INGREDIENTS
- 2 (14 ounce)pork tenderloins

Chutney
- 1mango or1 (12ounce)canmangoes, slices cut into 1/2 inch cubes
- 1/2cupwhite sugar
- 1/4cup finely dicedred onions
- 2tablespoonswhite vinegar
- 1/4cup finely choppedgreen peppers
- 1/4cup finely choppedred peppers
- 1tablespoon gratedfresh ginger
- 1/2teaspoonground ginger
- 1/8teaspoonground turmeric
- 1/8teaspoonground cloves
- fresh ground black pepper, to taste
DIRECTIONS
- Chutney: Peel, halve and seed mango, cut into 1/2 inch cubes.
- Combine mango with all the other ingredients in a deep heavy sauce pot.
- Cook, uncovered until it begins to simmer gently.
- Continue cooking for about 10 minutes, simmering until thickened.
- Cool, cover tightly and refrigerate.
- It will keep for about 1 week in the refrigerator.
- Bring to room temperature or warm for serving.
- Tederloins: Season lightly with salt and pepper.
- Roast pork on a rack in a shallow roasting pan.
- Insert meat thermometer.
- Roast uncovered in a 350 degree oven for 25-35 minutes or until the thermometer registers 145-155 degrees.
- Slice and top with chutney.

INGREDIENTS
- 1 1/2cups coursesea salt
- 1 1/2tablespoonsolive oil
- 1mediumwhite onion, unpeeled
- 4idaho potatoes, about 8 ounces each,scrubbed and unpeeled
- 4-6tablespoonssour cream
DIRECTIONS
- Preheat oven to 400 degrees Farenheit.
- Place the salt in an even layer over the bottom of a 12-inch cast-iron skillet.
- Pour the olive oil into a medium bowl.
- Dip onion in oil to coat all over.
- Place onion on salt in the center of the skillet, and roast in oven for 10 minutes.
- Coat the potatoes with the remaining oil and set them around the onion in the skillet.
- Roast until the onion is tender and potatoes are cooked through, about an hour and 10 minutes.
- Using tongs or a kitchen spoon, transfer the onion to a cutting board.
- Measure 1/4 teaspoon of salt from the skillet and set aside.
- Turn off the oven, and return the skillet with the potatoes to the oven, leaving door slightly ajar.
- Peel and coursely chop the onion.
- Transfer to a small bowl and season with the reserved salt.
- Place the potatoes on a serving platter, split and open each.
- Spoon one-quarter of the salted onion into each potato.
- Top with sour cream, serve hot.

INGREDIENTS

- seasoning saltor table salt
- 1/8teaspooncayenne pepper
- 3cups choppedonions
- 2carrots, coarsley chopped
- 1clovegarlic
- 2tablespoonsflour
- 2tablespoonsHungarian paprika
- 1/2teaspoonmarjoram
- 2tablespoonstomato paste
- 14ouncesbeef broth
- 1cupwater
- 1package ‘chateau’ potatodumplings (optional)
DIRECTIONS
- Brown meat in butter and oil in skillet or pot Season with Salt Add Onions, Carrots and Garlic Cook until onions are soft Add Flour, Paprika, and Majoram Stir for 3 minutes.
- Add remaining ingredients Simmer covered for 2 hours or until meat is tender Add frozen’Chateau’ potato dumplings (optional) Cover and simmer for additional 30 minutes with optional dumplings Goulash is even better when made the day before.

INGREDIENTS
- 40small fresh missionfigs
- 4ouncesmanchego cheeseor blue cheese
- 20slicesprosciutto, halved lengthwise
- fresh ground black pepper
DIRECTIONS
- Make a small slit in the side of each fig and stuff a raisin-size piece of cheese in the opening.
- Wrap a piece of prosciutto around each to enclose like a little cocoon.
- Stand the figs on a sheet pan.
- Bake for 12 to 15 minutes so the prosciutto melts slightly and forms a skin around the figs.
- Season with lots of ground black pepper.

INGREDIENTS
- 1egg, separated
- 1cupbrown sugar, plus
- 2tablespoonsbrown sugar
- 1/4cupbutter
- 1/2cupmilk
- 1teaspoonvanilla
- 1teaspoonbaking powder
- 1 1/4cupsflour
- 2cups finely choppeddates
DIRECTIONS
- Mix the egg yolk, one cup brown sugar, butter, milk, vanilla, baking powder and flour in a bowl.
- Spread in a greased baking pan (8-9 inches square) and cover with the dates.
- Beat the egg white and two tablespoons brown sugar together.
- Pour the mixture over the dates.
- Cook until the top is brown, at 350 F for about 30 minutes.
