INGREDIENTS
- 2medium yellowturnipsor rutabagas
- 2tablespoonsbutter
- 1cupmilk, preferably homogenized or half-and-half cream
- 1/2cupfine dry breadcrumbs
- 1tablespoongranulated sugar
- 1tablespoonbrown sugar
- 1teaspoonsalt
- 1/2teaspoonnutmeg
- 1/4teaspoonfresh ground black pepper
- 2tablespoonsbreadcrumbs
- 1tablespoon meltedbutter
DIRECTIONS
- Peel& cube turnip.
- You should have at least 9 cups.
- Place in a large saucepan& cover with water.
- Bring to a boil over high heat.
- Cover& reduce heat so water gently bubbles.
- Cook until tender, from 25-30 minutes.
- Then drain.
- Using potato masher or electric mixer, mash turnip.
- Stir in 2 tbsp butter until melted, then mix in milk.
- Stil 1/2 cup bread crumbs with sugars& seasonings.
- Stir into turnip.
- If baking right away, preheat oven to 350 degrees F.
- BUtter a 9×13″ baking dish or coat with cooking spray.
- Spread turnip evenly in pan and run fork over top to create a rough appearance.
- Sprinkle with 2 tbsp bread crumbs& drizzle with 1 tbsp melted butter.
- Bake uncovered in centre of oven until centre is hot& crumbs are golden-tipped- about 45 minutes.
- Serve right away with roast turkey, chicken, pork or beef.
- Note: To make ahead, prepare completely.
- Do not bake.
- Cover& refrigerate for up to 2 days.
- A cold casserole may need 55-60 minutes baking time.
- If frozen, turnip’s texture may soften& water out.

INGREDIENTS
- 2largeportabella mushroom caps
- 2tablespoonsolive oil
- 1tablespoonsherry wine(NOT cooking sherry)
- salt and pepper
DIRECTIONS
- Wash mushrooms, remove stem, and scrape off the gills with a spoon.
- Slice into strips@ 1/2 inch wide.
- Combine olive oil and sherry.
- Pour over mushrooms and marinate@ 1 hour.
- Cook on a grill at medium heat 4-5 minutes per side.

INGREDIENTS
- 1lbsteak, strips(or fajita strips)
- 1 prepared pre-bakedprepared pizza crust(12-inch)
- 1canblack beans, drained
- 1/3cupsalsa
- 4eggs
- 1/2cuptomatoes, seeded and chopped
- 1tablespoon choppedfresh jalapenos
- 1cupmonterey jack cheese, shredded
- 1tablespooncilantro, chopped
DIRECTIONS
- Preheat oven to 450 degrees.
- In a skillet, scramble eggs.
- Set aside.
- Set aside 2 tablespoons black beans for garnish.
- In a small bowl, mash remaining beans with a fork until smooth.
- Place pizza shell on a cookie sheet and layer with mashed beans, salsa and scrambled eggs, prepared steak strips, tomatoes, jalapenos and cheese.
- Top with cilantro and reserved whole beans.
- Bake at 450 degrees for 8 to 10 minutes or until cheese melts.

INGREDIENTS
- 2largetomatoes, chopped
- 3/4cup choppedcucumbers
- 1/2cup choppedgreen bell peppers
- 1/2cup crumbledfeta cheeseor blue cheese
- 1/4cup thinly slicedgreen onions
- 1/4cupsliced ripe olives
- 1/2cupItalian salad dressing
- 1/8teaspoondried oregano
- 1leaflettuce, optional
DIRECTIONS
- In a bowl combine the first seven ingredients.
- Just before serving, add salad dressing and oregeno; toss to coat.
- Serve in a lettuce lined bowl if desired.

- 1-2tablespoonolive oil, to taste
- 1tablespoonhoney
- 2-3teaspoonslime juice, to taste
- 1/4teaspoonground cumin

- Mix all ingredients together well.
