INGREDIENTS
- 12ouncescranberries, fresh or frozen
- 1 1/4cupssugar(a little more sugar, if you prefer it sweeter)
- 1/2cuporange juiceor water
- 1teaspoon gratedorange rind
DIRECTIONS
- Combine all ingredients in a 3-qt microsafe bowl; mix well.
- Cover with wax paper.
- Microwave on high for 5 minutes.
- Stir well; recover with wax paper.
- Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
- Let stand, covered until cool.
- Transfer to serving bowl and chill for 3-4 hours.

INGREDIENTS
- 2largeonions, chopped
- 1/4cupolive oil
- 2red peppers, membrane & seeds removed,cut into 1/2 inch squares
- 2clovesgarlic, chopped
- 3mediumtomatoes, seeded and peeled
- 4tablespoonsparsley, cleaned and chopped
- 1largecabbage, coarsely chopped
- 4cupswater
- 12slices crusty firmwhite bread, thinly sliced
DIRECTIONS
- In 2 tbsp of oil saute the onions, peppers& garlic until the onions are just golden.
- Add tomatoes& parsley saute gently for 4 minutes.
- Add the cabbage and water, simmer until the cabbage is cooked.
- Take out 4 soup bowls or a soup tureen and place a slice of bread on the botton of each bowl (if using a tureen cover the bottom with a layer of bread).
- Cover the bread with a layer of veggies.
- Add another layer of bread and more veggies.
- Repeat one more time.
- Pour in as much stock as the bread will absorb.
- Drizzle a bit of oil on top (optional).

INGREDIENTS
- 1banana
- 1/2cuplight vanilla soy milk(I like VitaSoy)
- 2tablespoonscarob powderor carob chips
- 1 1/2teaspoonspeanut butter(or soy nut butter)
- sugar or sugar substitute(About 1 Tbsp. or to taste-only needed if using carob powder)
- 6-8ice cubes
- 1dashcinnamon
DIRECTIONS
- If using carob chips, place the peanut butter and chips in the microwave-safe bowl and microwave on HIGH for about 7-10 seconds, or until the mixture is smooth and pourable.
- Spoon into blender along with banana, soy milk, and ice cubes.
- If using carob powder, combine in blender along with banana, soy milk, peanut butter, sugar, and ice cubes.
- For both: Blend until smooth.
- Sprinkle with cinnamon to taste.

INGREDIENTS
- 2tablespoonshoney
- 2tablespoonscarob powder
- 2teaspoonsarrowroot
- 3/4cuphot water
- 1tablespoonpeanut butteror soy nut butter
- 1teaspoonvanilla
DIRECTIONS
- Combine honey, arrowroot, and carob powder in a small saucepan and stir over low heat to blend.
- Add hot water and continue stirring until thickened.
- Stir peanut butter into syrup and remove from heat.
- Stir in vanilla and chill.

INGREDIENTS
- 4whole cleanedtrout
- salt & pepper
- flour
- 3/4cupgreen onions
- 6tablespoonsbutter
- 2tablespoonsolive oil
- 1/2lbmushrooms, thinly sliced
- 1tablespoonlemon juice
- 1/4cupfresh breadcrumbs
DIRECTIONS
- Preheat oven to 425 degrees F.
- Wash trout inside and out under cold water, pat dry with paper towel.
- Season with salt& pepper, then dredge in flour, shaking off excess.
- In a heavy skillet or frying pan, melt 2 Tbsp.
- butter with oil over faily high heat.
- When foam subsides, add trout and cook until golden (4-5 min.) Remove to warmed platter and set aside.
- In a stainless steel skillet melt 2 Tbsp.
- butter over moderate heat and add mushroom and lemon juice.
- Shaking pan constantly.
- Cook for 3-4 minutes until mushrooms are soft and glister with butter.
- Remove from pan and place on oven proof dish.
- Melt 1 Tbsp.
- in skillet and add onions.
- Cook for 1 minute and transfer to a small dish to keep warm.
- Use remaining butter to brown breadcrumbs.
- Place trout on bed of mushroom (adding any juice from fish in baking dish).
- Sprinkle with breadcrumbs and add onions.
- Bake in oven on middle rack for 10 minutes or until onions and crumbs are brown.
- Serve in baking dish.
- Serve with new potatoes and a salad.
