INGREDIENTS
- 2lbs rawcrayfish tailsor shrimp
- 2eggs
- 1cupdry white wine
- 1/2cup finecornmeal
- 1/2cupflour
- 2teaspoonsfresh chives
- 1clove mincedgarlic
- 1/2teaspoonthyme
- 1/4teaspoonsalt
- 1/4teaspooncayenne pepper
- 1/4teaspoonpepper
- oil(for deep frying)
DIRECTIONS
- Rinse the crawfish tails or shrimp in cold water, drain well ans set aside.
- Whisk together the eggs and wine in a small bowl, set aside.
- Combine the cornmeal, flour,chives,garlic, thyme,salt, pepper and cayenne pepper.
- Gradually whisk in the egg mixture, blending well.
- Cover the batter and let stand at room temperature for about one hour.
- Heat 2-3 inches oil in large frying pan to 375 degrees.
- Dip the seafood into the batter and fry in small batches 2-3 minutes, turning until golden brown.
- Drain on paper towels.

INGREDIENTS
- 2cupsall-purpose flour
- 1/2cupsugar
- 2teaspoonsbaking powder
- 1teaspoonsalt
- 1/4cupbutter
- 1/4cupshortening
- 1/2cupmilk
- 1/2teaspoonvanilla
- 2eggs, beaten
- 1 1/2cupsblueberries
DIRECTIONS
- Preheat oven to 400 degrees.
- In medium bowl, combine dry ingredients and mix well.
- Cut in butter and shortening until mixture resembles fine crumbs.
- Combine milk, vanilla and eggs and blueberries.
- Add to dry mix until just moistened.
- Spoon into prepared pan filling each cup 3/4 full.
- Bake 30-35 minutes.
- Cool five minutes before serving.
- *Variation: leave out the blueberries and reduce cooking time to 20-25 minutes.

INGREDIENTS
- 2/3cupshortening
- 12tablespoonsunsalted butter, softened
- 3/4cupgranulated sugar
- 1largeegg
- 1/4teaspoonvanilla extract
- 1/2teaspoonbaking powder
- 3 1/2cupsall-purpose flour
- 2teaspoonsginger
- 1teaspoonground black pepper
- 2teaspoonscinnamon
- 1/2teaspoonsalt
- 1/2cupnutella
- 2 1/2tablespoonsmilk
- 2tablespoonsconfectioners’ sugar, sifted
DIRECTIONS
- To make Nutella Spiced Sugar Cookies: In a medium bowl, cream the butter, shortening and sugar with a hand mixer on high speed for 2 minutes.
- Add the egg and vanilla and beat for 1 minute.
- Stir in the remaining dry ingredients on low speed just until combined.
- divide the dough in half and flatten each piece slightly (about 1-inch thickness), cover tightly with plastic wrap and refrigerate for about 1 hour.
- Preheat the oven to 375°F.
- Roll out each piece on wax paper to 1/8-inch thickness.
- Use cookie cutters to cut desired shapes.
- For Halloween bats, pumpkins, headstones and owls are appropriate shapes.
- Bake on on cookie sheet for 10 minutes.
- Cool completely.
- To Make the Glaze: Heat the Nutella, milk and confectioner’s sugar in a small pot over low heat until combined and slightly warm.
- Spread each cookie with the glaze and decorate as desired with jimmies, sprinkles, mini chips, or halloween candy.
- Allow to set on a wire rack.
- Store in an airtight container.
- Theese cookies can be baked ahead of time and frozen, unglazed for up to 6 weeks if stored in an airtight container.

INGREDIENTS
- 1/2cup mincedonions
- 1cupsour cream
- 1clovegarlic, minced
- 1/4cupbutter
- 1lbground beef
- 2tablespoonsflour
- 1teaspoonsalt
- 1/4teaspoonpepper
- 2-3cansmushroom stems and pieces, drained
- 1cancream of mushroom soup(I always use the top name brand.)
- 1bagegg noodles, cooked
DIRECTIONS
- Saute onion and garlic in butter over medium heat.
- stir in ground beef and brown stir in flour, salt, mushrooms, and pepper cook 5 minutes, then stir in soup simmer uncovered 10 minutes stir in sour cream untill heated, serve over noodles.

- 40mushrooms, stems removed
- 1/2cupbutter, melted
- 10ounces bulksage sausage
- 1tablespoon choppedgreen onions
- 1/4teaspoonpepper
- 1clovegarlic, minced
- 1tablespoonfresh parsley
- 8ouncescream cheese
DIRECTIONS
- Place mushrooms in shallow baking dish.
- Brush with melted butter.
- Brown sausage, onions and garlic in skillet.
- Drain.
- Mix in pepper, parsley and cream cheese.
- Heat to blend all ingredients and melt cheese.
- Stuff mushrooms with filling.
