Finnish Yellow Turnip Bake Recipe

INGREDIENTS

  1. 2medium yellowturnipsor rutabagas
  2. 2tablespoonsbutter
  3. 1cupmilk, preferably homogenized or half-and-half cream
  4. 1/2cupfine dry breadcrumbs
  5. 1tablespoongranulated sugar
  6. 1tablespoonbrown sugar
  7. 1teaspoonsalt
  8. 1/2teaspoonnutmeg
  9. 1/4teaspoonfresh ground black pepper
  10. 2tablespoonsbreadcrumbs
  11. 1tablespoon meltedbutter

DIRECTIONS

  1. Peel& cube turnip.
  2. You should have at least 9 cups.
  3. Place in a large saucepan& cover with water.
  4. Bring to a boil over high heat.
  5. Cover& reduce heat so water gently bubbles.
  6. Cook until tender, from 25-30 minutes.
  7. Then drain.
  8. Using potato masher or electric mixer, mash turnip.
  9. Stir in 2 tbsp butter until melted, then mix in milk.
  10. Stil 1/2 cup bread crumbs with sugars& seasonings.
  11. Stir into turnip.
  12. If baking right away, preheat oven to 350 degrees F.
  13. BUtter a 9×13″ baking dish or coat with cooking spray.
  14. Spread turnip evenly in pan and run fork over top to create a rough appearance.
  15. Sprinkle with 2 tbsp bread crumbs& drizzle with 1 tbsp melted butter.
  16. Bake uncovered in centre of oven until centre is hot& crumbs are golden-tipped- about 45 minutes.
  17. Serve right away with roast turkey, chicken, pork or beef.
  18. Note: To make ahead, prepare completely.
  19. Do not bake.
  20. Cover& refrigerate for up to 2 days.
  21. A cold casserole may need 55-60 minutes baking time.
  22. If frozen, turnip’s texture may soften& water out.

Grilled Portabello Mushrooms Recipe

INGREDIENTS

  1. 2largeportabella mushroom caps
  2. 2tablespoonsolive oil
  3. 1tablespoonsherry wine(NOT cooking sherry)
  4. salt and pepper

DIRECTIONS

  1. Wash mushrooms, remove stem, and scrape off the gills with a spoon.
  2. Slice into strips@ 1/2 inch wide.
  3. Combine olive oil and sherry.
  4. Pour over mushrooms and marinate@ 1 hour.
  5. Cook on a grill at medium heat 4-5 minutes per side.

Perfect Breakfast Pizza Recipe

INGREDIENTS

  1. 1lbsteak, strips(or fajita strips)
  2. 1 prepared pre-bakedprepared pizza crust(12-inch)
  3. 1canblack beans, drained
  4. 1/3cupsalsa
  5. 4eggs
  6. 1/2cuptomatoes, seeded and chopped
  7. 1tablespoon choppedfresh jalapenos
  8. 1cupmonterey jack cheese, shredded
  9. 1tablespooncilantro, chopped

DIRECTIONS

  1. Preheat oven to 450 degrees.
  2. In a skillet, scramble eggs.
  3. Set aside.
  4. Set aside 2 tablespoons black beans for garnish.
  5. In a small bowl, mash remaining beans with a fork until smooth.
  6. Place pizza shell on a cookie sheet and layer with mashed beans, salsa and scrambled eggs, prepared steak strips, tomatoes, jalapenos and cheese.
  7. Top with cilantro and reserved whole beans.
  8. Bake at 450 degrees for 8 to 10 minutes or until cheese melts.

Greek Garden Salad Recipe

INGREDIENTS

  1. 2largetomatoes, chopped
  2. 3/4cup choppedcucumbers
  3. 1/2cup choppedgreen bell peppers
  4. 1/2cup crumbledfeta cheeseor blue cheese
  5. 1/4cup thinly slicedgreen onions
  6. 1/4cupsliced ripe olives
  7. 1/2cupItalian salad dressing
  8. 1/8teaspoondried oregano
  9. 1leaflettuce, optional

DIRECTIONS

  1. In a bowl combine the first seven ingredients.
  2. Just before serving, add salad dressing and oregeno; toss to coat.
  3. Serve in a lettuce lined bowl if desired.
