Easy Cranberry Sauce - Microwave Recipe

INGREDIENTS

  1. 12ouncescranberries, fresh or frozen
  2. 1 1/4cupssugar(a little more sugar, if you prefer it sweeter)
  3. 1/2cuporange juiceor water
  4. 1teaspoon gratedorange rind

DIRECTIONS

  1. Combine all ingredients in a 3-qt microsafe bowl; mix well.
  2. Cover with wax paper.
  3. Microwave on high for 5 minutes.
  4. Stir well; recover with wax paper.
  5. Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
  6. Let stand, covered until cool.
  7. Transfer to serving bowl and chill for 3-4 hours.

Dry Majorcan Soup Recipe

INGREDIENTS

  1. 2largeonions, chopped
  2. 1/4cupolive oil
  3. 2red peppers, membrane & seeds removed,cut into 1/2 inch squares
  4. 2clovesgarlic, chopped
  5. 3mediumtomatoes, seeded and peeled
  6. 4tablespoonsparsley, cleaned and chopped
  7. 1largecabbage, coarsely chopped
  8. 4cupswater
  9. 12slices crusty firmwhite bread, thinly sliced

DIRECTIONS

  1. In 2 tbsp of oil saute the onions, peppers& garlic until the onions are just golden.
  2. Add tomatoes& parsley saute gently for 4 minutes.
  3. Add the cabbage and water, simmer until the cabbage is cooked.
  4. Take out 4 soup bowls or a soup tureen and place a slice of bread on the botton of each bowl (if using a tureen cover the bottom with a layer of bread).
  5. Cover the bread with a layer of veggies.
  6. Add another layer of bread and more veggies.
  7. Repeat one more time.
  8. Pour in as much stock as the bread will absorb.
  9. Drizzle a bit of oil on top (optional).

Peanut Butter-Banana-Carob Milkshake Recipe

INGREDIENTS

  1. 1banana
  2. 1/2cuplight vanilla soy milk(I like VitaSoy)
  3. 2tablespoonscarob powderor carob chips
  4. 1 1/2teaspoonspeanut butter(or soy nut butter)
  5. sugar or sugar substitute(About 1 Tbsp. or to taste-only needed if using carob powder)
  6. 6-8ice cubes
  7. 1dashcinnamon

DIRECTIONS

  1. If using carob chips, place the peanut butter and chips in the microwave-safe bowl and microwave on HIGH for about 7-10 seconds, or until the mixture is smooth and pourable.
  2. Spoon into blender along with banana, soy milk, and ice cubes.
  3. If using carob powder, combine in blender along with banana, soy milk, peanut butter, sugar, and ice cubes.
  4. For both: Blend until smooth.
  5. Sprinkle with cinnamon to taste.

Carob Peanut Butter Syrup Recipe

INGREDIENTS

  1. 2tablespoonshoney
  2. 2tablespoonscarob powder
  3. 2teaspoonsarrowroot
  4. 3/4cuphot water
  5. 1tablespoonpeanut butteror soy nut butter
  6. 1teaspoonvanilla

DIRECTIONS

  1. Combine honey, arrowroot, and carob powder in a small saucepan and stir over low heat to blend.
  2. Add hot water and continue stirring until thickened.
  3. Stir peanut butter into syrup and remove from heat.
  4. Stir in vanilla and chill.

Trotelle Alla Savoia/Trout Recipe

INGREDIENTS

  1. 4whole cleanedtrout
  2. salt & pepper
  3. flour
  4. 3/4cupgreen onions
  5. 6tablespoonsbutter
  6. 2tablespoonsolive oil
  7. 1/2lbmushrooms, thinly sliced
  8. 1tablespoonlemon juice
  9. 1/4cupfresh breadcrumbs

DIRECTIONS

  1. Preheat oven to 425 degrees F.
  2. Wash trout inside and out under cold water, pat dry with paper towel.
  3. Season with salt& pepper, then dredge in flour, shaking off excess.
  4. In a heavy skillet or frying pan, melt 2 Tbsp.
  5. butter with oil over faily high heat.
  6. When foam subsides, add trout and cook until golden (4-5 min.) Remove to warmed platter and set aside.
  7. In a stainless steel skillet melt 2 Tbsp.
  8. butter over moderate heat and add mushroom and lemon juice.
  9. Shaking pan constantly.
  10. Cook for 3-4 minutes until mushrooms are soft and glister with butter.
  11. Remove from pan and place on oven proof dish.
  12. Melt 1 Tbsp.
  13. in skillet and add onions.
  14. Cook for 1 minute and transfer to a small dish to keep warm.
  15. Use remaining butter to brown breadcrumbs.
  16. Place trout on bed of mushroom (adding any juice from fish in baking dish).
  17. Sprinkle with breadcrumbs and add onions.
  18. Bake in oven on middle rack for 10 minutes or until onions and crumbs are brown.
  19. Serve in baking dish.
  20. Serve with new potatoes and a salad.
