INGREDIENTS
- 1tablespoonolive oil
- 1kgstewing beef, cut in 1 cm cubes
- 2onions, chopped
- 2carrots, chopped
- 2stalkscelery, sliced
- 1 (540 ml)canchickpeas, drained and rinsed well
- 250mlbeef stock
- 156mltomato paste
- 2tablespoonschili powder
- 1teaspooncumin powder
- 1teaspoondried oregano
- 3/4teaspoonsalt
- 1 choppedsweet red pepper
DIRECTIONS
- In a large pot heat olive oil over medium-high heat.
- Saute in batches stewing beef, onions, carrots and celery.
- Add chickpeas, beef stock, tomato paste, chili powder, cumin, oregano and salt.
- Bring to a boil and then transfer to a crockpot.
- Cover and cook on low for 8-10 hours or until meat is tender.
- Add chopped sweet pepper and cook for another 15 minutes.
- Flour can be stirred up in a bit of water if thickening is needed.

INGREDIENTS
- 1cupapplesauce
- 3/4cupbrown sugar
- 1/4cupDark Karo syrupor molassesor maple syrup
- 2egg whites(whipped until peaks form)
- 1cupall-purpose flour
- 1teaspoonbaking powder
- 1/2teaspoonsalt
- 1/2teaspoonbaking soda
- 1teaspooncinnamonor nutmeg
- 2cupsRaisin Bran cereal

Topping
- 1/2cupbrown sugar
- 1/2cup crushedpecans
DIRECTIONS
- Sift together dry ingredients except for the cereal.
- Mix applesauce, sugar, & syrup together.
- Add the flour mixture to the syrup mixture.
- Next add cereal.
- Last fold in the egg whites.
- Spoon batter into a lightly greased or sprayed muffin pan (12 count muffin tin).
- Mix together the sugar and the pecans.
- Sprinkle topping on to the batter.
- Bake muffins in a 400° preheated oven for 15- 20 minutes.
- Let cool or serve hot with sweet Honey Butter, or just plain, their great!

INGREDIENTS
- 1boxyellow cake mix
- eggs
- oil
- water
- 1pintheavy whipping cream
- 6cups peeled slicedcooking apples
- 1cupbrown sugar
- 1teaspooncinnamon
DIRECTIONS
- Mix cake mix according to boxed directions with eggs, oil and water.
- Pour batter in greased and floured 13 X 9 inch cake pan.
- Mix brown sugar and cinnamon and mix well with apple slices.
- Put sugared apple slices over the batter in the pan.
- Pour the heavy whipping cream over the apples.
- Bake in preheated 350* oven for 1 hour.

INGREDIENTS
- 300gliver
- 150gbacon
- 30gbutteror margarine
- 3tablespoonsflour
- 300milk
- 1egg
- 1teaspoonsalt
- 1/2teaspoonpepper
- 1pinchcloves (optional)
- 1small bonelessherring filletor anchovy (optional)
DIRECTIONS
- Chop speck, and chop liver with onion 1-2 times through the meat-grinder.
- Make a white sauce of butter/margarine, flour and milk.
- Add chopped speck and the rest of the ingredients.
- Bake in small forms.

INGREDIENTS
- 2cupsbrown sugar
- 4cupsoatmeal(not instant, Use old fashioned)
- 1cupcanola oil
- 2large beateneggs
- 1teaspoonalmond extract
- 1teaspoonsalt
- 1teaspoonpure vanilla extract
DIRECTIONS
- Combine sugar, oats, salt, and oil.
- Let this sit overnite on counter in a large bowl covered.
- Next day add the eggs, and vanilla, and almond extracts.
- Place small tsp.
- onto parchment paper baking sheets.
- Bake 325 degrees F.
- oven.
- Watch carefully, bake only 10- 15 minutes.
- They will brown quickly because of just sugar and eggs.
- Always test one or two first, to arrive at the correct baking time.
- Allow to cool on sheet.
- Remove.
- They should be small, when cool chewy.
