INGREDIENTS
- 1 (225 g)package kraftmacaroni & cheese dinner mix
- 3green onions, sliced
- 1/2cup dicedcelery
- 1/4cup dicedgreen peppersor red peppers
- 2hard-boiled eggs, chopped (optional)
- 1tablespoonsweet relish
- 1teaspoonprepared mustard
- 1cupsalad dressing(or more)
- 1/2cup shreddedcheddar cheese
- salt and pepper
DIRECTIONS
- Cook macaroni and cheese dinner as directed on package.
- Let cool.
- Meanwhile, in a bowl, combine green onions, celery, green pepper, and if desired eggs.
- Add macaroni dinner.
- Toss lightly to combine.
- In a seperate bowl, combine sweet relish, mustard, and salad dressing.
- Stir to mix thoroughly.
- Add to macaroni and vegetable mixture.
- Toss lightly.
- Sprinkle with shredded cheese, and season with salt and pepper.
- Toss lightly, but thoroughly together.
- Chill for 4-6 hours.

INGREDIENTS
- 3-5lbs frozen cooked smallmeatballs
- 1 (32 ounce)jargrape jelly
- 2 (12 ounce)jarschili sauce
- 1pinchcayenne pepper (optional)
DIRECTIONS
- In a pot combine the grape jelly with the chili sauce; add in the meatballs and simmer for about 45 minutes uncovered or until the sauce has thickened.

INGREDIENTS
- 6mediumcarrots, peeled
- 1mediumonion
- 3eggs, slightly beaten
- 3/4-1teaspoonsalt
- pepper
- 1/2cupflour
- 1/2teaspoonbaking powder
- oil(for frying)
DIRECTIONS
- Grate carrots with onion.
- Squeeze out excess moisture.
- Mix flour with baking powder and salt.
- Add beaten eggs and flour to grated carrot/onion mixture.
- Mix well.
- Heat oil in frypan.
- Drop carrot mixture from a large spoon into hot oil and flatten slightly with back of spoon.
- Brown on med heat about 2-3 mins on each side until golden brown.
- Drain on paper towel.
- Note: these pancakes freeze well.

INGREDIENTS
- 1 1/2lbslarge shrimp, cleaned and deveined
- 1-2tablespoon mincedfresh garlic(or to taste)
- 4tablespoonsbutter
- 1/2teaspoondried chili pepper flakes(or to taste)
- 1/4cupDijon mustard(or use less)
- 1/4cupfresh lemon juice
- 1/4cup choppedfresh parsley
- 1/2teaspoonsalt
- black pepper
- gratedparmesan cheese (optional)
DIRECTIONS
- Cook and stir shrimp, garlic and chili flakes in butter in a large skillet over medium heat, until shrimp are pink and cooked.
- Blend mustard, lemon juice, parsley, salt and pepper, add to shrimp mixture; heat thoroughly.
- Sprinkle with grated parmesan cheese if desired.
- Serve with white rice or cooked pasta.
- Delicious.

INGREDIENTS
- 1lbmanicotti
- 4eggs, beaten
- 1/4cuponions, chopped finely
- 1cup gratedparmesan cheese
- 1teaspoonnutmeg
- 4 (12 ounce)cartonscream-style cottage cheese
- 2 (9 ounce)packagesfrozen chopped spinach, thawed and squeezed well,to drain
- 8ouncesmozzarella cheese, shredded
- 2 (32 ounce)jarspasta sauce with meat
- 1/2cup gratedparmesan cheese
DIRECTIONS
- Cook manicotti shells to desired doneness as directed on package.
- Drain well.
- Heat oven to 350 degrees.
- Grease two 13-by-9-inch baking dishes.
- In large bowl, combine eggs, onion, 1 cup Parmesan cheese, nutmeg, cottage cheese, spinach and mozzarella cheese.
- Mix well.
- Drain manicotti.
- Fill shells with cheese mixture.
- Place side by side in dish.
- Pour spaghetti sauce over manicotti and sprinkle with ½ cup Parmesan cheese.
- Bake in preheated oven for 35-40 minutes or until bubbly.
