TNT Dip Recipe

INGREDIENTS

  1. 1 1/2lbsground beef
  2. 1cancream of mushroom soup
  3. 1/4cupbutter
  4. 2lbsVelveeta cheese, cut into chunks
  5. 1cupsalsa((I use extra-hot))
  6. 2tablespoonschili powder

DIRECTIONS

  1. In a large pot, cook the ground beef over medium heat for 8 minutes, crumble as you cook; when meat is browned, drain off the fat.
  2. Add the remaining ingredients; cook over low heat until the cheese is melted, stirring often.
  3. Serve with corn chips, tortilla chips, or toasted bruschetta.
  4. Can keep this warmed in a crockpot.

Cajun Corn Macque Choux Recipe

INGREDIENTS

  1. 1smallonion, chopped
  2. 1/4cup choppedgreen bell peppers
  3. 1-2tablespoonolive oil
  4. 3cups frozenwhite shoepeg corn, thawed
  5. 2plum tomatoes, diced
  6. 1/4-1/2lbandouille sausages, cooked and diced
  7. 1/4cup choppedgreen onions with tops
  8. salt and pepper

DIRECTIONS

  1. Heat oil (over medium heat) in a large skillet.
  2. Saute the onion and bell pepper for 8 minutes or until tender.
  3. Add in the corn, tomato, and sausage; stir frequently and cook for 15 minutes.
  4. Add in the green onions, salt and pepper; cook 5 minutes.
  5. Serve hot.

Crab Cakes with Garlic Mayonnaise Recipe

INGREDIENTS

  1. CAKES

  2. 1/4cupmayonnaise
  3. 1egg yolk
  4. 1tablespoonDijon mustard
  5. 2teaspoonslemon juice
  6. 1/2teaspoonWorcestershire sauce
  7. 3tablespoons choppedcoriander
  8. 1/4cup choppedgreen onions
  9. 1/4cup choppedroasted red peppers
  10. 1lbcrabmeat(defrosted & drained - if frozen)
  11. salt & freshly ground black pepper
  12. 1/2teaspoonhot sauce
  13. 1/2cupcornmeal
  14. 1/2cupflour
  15. 3tablespoons meltedbutter
  16. GARLIC MAYO

  17. 1/2cupmayonnaise
  18. 1teaspoon finely choppedgarlic
  19. 1tablespoonlemon juice
  20. 1/2teaspoonhot sauce
  21. 2tablespoons choppedcoriander
  22. salt & freshly ground black pepper

DIRECTIONS

  1. CRAB CAKES: Combine first 8 ingredients in a bowl.
  2. Flake crab meat& stir into mixture.
  3. Season to taste& add hot pepper sauce.
  4. Combine corn meal& flour on a plate.
  5. Form crab mixture into 1 tbsp sized balls, flatten slightly, roll in corn meal flour mixture& place on a baking sheet that has been brushed with melted butter.
  6. Drizzle more melted butter on each crab cake& bake in preheated 450F oven, turning once for 15 minutes or until crisp.
  7. GARLIC MAYO: Whisk all ingredients in a bowl.
  8. Serve with crab cakes.

Crock Pot London Broil Recipe

INGREDIENTS

  1. 3-4lbslondon broil beef
  2. 1mediumonion
  3. 1mediumgreen pepper
  4. 1 (28 ounce)canstewed tomatoes
  5. 1/8cupred wine (optional)

DIRECTIONS

  1. Place London Broil in crock pot.
  2. Slice onions and peppers into rings and place on top of London Broil.
  3. Top all with stewed tomatoes.
  4. Pour wine over tomatoes (if using).
  5. Cook on low 8-10 hours.

Mocha Chip Cookies Recipe

INGREDIENTS

  1. 1 (12 ounce)packagesemi-sweet chocolate chips
  2. 1 1/4cupsflour
  3. 1/2cupbutteror margarine, cut into 8 pieces, room temperature
  4. 1/2cupsugar
  5. 1/2cup firmly packedbrown sugar
  6. 1largeegg, beaten
  7. 2teaspoonsinstant coffee

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Melt 1/2 cup chocolate chips in top of double boiler over simmering water or in microwave.
  3. Transfer melted chocolate to food processor.
  4. Add next 6 ingredients (all except for unmelted chocolate chips) and blend well (20 seconds).
  5. Stir in remaining chocolate chips.
  6. Drop by tablespoonsful onto ungreased baking sheets.
  7. Bake 15 minutes or until done.
