INGREDIENTS
- 6zucchini(4-6inch)
- 6 meatytomatoes
- 1largeonion
- 1mediumaubergine
- 1bunchfresh oregano
- 1bunchfresh thyme
- salt & pepper
- olive oil, as needed
- parmigiano-reggiano cheese, grated to cover
DIRECTIONS
- Preheat oven to 375° Heat small amount of oil in pan.
- Add diced onion and cubed aubergine, cook until softened.
- Spread mixture across bottom of gratin dish.
- Tear oregano leaves and sprinkle over mixture.
- Slice tomatoes and zucchini with mandolin.
- Placing them alternately on top of mixture.
- They should nearly be standing up.
- Strip thyme leaves, sprinkling generously over vegetables.
- Salt& pepper to taste Drizzle over oil Bake 20 minutes, sprinkle grated cheese over, and bake 5-10 minutes longer until cheese melts.
- Cover until ready to serve.

INGREDIENTS
- 1/2cupbutter
- 1/2cupevaporated milk
- 2cupssugar
- 3cupsrolled oats
- 1cup gratedcoconut
- 8tablespoonscocoa powder
- 1teaspoonvanilla
DIRECTIONS
- In a saucepan, mix butter, milk and sugar.
- Bring to a boil; boil for 3 mins.
- Remove from heat; mix in rolled oats, coconut, cocoa powder and vanilla, until well mixed.
- Spoon mounds onto a buttered baking sheet.
- Refrigerate for 2 hours before serving.

INGREDIENTS
- 2 1/2cups bisquick varietybaking mix
- 1/2cup packedbrown sugar
- 1/2cuphalf-and-halfor milk
- 2eggs, beaten
- 1 1/2cupsfresh cranberries
- 1/2cup choppedpecans
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 8×4-inch loaf pan.
- In a large mixing bowl, mix together baking mix, brown sugar, milk and beaten eggs just until moistened.
- Fold in cranberries and nuts.
- Spoon into prepared loaf pan.
- Bake for 45-60 mins, or until cake test done.

INGREDIENTS
- 2tablespoonsbutteror margarine
- 1mediumonion, chopped
- 1/4cup choppedgreen peppers
- 1largeapple, peeled, cored, and chopped
- 2tablespoonsbrown sugar
- 1/2teaspooncaraway seeds
- 3red potatoes, cleaned and diced
- 1 1/2cupssauerkraut, drained, rinsed, & packed
- 1-2lbsmoked sausageor kielbasa, cut in 3 inch pieces
DIRECTIONS
- Melt butter in skillet.
- Add onion and green pepper.
- Cook until tender.
- Add apple, brown sugar, caraway seeds, potatoes, and sauerkraut.
- Mix well.
- Place sausage on top of sauerkraut mixture.
- Cover.
- Cook over medium-low heat for 40 minutes.

INGREDIENTS
- 4cupssugar
- 4cupshot water
- 9cups coldwater
- 1 (3 ounce)box jell-ogelatin, plus
- 1 (6 ounce)box jell-ogelatin
- 1ouncealmond extract
- 2 (36 ounce)canspineapple juice
- 2cupslemon juice
- 3 (2 liter)bottlesSpriteor ginger ale
DIRECTIONS
- In a large saucepan, combine hot water, sugar and jell-o, stirring until dissolved.
- Set aside and let cool.
- Combine cold water, almond extract, pineapple and lemon juice in a large bowl and stir in cooled jell-o mixture.
- Freeze until about 3 hours before serving.
- To serve chop up partially defrosted mixture and combine punch with chilled soda or gingerale in a large punch bowl.
