INGREDIENTS
- 2canswhole kernel corn, drained

DIRECTIONS
- Soften butter& cream cheese.
- Add corn& peppers.
- Pour into casserole dish& bake at 350 until bubbly.

INGREDIENTS
- 3lbsboneless skinless chicken breasts
- 1tablespoondry sherry
- 1tablespoonsoy sauce
- 1/2teaspoonsalt
- 2eggs
- 1/4cupcornstarch
- 1/2teaspoonbaking powder
- 2cupsvegetable oil
- 1/4cupwhite sugar
- 1tablespooncornstarch
- 1cupchicken broth
- 1tablespoonlemon juice
- 1teaspoonsalt
- 1lemon, sliced
- 2tablespoonsvegetable oil
- 1cupcarrots, julliened
- 1canpineapple chunks, drained
- 1cupbroccoli florets
- 1/2cuponions, sliced thin and seperated into rings
- 1/2cupred peppers, sliced into strips
- 1cupwater chestnuts, sliced
DIRECTIONS
- Cut the chicken into bite-sized pieces.
- In a large bowl combine the chicken, sherry, soy sauce and 1/2 teaspoon salt.
- Mix together, cover and refrigerate.
- Let marinate for 15 to 20 minutes.
- Steam the carrots and broccoli until tender.
- In a wok, lightly saute the onion and red pepper until tender.
- (May add a little oil, if necessary.) Combine all carrots, broccoli, onion, red pepper and water chestnuts and set aside.
- In a small bowl, beat together the eggs, 1/4 cup cornstarch and baking powder to form a batter.
- In a wok, heat 2 cups oil to 350 degrees F (175 degrees C).
- Coat chicken with batter and fry in wok until browned.
- Set aside.
- In a medium bowl combine the sugar, 1 tablespoon cornstarch, broth, lemon juice and 1 teaspoon salt.
- Mix together and add lemon slices.
- Heat 2 tablespoons oil in wok and slowly stir in lemon sauce mixture.
- Cook, stirring, until sauce is clear.
- Add the pineapple chunks.
- To serve, layer rice (not included in this recipe), chicken and vegetables on plate and pour sauce over.

INGREDIENTS

Bread
- 1 (8 ounce)cancrushed pineapple(well drained, reserving liquid)
- 1 (14 ounce)packagebanana bread mix
- 2eggs
- 3tablespoonsoil
- 1/3cup choppedstrawberries
- 1/3cupsemisweet mini chocolate chips

Glaze
- 1/2cuppowdered sugar
- 2tablespoonsmini chocolate chips, melted
- 4teaspoonsmilk
DIRECTIONS
- Heat oven to 375.
- Grease and flour bottom of pan.
- Add water to reserved pineapple juice to make 3/4 cup.
- In large bowl, combine all bread ingredients and stir till moist.
- Pour batter into pan and bake at 375 for 55-60 minutes or until toothpick comes out clean.
- Cool loaf in pan for 15 minutes.
- Remove from pan, cool for 45 minutes.
- Glaze: In small bowl, combine all glaze ingredients and stir until well blended.
- Drizzle over cooled loaf.
- HIGH ALTITUDE: Add 1 tbsp.
- flour to mix.
- Bake at 375 for 50-60 min.
- NOTE: I also use this recipe to make muffins, just bake for the amount of time suggested on the banana bread mix box.

INGREDIENTS
- 1 (8 ounce)packagecream cheese(softened)
- 3/4cupsugar(Mix with cheese)
- 1 (20 ounce)canpineapple chunks, drained
- 1/2cup choppednuts (optional)
- 2bananas, sliced
- 9ouncesCool Whip
- 1 (10 ounce)packagefrozen strawberries
DIRECTIONS
- Fold all indredients together and freeze in baking dish.
- NOTE: When frozen, it can be difficult to cut into pieces.
- Next time I’m going to try using disposable plastic snack-size containers with lids to freeze individual portions.

INGREDIENTS
- 1 (8 ounce)cancrescent rolls
- 2tablespoons thicksweet and sour sauce
- 1cup finely shreddedswiss cheese
- 4ounces thinly sliced bakedham, cut into short thin strips
- 1 (8 ounce)cancrushed pineapple, well drained
DIRECTIONS
- Heat oven to 375 F.
- Lightly spray a cookie sheet with cooking spray.
- Unroll dough into 2 long rectangles; press perforations to seal.
- Cut each rectangle into 12 squares.
- Place squares on a sprayed cookie sheet.
- Top each square with 1/4 tsp.
- sweet-and-sour sauce.
- Layer squares with half of cheese, all of ham, remaining half of cheese and all of pineapple.
- Bake for 11 to 12 minutes or until edges are golden brown.
- Serve warm.
