. Place a layer of petals inside a clean ceramic crock or dark-coloured glass jar.
  3. Over each layer, sprinkle a thin covering of salt.
  4. Repeat until the crock or jar is full.
  5. Cover the container tightly.
  6. Place in a cool and dark place for 3-6 weeks.
  7. The salt extracts the moisture from the petals and leaves, which should collect in the bottom of your jar.
  8. Strain the liquid through a coffee filter or several layers of cheesecloth.
  9. This is the wonderful scented attar of roses for you.
  10. To make fresh rose water, add a drop or two of this oil to 1 cup of distilled water.

Multigrain Pizza Crust Recipe Recipe

INGREDIENTS

  1. 1 1/4cupsbread flouror unbleached flour, plus
  2. 2tablespoonsbread flouror unbleached flour, divided
  3. 2tablespoonswhole grain cornmeal
  4. 2tablespoonswheat bran
  5. 2tablespoonsquick-cooking oats
  6. 1 1/2teaspoonsfast rising yeast
  7. 1/4teaspoonsalt
  8. 1/2cupwateror skim milk, plus
  9. 2tablespoonswateror skim milk, divided
  10. 1teaspoonhoney

DIRECTIONS

  1. Place 3/4 C of the flour and all of the cornmeal, wheat bran, oats, yeast, and salt in a large bowl, and stir to mix well.
  2. Place the water or milk and the honey in a small saucepan, and heat until very warm (125 F to 130 F.) Add the water mixture to the flour mixture and stir for 1 minute.
  3. Stir in enough of the remaining flour, 2 Tablespoons at a time, to form a soft dough.
  4. Sprinkle 2 Tablespoons of the remaining flour over a flat surface and turn the dough onto the surface.
  5. Knead the dough for 5 minutes, gradually adding just enough of the remaining flour to form a smooth, satiny ball.
  6. (Be careful not to make the dough too stiff, or it will be hard to roll out.) Coat a large bowl with nonstick cooking spray and place the ball of dough in the bowl.
  7. Cover the bowl with a clean kitchen towel and let rise in a warm place for about 35 minutes, or until doubled in size.
  8. When the dough has risen, punch it down, shape it into a ball, and turn it onto a floured surface.
  9. The dough is now ready for shaping, topping, and baking.
  10. To make pizza dough in bread machine: Place all of the dough ingredients except for 2 Tablespoons of the bread flour in the machine’s bread pan.
  11. (Do not heat the water or milk.) Turn the machine on to the”rise”,”dough”, or”manual” setting so that the machine will mix, knead, and let the dough rise once.
  12. Check the dough about 5 minutes after the machine has started.
  13. If the dough seems too sticky, add more of the remaining flour, a Tablespoon at a time.
  14. When the dough is ready, remove it from the machine and proceed to shape, top, and bake it as directed in the recipe.
