INGREDIENTS
- 5lbschicken wings
- 1cupsoy sauce
- 2tablespoonsapricot jam
- 1jarapricot baby food
- 2clovesgarlic, minced
DIRECTIONS
- Remove tips from chicken wings and discard; cut through wings to separate; marinate in plastic bag with remaining ingredients for 24 hours.
- Place chicken and marinade on jelly roll pan lined with well-greased foil; bake at 350°, 1 hour, turning once.
- Place in crockpot on low for at least 3 hours; serve warm or cold.

INGREDIENTS
- 1slice day-oldbread, crust removed
- 1/4cupdry sherry
- 3tablespoonslight cream
- 1lb leanbeef sirloin
- 1/2lbsmoked ham
- 1/4cup choppedtoasted almonds
- 2tablespoons choppedfresh parsley
- 1/4cup gratedparmesan cheese
- 2teaspoonssalt
- 1teaspoonfresh ground pepper
- 1/2teaspoondried oregano
- 3eggs
- 1/4cupbutter, melted
- 1/4cupolive oil
DIRECTIONS
- Place bread in a small bowl and pour wine and cream over the bread and crumble it as the liquid is absorbed; pulse the beef, ham, almonds and parsley in a food processor; remove to a bowl.
- Add the cheese, salt, pepper and oregano to the meat; beat eggs and pour over all; mix all lightly with 2 forks until thoroughly combined.
- Refrigerate covered for 1/2 hour; form tiny meat balls; heat butter and oil in a skillet and brown meatballs slowly on all sides; cover and simmer for 20 minutes.
- Serve hot as hors d’oeuvres or use in another recipe.

INGREDIENTS
- 1/2cupbean sprouts
- 1 1/2tablespoonsalmonds, blanched and chopped
- 3/4cupcucumbers, finely chopped
- 1lemon, juice of, to taste
- 3smallred radishes or fresh carrots, sliced lengthwise(whichever you prefer - I love carrots)
- 1tablespoonmint leaves
- salt
- 3-5lettuce leaves, washed
DIRECTIONS
- Mix all the ingredients together and serve on a bed of lettuce leaves!

INGREDIENTS
- 1/4cuppineapple slices, cut into small cubes
- 2cupspotatoes, boiled,peeled and diced
- 1/2cupred bell peppers, finely chopped
- 1spring onion, finely chopped
- 1/2cupfrozen corn, boiled for a few minutes in salted water and drained
- salt
- 1 1/2cupsmayonnaise
- 1tablespoon choppedchives, to garnish
- 2tablespoons choppedwalnuts, to garnish
DIRECTIONS
- Mix everything together in a bowl.
- Ganrish with chives and walnuts and serve.

INGREDIENTS
- 1 1/2cupsfresh basil leaves
- 3/4cupolive oil
- 3tablespoonswhite vinegar
- 2clovesgarlic, minced
- 3/4cupparmesan cheese, grated
- 3/4teaspoonsalt
- 4cupsbean sprouts
- 2largetomatoes, peeled and sliced round
- 4-5lettuce leaves, washed
DIRECTIONS
- To prepare the Pesto, blend basil, oil, vinegar, garlic, salt and cheese in a blender or food processor until smooth.
- Keep aside.
- Line a salad plate with lettuce leaves.
- Spread the bean sprouts over it.
- Place the sliced tomatoes over the bean sprouts.
- Spoon the Pesto over the salad.
- Serve at once.
