Chocolate Chip Zucchini Loaf Recipe

INGREDIENTS

  1. 2 1/2cupsall-purpose flour
  2. 1/2cupunsweetened cocoa powder
  3. 1 1/2teaspoonsbaking powder
  4. 1teaspoonbaking soda
  5. 1teaspooncinnamon
  6. 3/4teaspoonsalt
  7. 1 1/2cupssugar
  8. 3/4cupfat free egg substitute or3 eggs
  9. 1/2cupunsweetened applesauce
  10. 1/3cupvegetable oil
  11. 2teaspoonsvanilla
  12. 2cups gratedzucchini, packed
  13. 1/2cupmini chocolate chips

DIRECTIONS

  1. Preheat oven to 350F, spray 2 8×4 loaf pans with non-stick spray.
  2. In a large bowl, combine flour, cocoa, baking powder, baking soda, cinnamon and salt.
  3. In a medium bowl, whisk together sugar, egg substitute, applesauce, vegetable oil and vanilla.
  4. Stir in zucchini.
  5. Add wet ingredients to dry ingredients.
  6. Stir just until dry ingredients are moistened.
  7. DO NOT OVERMIX.
  8. Fold in chocolate chips.
  9. Spread batter evenly in prepared pans.
  10. Bake for 50 minutes, or until toothpick test done.
  11. Cool for 5 minutes in pans.
  12. Remove from pans, let cool before serving.

Garlic Pepper Prawns Recipe

INGREDIENTS

  1. 1kg mediumprawns
  2. 50ggarlic, minced(1/2 cup)
  3. 2teaspoonswhite pepper
  4. 1teaspoonsalt
  5. 2tablespoonscanola oil

DIRECTIONS

  1. Trim prawn whiskers and devein by making a slit along the center of back (leaving shell intact).
  2. Rinse.
  3. Mix garlic, pepper, salt together.
  4. Season prawn with the mixture, taking care to place some of the mixture inside the slits.
  5. Set aside for 30 minutes or more.
  6. Heat oil in wok or skillet and quickly saute prawns until they turn pink.
  7. Do not overcook.
  8. Serve with plain rice.

Marinated Greek Olives with Grape Tomatoes and Feta Cheese Recipe

INGREDIENTS

  1. For the Olives

  2. 1/2lbkalamata olives, drained
  3. 1/2lb crackedgreen olives, drained
  4. 1/4lb thassosolives, drained
  5. 3tablespoonsoregano
  6. 1/4teaspooncrushed red pepper flakes
  7. 1smallred onion, sliced into thin wedges and seperated
  8. 2clovesgarlic, minced
  9. 1mediumlemon, juice of
  10. 1lemon, zest of
  11. 3tablespoons freshparsley, chopped well
  12. 1cupextra virgin olive oil
  13. 1teaspoonfresh ground black pepper
  14. For the Feta and Tomatoes

  15. 2cups washedgrape tomatoes
  16. 3/4-1lbfeta, cut into 1/2 inch cubes or crumbled into medium chunks
  17. 6tablespoonsextra virgin olive oil
  18. 1lemon, juice of
  19. 1teaspoonoregano
  20. 1/2teaspoonfresh ground black pepper

DIRECTIONS

  1. For the Olives- Combine all ingredients in a large resealable freezer bag.
  2. Remove all the air you can and refrigerate for 24 hours, turning 2 or 3 times.
  3. For the Cheese and Tomatoes- Drizzle the feta and tomatoes with the oil and lemon juice.
  4. Sprinkle with the oregano and pepper, tossing well.
  5. Cover and let stand for 30 minutes at room temp.
  6. Combine the olives with the feta and tomatoes, tossing well.
  7. Serve.

Key Lime Cheesecake Squares Recipe

INGREDIENTS

  1. CRUST

  2. 3/4cupflour
  3. 1/4cup packedbrown sugar
  4. 1/4cupground almonds
  5. 1/4cupbutter
  6. FILLING

  7. 1 (8 ounce)packagecream cheese, softened
  8. 1/2cupsugar
  9. 1egg
  10. 3-4tablespoonsfresh lime juice, use a little more for a stronger lime taste
  11. 2teaspoons gratedlime zest

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Grease a 8-in square cake pan.
  3. FOR CRUST: Combine flour, sugar and almonds in a mixing bowl.
  4. Cut in butter until mixture is crumbly.
  5. Press firmly in to prepared cake pan.
  6. Bake at 350 degrees for 15 mins.
  7. FOR FILLING: Beat all ingredients together at medium speed until smooth and creamy.
  8. Spread evenly over prepared crust.
  9. Bake for 15 mins, or until set.
  10. Cool on rack.
  11. Chill before cutting into small squares.
  12. Freezes well.

  1. 2cupsbrown sugar
  2. 2tablespoonsflour
  3. 1/2cupvinegar(white)
  4. 1/4cupwater
  5. 2tablespoonssoy sauce
  6. 2tablespoonsketchup

DIRECTIONS

  1. mix the four and sugar together first in a pan.
  2. Add remainging ingredients and stir well.
  3. Bring to a boil.
  4. Pour over meatballs, ribs etc.
