INGREDIENTS
- 2apples, peeled and finely chopped
- 1cup choppeddates
- 1teaspoonbicarbonate of soda
- 1cupboiling water
- 1cupsugar
- 1egg
- 1teaspoonvanilla
- 1 1/2cupsflour
- 1/2teaspoonsalt
- 60gbutter
- 1/4cuppecan nuts (optional)

Topping
- 60gbutter
- 1/2cupbrown sugar, firmly packed
- 1-2tablespoonmilk
- 1/2cup shreddedcoconut
DIRECTIONS
- Combine apples, dates, bicarb soda and water.
- Allow to cool to lukewarm.
- Line an 8″ 20cm deep cake tin.
- Heat oven to 180 degrees C.
- (350 degrees F).
- Cream butter and sugar until light and fluffy.
- Add egg and vanilla and beat well.
- Sift flour and salt, beat in alternately with apple mixture.
- Pour into tin and bake for approximately 1 hour or until cooked.
- (layer pecan nuts on top pf cake before pouring topping on) Topping: Make topping by combining butter, sugar, milk and coconut.
- Use the microwave or the stove top.
- Heat over low temp till butter and sugar is melted.
- Spread over hot cake and return to oven for a further 20 minutes or until topping is golden brown.

INGREDIENTS
- 1 3/4cupsall-purpose flour
- 2tablespoonssugar
- 1 1/2teaspoonsbaking powder
- 1/2teaspoonsalt
- 1/4teaspoonbaking soda
- 1/3cup coldbutteror margarine
- 1cupbuttermilk
- 1cup shreddedcheddar cheese(4 ounces)
- 1cup diced peeledapples
DIRECTIONS
- In a bowl, combine the first five ingredients.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in buttermilk just until moistened.
- Gently fold in the cheese and apples.
- Turn onto a floured surface; knead 10 times.
- Pat into a 9-inch circle.
- Cut into eight wedges.
- Separate wedges and place on a greased baking sheet.
- Bake at 450 degrees for 12-15 minutes or until golden brown.

INGREDIENTS
- 1smallcayenne pepper, chopped with seeds
- 1/2cupvegetable oil
- 2tablespoons gratedbeeswax
DIRECTIONS
- Combine pepper with the oil and heat gently in microwave or stovetop.
- Do not boil.
- Let sit until cooled.
- Strain and dicard the pepper and seeds.
- Add beeswax and heat again till wax is melted.
- Stri well, spoon into a clean container, and let cool.
- To use: Massage a small amount into your muscles and joints.
- If you would like a thinner consistency, reheat with added vegetable oil.
- Be careful working with peppers and wash hands thoroughly after use!

INGREDIENTS
- 12-15 just ripeplum tomatoes
- 3tablespoonsextra-virgin olive oil
- salt
- sugar
- dried oregano
- dried basil
- garlic powder
DIRECTIONS
- Preheat oven to 200 F.
- Line baking sheet with parchment paper.
- Lightly oil parchment paper.
- Cut plum tomatoes in half lengthwise and remove seeds.
- Arrange tomatoes, cut side up, sprinkle lightly with salt, sugar, dried oregano, dried basil and garlic powder.
- Place tomatoes cut side DOWN on oiled parchment paper.
- Bake in oven for 2 hours.
- Remove from oven and turn tomatoes so that the cut side is UP.
- Bake for additional 2-6 hours (depending on how dried you want the tomatoes).
- Remove from oven and cool completely.
- To store, transfer tomatoes to jar and cover with olive oil.

INGREDIENTS
- 1 (8 ounce)packagecream cheese, softened
- 3/4cupbutter or margarine, softened
- 1egg, separated
- 3tablespoons coldwater, divided
- 2cupsall-purpose flour
- 7cups thinly slicedtart apples(about 6 medium)
- 3/4cupsugar
- 1 1/2teaspoonsground cinnamon
- additionalsugar, optional
- vanilla ice cream, optional
DIRECTIONS
- In a mixing bowl, beat cream cheese and butter until smooth.
- Refrigerate the egg white.
- Beat the egg yolk and 2 tablespoons water into cream cheese mixture.
- Gradually beat in flour until well blended.
- Shape pastry into a ball.
- Cover and refrigerate for 1 hour.
- Meanwhile, in a large skillet, toss apples with sugar and cinnamon.
- Bring to a boil.
- Reduce heat; cover and simmer for 8-10 minutes or until apples are tender.
- Remove from the heat.
- Turn the pastry onto a lightly floured surface.
- Roll to 1/8-inch thickness; cut into 4-inch circles.
- Top each circle with apple mixture.
- Brush edges of pastry with water; fold pastry over filling and seal edges well.
- In a small bowl, whisk egg white and remaining water; brush over pastry.
- Sprinkle with additional sugar, if desired.
- Place on greased baking sheets.
- Bake at 375 degrees for 18-22 minutes, or until golden brown.
- Remove to wire racks to cool.
- Serve with ice cream, if desired.
