Summer Vegetable Gratin Recipe

INGREDIENTS

  1. 6zucchini(4-6inch)
  2. 6 meatytomatoes
  3. 1largeonion
  4. 1mediumaubergine
  5. 1bunchfresh oregano
  6. 1bunchfresh thyme
  7. salt & pepper
  8. olive oil, as needed
  9. parmigiano-reggiano cheese, grated to cover

DIRECTIONS

  1. Preheat oven to 375° Heat small amount of oil in pan.
  2. Add diced onion and cubed aubergine, cook until softened.
  3. Spread mixture across bottom of gratin dish.
  4. Tear oregano leaves and sprinkle over mixture.
  5. Slice tomatoes and zucchini with mandolin.
  6. Placing them alternately on top of mixture.
  7. They should nearly be standing up.
  8. Strip thyme leaves, sprinkling generously over vegetables.
  9. Salt& pepper to taste Drizzle over oil Bake 20 minutes, sprinkle grated cheese over, and bake 5-10 minutes longer until cheese melts.
  10. Cover until ready to serve.

Coconut Bars Recipe

INGREDIENTS

  1. 1/2cupbutter
  2. 1/2cupevaporated milk
  3. 2cupssugar
  4. 3cupsrolled oats
  5. 1cup gratedcoconut
  6. 8tablespoonscocoa powder
  7. 1teaspoonvanilla

DIRECTIONS

  1. In a saucepan, mix butter, milk and sugar.
  2. Bring to a boil; boil for 3 mins.
  3. Remove from heat; mix in rolled oats, coconut, cocoa powder and vanilla, until well mixed.
  4. Spoon mounds onto a buttered baking sheet.
  5. Refrigerate for 2 hours before serving.

Cranberry-nut Loaf Recipe

INGREDIENTS

  1. 2 1/2cups bisquick varietybaking mix
  2. 1/2cup packedbrown sugar
  3. 1/2cuphalf-and-halfor milk
  4. 2eggs, beaten
  5. 1 1/2cupsfresh cranberries
  6. 1/2cup choppedpecans

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Grease a 8×4-inch loaf pan.
  3. In a large mixing bowl, mix together baking mix, brown sugar, milk and beaten eggs just until moistened.
  4. Fold in cranberries and nuts.
  5. Spoon into prepared loaf pan.
  6. Bake for 45-60 mins, or until cake test done.

Savory Sausage and Sauerkraut Skillet Recipe

INGREDIENTS

  1. 2tablespoonsbutteror margarine
  2. 1mediumonion, chopped
  3. 1/4cup choppedgreen peppers
  4. 1largeapple, peeled, cored, and chopped
  5. 2tablespoonsbrown sugar
  6. 1/2teaspooncaraway seeds
  7. 3red potatoes, cleaned and diced
  8. 1 1/2cupssauerkraut, drained, rinsed, & packed
  9. 1-2lbsmoked sausageor kielbasa, cut in 3 inch pieces

DIRECTIONS

  1. Melt butter in skillet.
  2. Add onion and green pepper.
  3. Cook until tender.
  4. Add apple, brown sugar, caraway seeds, potatoes, and sauerkraut.
  5. Mix well.
  6. Place sausage on top of sauerkraut mixture.
  7. Cover.
  8. Cook over medium-low heat for 40 minutes.

Jell-O Party Punch Recipe

INGREDIENTS

  1. 4cupssugar
  2. 4cupshot water
  3. 9cups coldwater
  4. 1 (3 ounce)box jell-ogelatin, plus
  5. 1 (6 ounce)box jell-ogelatin
  6. 1ouncealmond extract
  7. 2 (36 ounce)canspineapple juice
  8. 2cupslemon juice
  9. 3 (2 liter)bottlesSpriteor ginger ale

DIRECTIONS

  1. In a large saucepan, combine hot water, sugar and jell-o, stirring until dissolved.
  2. Set aside and let cool.
  3. Combine cold water, almond extract, pineapple and lemon juice in a large bowl and stir in cooled jell-o mixture.
  4. Freeze until about 3 hours before serving.
  5. To serve chop up partially defrosted mixture and combine punch with chilled soda or gingerale in a large punch bowl.
