Baked Chicken Recipe

INGREDIENTS

  1. 1/2cupbutteror margarine
  2. 3/4cupflour
  3. 1 1/2teaspoonssalt
  4. 2teaspoonspaprika
  5. 1/4teaspoonpepper
  6. 2 (3 lb)fryer chicken, cut into 8 pieces each

DIRECTIONS

  1. In a large roasting pan (or two 9×13 pans), in a 425° oven, melt the butter or margarine.
  2. Mix flour, salt, paprika and pepper in a heavy-duty plastic bag; shake chicken pieces in the bag, a few at a time, until evenly coated.
  3. In the pan (s), place the chicken, skin side down, in the melted butter; bake 30 minutes.
  4. Turn chicken pieces and bake 15 minutes more until pieces are fork-tender.
  5. I usually make gravy from the de-greased pan juices, using some or all of the leftover flour and some chicken stock.

Waikiki Noodle Salad Recipe

INGREDIENTS

  1. 3 (3 ounce)packagesoriental-flavor instant ramen noodles
  2. 3teaspoonsvegetable oil, divided
  3. 2ouncesfresh snow peas, trimmed & cut diagionally into 1/2 inch pieces
  4. 1smallcarrot, peeled & shredded
  5. 1/2mediumcucumber, halved,seeded and cut crosswise into thin slices
  6. 1/2smallred bell pepper, cut into short thin strips
  7. 1 (8 ounce)cancrushed pineapple
  8. 1/4cupteriyaki marinadeor teriyaki sauce
  9. 4teaspoonsrice vinegar
  10. 1 1/2teaspoonsoriental sesame oil
  11. 3/4teaspoongarlic powder

DIRECTIONS

  1. Break noodle blocks into quarters; discard soup packets (or save for stock).
  2. Cook noodles in 2 quarts boiling water for 3 minutes, stirring occassionally; drain.
  3. Rinse with cold water; drain thoroughly.
  4. Place noodles in a large bowl; toss with 1 teaspoon vegetable oil.
  5. Place snow peas in bowl, bring 1 cup water to boil, pour over snow peas and let stand for 30 seconds.
  6. Drain, cool under cold water and drain thoroughly.
  7. Add snow peas, carrot, cucumber, and bell pepper to noodles.
  8. Cover and refrigerate.
  9. Reserve 2 tablespoons juice from crushed pineapple, drain thoroughly.
  10. Combine reserved juice, teriyaki, vinegar, sesame oil, garlic powder, and remaining 2 teaspoons oil.
  11. Pour dressing over noodle mixture, along with drained pineapple.
  12. Mix well to coat all ingredients well and chill.

Mexican “Un Fried ” Ice Cream Recipe

INGREDIENTS

  1. vanilla ice cream
  2. Rice Krispies
  3. honey
  4. cinnamon

DIRECTIONS

  1. Make large balls of vanilla ice cream.
  2. Roll in rice krispies.
  3. Let sit in freezer until very hard.
  4. Mix cinnamon in honey.
  5. Pour over ice cream balls.

Spinach Sauce for Pasta Recipe

INGREDIENTS

  1. 1/4cupbutteror margarine
  2. 1 (10 ounce)packagefrozen chopped spinach
  3. 1teaspoonsalt
  4. 1cupricotta cheese
  5. 1/4cup gratedparmesan cheese
  6. 1/4cupmilk
  7. 1/8teaspoonground nutmeg

DIRECTIONS

  1. In a 2-qt.
  2. saucepan over medium heat, in hot butter, cook spinach and salt 10 minutes.
  3. Reduce heat to low; add remaining ingredients; mix sauce well; cook sauce until just heated through, do not boil!

Creamy Maple Cranberry Oatmeal Recipe

INGREDIENTS

  1. 3 1/2cupsmilkor soy milk
  2. 1/4teaspoonsalt (optional)
  3. 2cupsoats(quick or old fashioned, uncooked)
  4. 1/2cupdried cranberries(such as Craisins)
  5. 1/3cupmaple syrup
  6. 1/4cuptoasted wheat germ

DIRECTIONS

  1. In medium saucepan, bring milk and salt to a gentle boil (Watch carefully).
  2. Stir in oats, cranberries, and maple syrup.
  3. Return to a boil; reduce heat to medium.
  4. Cook 1 minute for quick oats, 5 minutes for old fashioned oats or until most of milk is absorbed, stirring occasionally.
  5. Let stand until desired consistency.
  6. Stir in wheat germ.
  7. Spoon oatmeal into four cereal bowls.
  8. Drizzle with additional syrup, if desired.
  9. Serve with milk or yogurt, if desired.
  10. MICROWAVE DIRECTIONS: In 3-quart microwaveable bowl, combine all ingredients except wheat germ.
  11. Microwave on HIGH 6 to 7 minutes for quick oats and 9 to 10 minutes for old fashioned oats or until most of liquid is absorbed.
  12. Let stand until desired consistency.
  13. Stir in wheat germ.
