INGREDIENTS
- 2 1/2cupsall-purpose flour
- 1/2cupunsweetened cocoa powder
- 1 1/2teaspoonsbaking powder
- 1teaspoonbaking soda
- 1teaspooncinnamon
- 3/4teaspoonsalt
- 1 1/2cupssugar
- 3/4cupfat free egg substitute or3 eggs
- 1/2cupunsweetened applesauce
- 1/3cupvegetable oil
- 2teaspoonsvanilla
- 2cups gratedzucchini, packed
- 1/2cupmini chocolate chips
DIRECTIONS
- Preheat oven to 350F, spray 2 8×4 loaf pans with non-stick spray.
- In a large bowl, combine flour, cocoa, baking powder, baking soda, cinnamon and salt.
- In a medium bowl, whisk together sugar, egg substitute, applesauce, vegetable oil and vanilla.
- Stir in zucchini.
- Add wet ingredients to dry ingredients.
- Stir just until dry ingredients are moistened.
- DO NOT OVERMIX.
- Fold in chocolate chips.
- Spread batter evenly in prepared pans.
- Bake for 50 minutes, or until toothpick test done.
- Cool for 5 minutes in pans.
- Remove from pans, let cool before serving.

INGREDIENTS
- 1kg mediumprawns
- 50ggarlic, minced(1/2 cup)
- 2teaspoonswhite pepper
- 1teaspoonsalt
- 2tablespoonscanola oil
DIRECTIONS
- Trim prawn whiskers and devein by making a slit along the center of back (leaving shell intact).
- Rinse.
- Mix garlic, pepper, salt together.
- Season prawn with the mixture, taking care to place some of the mixture inside the slits.
- Set aside for 30 minutes or more.
- Heat oil in wok or skillet and quickly saute prawns until they turn pink.
- Do not overcook.
- Serve with plain rice.

INGREDIENTS

For the Olives
- 1/2lbkalamata olives, drained
- 1/2lb crackedgreen olives, drained
- 1/4lb thassosolives, drained
- 3tablespoonsoregano
- 1/4teaspooncrushed red pepper flakes
- 1smallred onion, sliced into thin wedges and seperated
- 2clovesgarlic, minced
- 1mediumlemon, juice of
- 1lemon, zest of
- 3tablespoons freshparsley, chopped well
- 1cupextra virgin olive oil
- 1teaspoonfresh ground black pepper

For the Feta and Tomatoes
- 2cups washedgrape tomatoes
- 3/4-1lbfeta, cut into 1/2 inch cubes or crumbled into medium chunks
- 6tablespoonsextra virgin olive oil
- 1lemon, juice of
- 1teaspoonoregano
- 1/2teaspoonfresh ground black pepper
DIRECTIONS
- For the Olives- Combine all ingredients in a large resealable freezer bag.
- Remove all the air you can and refrigerate for 24 hours, turning 2 or 3 times.
- For the Cheese and Tomatoes- Drizzle the feta and tomatoes with the oil and lemon juice.
- Sprinkle with the oregano and pepper, tossing well.
- Cover and let stand for 30 minutes at room temp.
- Combine the olives with the feta and tomatoes, tossing well.
- Serve.

INGREDIENTS

CRUST
- 3/4cupflour
- 1/4cup packedbrown sugar
- 1/4cupground almonds
- 1/4cupbutter

FILLING
- 1 (8 ounce)packagecream cheese, softened
- 1/2cupsugar
- 1egg
- 3-4tablespoonsfresh lime juice, use a little more for a stronger lime taste
- 2teaspoons gratedlime zest
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 8-in square cake pan.
- FOR CRUST: Combine flour, sugar and almonds in a mixing bowl.
- Cut in butter until mixture is crumbly.
- Press firmly in to prepared cake pan.
- Bake at 350 degrees for 15 mins.
- FOR FILLING: Beat all ingredients together at medium speed until smooth and creamy.
- Spread evenly over prepared crust.
- Bake for 15 mins, or until set.
- Cool on rack.
- Chill before cutting into small squares.
- Freezes well.

- 2cupsbrown sugar
- 2tablespoonsflour
- 1/2cupvinegar(white)
- 1/4cupwater
- 2tablespoonssoy sauce
- 2tablespoonsketchup
DIRECTIONS
- mix the four and sugar together first in a pan.
- Add remainging ingredients and stir well.
- Bring to a boil.
- Pour over meatballs, ribs etc.
