Mom’s Cheesy Macaroni Salad Recipe

INGREDIENTS

  1. 1 (225 g)package kraftmacaroni & cheese dinner mix
  2. 3green onions, sliced
  3. 1/2cup dicedcelery
  4. 1/4cup dicedgreen peppersor red peppers
  5. 2hard-boiled eggs, chopped (optional)
  6. 1tablespoonsweet relish
  7. 1teaspoonprepared mustard
  8. 1cupsalad dressing(or more)
  9. 1/2cup shreddedcheddar cheese
  10. salt and pepper

DIRECTIONS

  1. Cook macaroni and cheese dinner as directed on package.
  2. Let cool.
  3. Meanwhile, in a bowl, combine green onions, celery, green pepper, and if desired eggs.
  4. Add macaroni dinner.
  5. Toss lightly to combine.
  6. In a seperate bowl, combine sweet relish, mustard, and salad dressing.
  7. Stir to mix thoroughly.
  8. Add to macaroni and vegetable mixture.
  9. Toss lightly.
  10. Sprinkle with shredded cheese, and season with salt and pepper.
  11. Toss lightly, but thoroughly together.
  12. Chill for 4-6 hours.

Easy Appetizer Grape Jelly and Chili Sauce Meatballs or Smokies Recipe

INGREDIENTS

  1. 3-5lbs frozen cooked smallmeatballs
  2. 1 (32 ounce)jargrape jelly
  3. 2 (12 ounce)jarschili sauce
  4. 1pinchcayenne pepper (optional)

DIRECTIONS

  1. In a pot combine the grape jelly with the chili sauce; add in the meatballs and simmer for about 45 minutes uncovered or until the sauce has thickened.

Carrot Latkes (pancakes) Recipe

INGREDIENTS

  1. 6mediumcarrots, peeled
  2. 1mediumonion
  3. 3eggs, slightly beaten
  4. 3/4-1teaspoonsalt
  5. pepper
  6. 1/2cupflour
  7. 1/2teaspoonbaking powder
  8. oil(for frying)

DIRECTIONS

  1. Grate carrots with onion.
  2. Squeeze out excess moisture.
  3. Mix flour with baking powder and salt.
  4. Add beaten eggs and flour to grated carrot/onion mixture.
  5. Mix well.
  6. Heat oil in frypan.
  7. Drop carrot mixture from a large spoon into hot oil and flatten slightly with back of spoon.
  8. Brown on med heat about 2-3 mins on each side until golden brown.
  9. Drain on paper towel.
  10. Note: these pancakes freeze well.

Easy Lemon-Dijon Shrimp Scampi Recipe

INGREDIENTS

  1. 1 1/2lbslarge shrimp, cleaned and deveined
  2. 1-2tablespoon mincedfresh garlic(or to taste)
  3. 4tablespoonsbutter
  4. 1/2teaspoondried chili pepper flakes(or to taste)
  5. 1/4cupDijon mustard(or use less)
  6. 1/4cupfresh lemon juice
  7. 1/4cup choppedfresh parsley
  8. 1/2teaspoonsalt
  9. black pepper
  10. gratedparmesan cheese (optional)

DIRECTIONS

  1. Cook and stir shrimp, garlic and chili flakes in butter in a large skillet over medium heat, until shrimp are pink and cooked.
  2. Blend mustard, lemon juice, parsley, salt and pepper, add to shrimp mixture; heat thoroughly.
  3. Sprinkle with grated parmesan cheese if desired.
  4. Serve with white rice or cooked pasta.
  5. Delicious.

Party Manicotti Recipe

INGREDIENTS

  1. 1lbmanicotti
  2. 4eggs, beaten
  3. 1/4cuponions, chopped finely
  4. 1cup gratedparmesan cheese
  5. 1teaspoonnutmeg
  6. 4 (12 ounce)cartonscream-style cottage cheese
  7. 2 (9 ounce)packagesfrozen chopped spinach, thawed and squeezed well,to drain
  8. 8ouncesmozzarella cheese, shredded
  9. 2 (32 ounce)jarspasta sauce with meat
  10. 1/2cup gratedparmesan cheese

DIRECTIONS

  1. Cook manicotti shells to desired doneness as directed on package.
  2. Drain well.
  3. Heat oven to 350 degrees.
  4. Grease two 13-by-9-inch baking dishes.
  5. In large bowl, combine eggs, onion, 1 cup Parmesan cheese, nutmeg, cottage cheese, spinach and mozzarella cheese.
  6. Mix well.
  7. Drain manicotti.
  8. Fill shells with cheese mixture.
  9. Place side by side in dish.
  10. Pour spaghetti sauce over manicotti and sprinkle with ½ cup Parmesan cheese.
  11. Bake in preheated oven for 35-40 minutes or until bubbly.
