Lumberjack cake Recipe

INGREDIENTS

  1. 2apples, peeled and finely chopped
  2. 1cup choppeddates
  3. 1teaspoonbicarbonate of soda
  4. 1cupboiling water
  5. 1cupsugar
  6. 1egg
  7. 1teaspoonvanilla
  8. 1 1/2cupsflour
  9. 1/2teaspoonsalt
  10. 60gbutter
  11. 1/4cuppecan nuts (optional)
  12. Topping

  13. 60gbutter
  14. 1/2cupbrown sugar, firmly packed
  15. 1-2tablespoonmilk
  16. 1/2cup shreddedcoconut

DIRECTIONS

  1. Combine apples, dates, bicarb soda and water.
  2. Allow to cool to lukewarm.
  3. Line an 8″ 20cm deep cake tin.
  4. Heat oven to 180 degrees C.
  5. (350 degrees F).
  6. Cream butter and sugar until light and fluffy.
  7. Add egg and vanilla and beat well.
  8. Sift flour and salt, beat in alternately with apple mixture.
  9. Pour into tin and bake for approximately 1 hour or until cooked.
  10. (layer pecan nuts on top pf cake before pouring topping on) Topping: Make topping by combining butter, sugar, milk and coconut.
  11. Use the microwave or the stove top.
  12. Heat over low temp till butter and sugar is melted.
  13. Spread over hot cake and return to oven for a further 20 minutes or until topping is golden brown.

Apple Cheddar Scones Recipe

INGREDIENTS

  1. 1 3/4cupsall-purpose flour
  2. 2tablespoonssugar
  3. 1 1/2teaspoonsbaking powder
  4. 1/2teaspoonsalt
  5. 1/4teaspoonbaking soda
  6. 1/3cup coldbutteror margarine
  7. 1cupbuttermilk
  8. 1cup shreddedcheddar cheese(4 ounces)
  9. 1cup diced peeledapples

DIRECTIONS

  1. In a bowl, combine the first five ingredients.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in buttermilk just until moistened.
  4. Gently fold in the cheese and apples.
  5. Turn onto a floured surface; knead 10 times.
  6. Pat into a 9-inch circle.
  7. Cut into eight wedges.
  8. Separate wedges and place on a greased baking sheet.
  9. Bake at 450 degrees for 12-15 minutes or until golden brown.

Cayenne Pepper Ointment Recipe

INGREDIENTS

  1. 1smallcayenne pepper, chopped with seeds
  2. 1/2cupvegetable oil
  3. 2tablespoons gratedbeeswax

DIRECTIONS

  1. Combine pepper with the oil and heat gently in microwave or stovetop.
  2. Do not boil.
  3. Let sit until cooled.
  4. Strain and dicard the pepper and seeds.
  5. Add beeswax and heat again till wax is melted.
  6. Stri well, spoon into a clean container, and let cool.
  7. To use: Massage a small amount into your muscles and joints.
  8. If you would like a thinner consistency, reheat with added vegetable oil.
  9. Be careful working with peppers and wash hands thoroughly after use!

Oven-Dried Tomatoes Recipe

INGREDIENTS

  1. 12-15 just ripeplum tomatoes
  2. 3tablespoonsextra-virgin olive oil
  3. salt
  4. sugar
  5. dried oregano
  6. dried basil
  7. garlic powder

DIRECTIONS

  1. Preheat oven to 200 F.
  2. Line baking sheet with parchment paper.
  3. Lightly oil parchment paper.
  4. Cut plum tomatoes in half lengthwise and remove seeds.
  5. Arrange tomatoes, cut side up, sprinkle lightly with salt, sugar, dried oregano, dried basil and garlic powder.
  6. Place tomatoes cut side DOWN on oiled parchment paper.
  7. Bake in oven for 2 hours.
  8. Remove from oven and turn tomatoes so that the cut side is UP.
  9. Bake for additional 2-6 hours (depending on how dried you want the tomatoes).
  10. Remove from oven and cool completely.
  11. To store, transfer tomatoes to jar and cover with olive oil.

Mini Apple Turnovers Recipe

INGREDIENTS

  1. 1 (8 ounce)packagecream cheese, softened
  2. 3/4cupbutter or margarine, softened
  3. 1egg, separated
  4. 3tablespoons coldwater, divided
  5. 2cupsall-purpose flour
  6. 7cups thinly slicedtart apples(about 6 medium)
  7. 3/4cupsugar
  8. 1 1/2teaspoonsground cinnamon
  9. additionalsugar, optional
  10. vanilla ice cream, optional

DIRECTIONS

  1. In a mixing bowl, beat cream cheese and butter until smooth.
  2. Refrigerate the egg white.
  3. Beat the egg yolk and 2 tablespoons water into cream cheese mixture.
  4. Gradually beat in flour until well blended.
  5. Shape pastry into a ball.
  6. Cover and refrigerate for 1 hour.
  7. Meanwhile, in a large skillet, toss apples with sugar and cinnamon.
  8. Bring to a boil.
  9. Reduce heat; cover and simmer for 8-10 minutes or until apples are tender.
  10. Remove from the heat.
  11. Turn the pastry onto a lightly floured surface.
  12. Roll to 1/8-inch thickness; cut into 4-inch circles.
  13. Top each circle with apple mixture.
  14. Brush edges of pastry with water; fold pastry over filling and seal edges well.
  15. In a small bowl, whisk egg white and remaining water; brush over pastry.
  16. Sprinkle with additional sugar, if desired.
  17. Place on greased baking sheets.
  18. Bake at 375 degrees for 18-22 minutes, or until golden brown.
  19. Remove to wire racks to cool.
  20. Serve with ice cream, if desired.
