Mom’s Favourite Winter Stew Recipe

INGREDIENTS

  1. 1tablespoonolive oil
  2. 1kgstewing beef, cut in 1 cm cubes
  3. 2onions, chopped
  4. 2carrots, chopped
  5. 2stalkscelery, sliced
  6. 1 (540 ml)canchickpeas, drained and rinsed well
  7. 250mlbeef stock
  8. 156mltomato paste
  9. 2tablespoonschili powder
  10. 1teaspooncumin powder
  11. 1teaspoondried oregano
  12. 3/4teaspoonsalt
  13. 1 choppedsweet red pepper

DIRECTIONS

  1. In a large pot heat olive oil over medium-high heat.
  2. Saute in batches stewing beef, onions, carrots and celery.
  3. Add chickpeas, beef stock, tomato paste, chili powder, cumin, oregano and salt.
  4. Bring to a boil and then transfer to a crockpot.
  5. Cover and cook on low for 8-10 hours or until meat is tender.
  6. Add chopped sweet pepper and cook for another 15 minutes.
  7. Flour can be stirred up in a bit of water if thickening is needed.

Sweet and Nutty Raisin Bran Muffins Recipe

INGREDIENTS

  1. 1cupapplesauce
  2. 3/4cupbrown sugar
  3. 1/4cupDark Karo syrupor molassesor maple syrup
  4. 2egg whites(whipped until peaks form)
  5. 1cupall-purpose flour
  6. 1teaspoonbaking powder
  7. 1/2teaspoonsalt
  8. 1/2teaspoonbaking soda
  9. 1teaspooncinnamonor nutmeg
  10. 2cupsRaisin Bran cereal
  11. Topping

  12. 1/2cupbrown sugar
  13. 1/2cup crushedpecans

DIRECTIONS

  1. Sift together dry ingredients except for the cereal.
  2. Mix applesauce, sugar, & syrup together.
  3. Add the flour mixture to the syrup mixture.
  4. Next add cereal.
  5. Last fold in the egg whites.
  6. Spoon batter into a lightly greased or sprayed muffin pan (12 count muffin tin).
  7. Mix together the sugar and the pecans.
  8. Sprinkle topping on to the batter.
  9. Bake muffins in a 400° preheated oven for 15- 20 minutes.
  10. Let cool or serve hot with sweet Honey Butter, or just plain, their great!

Apple Nummy Cake Recipe

INGREDIENTS

  1. 1boxyellow cake mix
  2. eggs
  3. oil
  4. water
  5. 1pintheavy whipping cream
  6. 6cups peeled slicedcooking apples
  7. 1cupbrown sugar
  8. 1teaspooncinnamon

DIRECTIONS

  1. Mix cake mix according to boxed directions with eggs, oil and water.
  2. Pour batter in greased and floured 13 X 9 inch cake pan.
  3. Mix brown sugar and cinnamon and mix well with apple slices.
  4. Put sugared apple slices over the batter in the pan.
  5. Pour the heavy whipping cream over the apples.
  6. Bake in preheated 350* oven for 1 hour.

Mom’s Favourite Leverpostej/Liver pate Recipe

INGREDIENTS

  1. 300gliver
  2. 150gbacon
  3. 30gbutteror margarine
  4. 3tablespoonsflour
  5. 300milk
  6. 1egg
  7. 1teaspoonsalt
  8. 1/2teaspoonpepper
  9. 1pinchcloves (optional)
  10. 1small bonelessherring filletor anchovy (optional)

DIRECTIONS

  1. Chop speck, and chop liver with onion 1-2 times through the meat-grinder.
  2. Make a white sauce of butter/margarine, flour and milk.
  3. Add chopped speck and the rest of the ingredients.
  4. Bake in small forms.

Overnite Macaroons 1965 Recipe

INGREDIENTS

  1. 2cupsbrown sugar
  2. 4cupsoatmeal(not instant, Use old fashioned)
  3. 1cupcanola oil
  4. 2large beateneggs
  5. 1teaspoonalmond extract
  6. 1teaspoonsalt
  7. 1teaspoonpure vanilla extract

DIRECTIONS

  1. Combine sugar, oats, salt, and oil.
  2. Let this sit overnite on counter in a large bowl covered.
  3. Next day add the eggs, and vanilla, and almond extracts.
  4. Place small tsp.
  5. onto parchment paper baking sheets.
  6. Bake 325 degrees F.
  7. oven.
  8. Watch carefully, bake only 10- 15 minutes.
  9. They will brown quickly because of just sugar and eggs.
  10. Always test one or two first, to arrive at the correct baking time.
  11. Allow to cool on sheet.
  12. Remove.
  13. They should be small, when cool chewy.
