Corn Casserole Recipe

INGREDIENTS

  1. 2canswhole kernel corn, drained
  2. 1 (8 ounce)packagecream cheese
  3. 2tablespoonsbutter
  4. 1-2serrano pepper, chopped

DIRECTIONS

  1. Soften butter& cream cheese.
  2. Add corn& peppers.
  3. Pour into casserole dish& bake at 350 until bubbly.

Lemon Chicken Done My Way Recipe

INGREDIENTS

  1. 3lbsboneless skinless chicken breasts
  2. 1tablespoondry sherry
  3. 1tablespoonsoy sauce
  4. 1/2teaspoonsalt
  5. 2eggs
  6. 1/4cupcornstarch
  7. 1/2teaspoonbaking powder
  8. 2cupsvegetable oil
  9. 1/4cupwhite sugar
  10. 1tablespooncornstarch
  11. 1cupchicken broth
  12. 1tablespoonlemon juice
  13. 1teaspoonsalt
  14. 1lemon, sliced
  15. 2tablespoonsvegetable oil
  16. 1cupcarrots, julliened
  17. 1canpineapple chunks, drained
  18. 1cupbroccoli florets
  19. 1/2cuponions, sliced thin and seperated into rings
  20. 1/2cupred peppers, sliced into strips
  21. 1cupwater chestnuts, sliced

DIRECTIONS

  1. Cut the chicken into bite-sized pieces.
  2. In a large bowl combine the chicken, sherry, soy sauce and 1/2 teaspoon salt.
  3. Mix together, cover and refrigerate.
  4. Let marinate for 15 to 20 minutes.
  5. Steam the carrots and broccoli until tender.
  6. In a wok, lightly saute the onion and red pepper until tender.
  7. (May add a little oil, if necessary.) Combine all carrots, broccoli, onion, red pepper and water chestnuts and set aside.
  8. In a small bowl, beat together the eggs, 1/4 cup cornstarch and baking powder to form a batter.
  9. In a wok, heat 2 cups oil to 350 degrees F (175 degrees C).
  10. Coat chicken with batter and fry in wok until browned.
  11. Set aside.
  12. In a medium bowl combine the sugar, 1 tablespoon cornstarch, broth, lemon juice and 1 teaspoon salt.
  13. Mix together and add lemon slices.
  14. Heat 2 tablespoons oil in wok and slowly stir in lemon sauce mixture.
  15. Cook, stirring, until sauce is clear.
  16. Add the pineapple chunks.
  17. To serve, layer rice (not included in this recipe), chicken and vegetables on plate and pour sauce over.

Banana Split Bread Recipe

INGREDIENTS

  1. Bread

  2. 1 (8 ounce)cancrushed pineapple(well drained, reserving liquid)
  3. 1 (14 ounce)packagebanana bread mix
  4. 2eggs
  5. 3tablespoonsoil
  6. 1/3cup choppedstrawberries
  7. 1/3cupsemisweet mini chocolate chips
  8. Glaze

  9. 1/2cuppowdered sugar
  10. 2tablespoonsmini chocolate chips, melted
  11. 4teaspoonsmilk

DIRECTIONS

  1. Heat oven to 375.
  2. Grease and flour bottom of pan.
  3. Add water to reserved pineapple juice to make 3/4 cup.
  4. In large bowl, combine all bread ingredients and stir till moist.
  5. Pour batter into pan and bake at 375 for 55-60 minutes or until toothpick comes out clean.
  6. Cool loaf in pan for 15 minutes.
  7. Remove from pan, cool for 45 minutes.
  8. Glaze: In small bowl, combine all glaze ingredients and stir until well blended.
  9. Drizzle over cooled loaf.
  10. HIGH ALTITUDE: Add 1 tbsp.
  11. flour to mix.
  12. Bake at 375 for 50-60 min.
  13. NOTE: I also use this recipe to make muffins, just bake for the amount of time suggested on the banana bread mix box.

Banana Split Freeze Recipe

INGREDIENTS

  1. 1 (8 ounce)packagecream cheese(softened)
  2. 3/4cupsugar(Mix with cheese)
  3. 1 (20 ounce)canpineapple chunks, drained
  4. 1/2cup choppednuts (optional)
  5. 2bananas, sliced
  6. 9ouncesCool Whip
  7. 1 (10 ounce)packagefrozen strawberries

DIRECTIONS

  1. Fold all indredients together and freeze in baking dish.
  2. NOTE: When frozen, it can be difficult to cut into pieces.
  3. Next time I’m going to try using disposable plastic snack-size containers with lids to freeze individual portions.

Aloha Puff Pizzettes Recipe

INGREDIENTS

  1. 1 (8 ounce)cancrescent rolls
  2. 2tablespoons thicksweet and sour sauce
  3. 1cup finely shreddedswiss cheese
  4. 4ounces thinly sliced bakedham, cut into short thin strips
  5. 1 (8 ounce)cancrushed pineapple, well drained

DIRECTIONS

  1. Heat oven to 375 F.
  2. Lightly spray a cookie sheet with cooking spray.
  3. Unroll dough into 2 long rectangles; press perforations to seal.
  4. Cut each rectangle into 12 squares.
  5. Place squares on a sprayed cookie sheet.
  6. Top each square with 1/4 tsp.
  7. sweet-and-sour sauce.
  8. Layer squares with half of cheese, all of ham, remaining half of cheese and all of pineapple.
  9. Bake for 11 to 12 minutes or until edges are golden brown.
  10. Serve warm.
