INGREDIENTS
- 1/4cupbutter
- 1/2cupoil
- 1 3/4cupssugar
- 2eggs
- 1teaspoonvanilla
- 1/2cupbuttermilk
- 2 1/2cupsflour
- 1/4cupcocoa powder
- 1/2teaspoonbaking powder
- 1/2teaspoonbaking soda
- 1/2teaspooncinnamon
- 1/2teaspooncloves
- 2cups gratedzucchini
- 1/4cupchocolate chips
DIRECTIONS
- Cream together butter, oil, sugar, eggs, vanilla and buttermilk.
- Sift dry ingredients and add to creamed mixture.
- Mix in zucchini and fold in chocolate chips.
- Bake in a buttered bundt pan.
- Dust with icing sugar before serving.

INGREDIENTS
- 2mediumpotatoes or1 canwhite potatoes, rinsed
- 2-3tablespoonsonion soup mix, with dehydrated onions
- 2tablespoonssoy oil
- soy sauce
- black pepper
- garlic powder
- sesame seeds (optional)
DIRECTIONS
- Heat sesame oil in large frypan on a low flame.
- Add a few dashes of soy sauce; onion soup mix and stir.
- Evenly distribute mixture in the bottom of the pan.
- Slice potatoes into 1/4-inch slices, rinse and place flat in frypan.
- Sprinkle the rest of the onion soup mix on top of the potatoes and add pepper and garlic powder.
- Cover and let sit for approximately 5 minutes.
- Add a few dashes of soy sauce and using a spatula, gently lift and stir potatoes to mix seasonings.
- Remove from heat and cover for approximately 2 minutes.
- Serve hot.
- Notes: If you use raw potatoes, cooking time will be longer.
- The desired texture for the potatoes is fork tender.
- You can filter the onion soup mix by shaking it in a strainer to separate dehydrated onion from the powder.
- This way you can control the amount of seasonings you desire to add to your rice, sauces, onion dip, etc.
- To reduce sodium, use a ratio of 1 tablespoon of onion soup mix and 1 teaspoon of onion powder.
- Try this recipe with fresh baby spinach leaves added in Step 4.

- 1/4cupdill pickle relish
- 1/2cupMiracle Whip
- 1/4teaspoonlemon juice(or to taste)
- 1/2teaspoonmustard
DIRECTIONS
- Combine all ingredients in a small bowl.
- May add small amount of onion if desired.

INGREDIENTS
- 1 1/3cupscoconut
- 1/2cuppecans
- 2eggs
- 1/4cupbutter, melted
- 1/2cupcocoa
- 1 3/4cupssugar
- 3tablespoonscornstarch
- 1teaspoonvanilla
- 1/8teaspoonsalt
- 3/4cupevaporated milk
DIRECTIONS
- Mix coconut& pecans together& set aside.
- Put remaining ingredients in blender& blend til smooth.
- Pour in 9″ pie shell.
- Sprinkle with coconut& nuts.
- Bake at 375* for 45-50 minutes.

INGREDIENTS
- 12slicesbacon
- 2cups slicedfresh mushrooms
- 6green onions, thinly sliced
- 2clovesgarlic, minced
- 1/2cuplight cream
- 1 (8 ounce)packagecream cheese, cubed
- 1/2teaspoondried basil
- 1/2teaspoondried thyme
- salt & freshly ground black pepper
- 2mediumtomatoes, finely chopped
- 1 (16 ounce)packagewide egg noodles, cooked according to package directions and drained
DIRECTIONS
- Cook bacon in a large skillet until crisp, remove with a slotted spoon, drain on paper towels then crumble.
- Pour off all but 2 tbls of the bacon fat, add mushrooms and cook over high heat until they begin to brown.
- Reduce heat to medium low, add green onion and garlic, cook and stir 1-2 minutes.
- Add cream, cream cheese, basil, thyme and bacon, reduce heat to low and stir until cheese melts and sauce is smooth.
- Add tomatoe, season with salt and pepper, pour over hot noodles and serve.
