INGREDIENTS
- 1 1/2lbsground beef
- 1cancream of mushroom soup
- 1/4cupbutter
- 2lbsVelveeta cheese, cut into chunks
- 1cupsalsa((I use extra-hot))
- 2tablespoonschili powder
DIRECTIONS
- In a large pot, cook the ground beef over medium heat for 8 minutes, crumble as you cook; when meat is browned, drain off the fat.
- Add the remaining ingredients; cook over low heat until the cheese is melted, stirring often.
- Serve with corn chips, tortilla chips, or toasted bruschetta.
- Can keep this warmed in a crockpot.

INGREDIENTS
- 1smallonion, chopped
- 1/4cup choppedgreen bell peppers
- 1-2tablespoonolive oil
- 3cups frozenwhite shoepeg corn, thawed
- 2plum tomatoes, diced
- 1/4-1/2lbandouille sausages, cooked and diced
- 1/4cup choppedgreen onions with tops
- salt and pepper
DIRECTIONS
- Heat oil (over medium heat) in a large skillet.
- Saute the onion and bell pepper for 8 minutes or until tender.
- Add in the corn, tomato, and sausage; stir frequently and cook for 15 minutes.
- Add in the green onions, salt and pepper; cook 5 minutes.
- Serve hot.

- 1/4cupmayonnaise
- 1egg yolk
- 1tablespoonDijon mustard
- 2teaspoonslemon juice
- 1/2teaspoonWorcestershire sauce
- 3tablespoons choppedcoriander
- 1/4cup choppedgreen onions
- 1/4cup choppedroasted red peppers
- 1lbcrabmeat(defrosted & drained - if frozen)
- salt & freshly ground black pepper
- 1/2teaspoonhot sauce
- 1/2cupcornmeal
- 1/2cupflour
- 3tablespoons meltedbutter

GARLIC MAYO
- 1/2cupmayonnaise
- 1teaspoon finely choppedgarlic
- 1tablespoonlemon juice
- 1/2teaspoonhot sauce
- 2tablespoons choppedcoriander
- salt & freshly ground black pepper
DIRECTIONS
- CRAB CAKES: Combine first 8 ingredients in a bowl.
- Flake crab meat& stir into mixture.
- Season to taste& add hot pepper sauce.
- Combine corn meal& flour on a plate.
- Form crab mixture into 1 tbsp sized balls, flatten slightly, roll in corn meal flour mixture& place on a baking sheet that has been brushed with melted butter.
- Drizzle more melted butter on each crab cake& bake in preheated 450F oven, turning once for 15 minutes or until crisp.
- GARLIC MAYO: Whisk all ingredients in a bowl.
- Serve with crab cakes.

INGREDIENTS
- 3-4lbslondon broil beef
- 1mediumonion
- 1mediumgreen pepper
- 1 (28 ounce)canstewed tomatoes
- 1/8cupred wine (optional)
DIRECTIONS
- Place London Broil in crock pot.
- Slice onions and peppers into rings and place on top of London Broil.
- Top all with stewed tomatoes.
- Pour wine over tomatoes (if using).
- Cook on low 8-10 hours.

INGREDIENTS
- 1 (12 ounce)packagesemi-sweet chocolate chips
- 1 1/4cupsflour
- 1/2cupbutteror margarine, cut into 8 pieces, room temperature
- 1/2cupsugar
- 1/2cup firmly packedbrown sugar
- 1largeegg, beaten
- 2teaspoonsinstant coffee
DIRECTIONS
- Preheat oven to 350°F.
- Melt 1/2 cup chocolate chips in top of double boiler over simmering water or in microwave.
- Transfer melted chocolate to food processor.
- Add next 6 ingredients (all except for unmelted chocolate chips) and blend well (20 seconds).
- Stir in remaining chocolate chips.
- Drop by tablespoonsful onto ungreased baking sheets.
- Bake 15 minutes or until done.
