INGREDIENTS
- 1/2cupbutteror margarine
- 3/4cupflour
- 1 1/2teaspoonssalt
- 2teaspoonspaprika
- 1/4teaspoonpepper
- 2 (3 lb)fryer chicken, cut into 8 pieces each
DIRECTIONS
- In a large roasting pan (or two 9×13 pans), in a 425° oven, melt the butter or margarine.
- Mix flour, salt, paprika and pepper in a heavy-duty plastic bag; shake chicken pieces in the bag, a few at a time, until evenly coated.
- In the pan (s), place the chicken, skin side down, in the melted butter; bake 30 minutes.
- Turn chicken pieces and bake 15 minutes more until pieces are fork-tender.
- I usually make gravy from the de-greased pan juices, using some or all of the leftover flour and some chicken stock.

INGREDIENTS
- 3 (3 ounce)packagesoriental-flavor instant ramen noodles
- 3teaspoonsvegetable oil, divided
- 2ouncesfresh snow peas, trimmed & cut diagionally into 1/2 inch pieces
- 1smallcarrot, peeled & shredded
- 1/2mediumcucumber, halved,seeded and cut crosswise into thin slices
- 1/2smallred bell pepper, cut into short thin strips
- 1 (8 ounce)cancrushed pineapple
- 1/4cupteriyaki marinadeor teriyaki sauce
- 4teaspoonsrice vinegar
- 1 1/2teaspoonsoriental sesame oil
- 3/4teaspoongarlic powder
DIRECTIONS
- Break noodle blocks into quarters; discard soup packets (or save for stock).
- Cook noodles in 2 quarts boiling water for 3 minutes, stirring occassionally; drain.
- Rinse with cold water; drain thoroughly.
- Place noodles in a large bowl; toss with 1 teaspoon vegetable oil.
- Place snow peas in bowl, bring 1 cup water to boil, pour over snow peas and let stand for 30 seconds.
- Drain, cool under cold water and drain thoroughly.
- Add snow peas, carrot, cucumber, and bell pepper to noodles.
- Cover and refrigerate.
- Reserve 2 tablespoons juice from crushed pineapple, drain thoroughly.
- Combine reserved juice, teriyaki, vinegar, sesame oil, garlic powder, and remaining 2 teaspoons oil.
- Pour dressing over noodle mixture, along with drained pineapple.
- Mix well to coat all ingredients well and chill.

INGREDIENTS
- vanilla ice cream
- Rice Krispies
- honey
- cinnamon
DIRECTIONS
- Make large balls of vanilla ice cream.
- Roll in rice krispies.
- Let sit in freezer until very hard.
- Mix cinnamon in honey.
- Pour over ice cream balls.

INGREDIENTS
- 1/4cupbutteror margarine
- 1 (10 ounce)packagefrozen chopped spinach
- 1teaspoonsalt
- 1cupricotta cheese
- 1/4cup gratedparmesan cheese
- 1/4cupmilk
- 1/8teaspoonground nutmeg
DIRECTIONS
- In a 2-qt.
- saucepan over medium heat, in hot butter, cook spinach and salt 10 minutes.
- Reduce heat to low; add remaining ingredients; mix sauce well; cook sauce until just heated through, do not boil!

INGREDIENTS
- 3 1/2cupsmilkor soy milk
- 1/4teaspoonsalt (optional)
- 2cupsoats(quick or old fashioned, uncooked)
- 1/2cupdried cranberries(such as Craisins)
- 1/3cupmaple syrup
- 1/4cuptoasted wheat germ
DIRECTIONS
- In medium saucepan, bring milk and salt to a gentle boil (Watch carefully).
- Stir in oats, cranberries, and maple syrup.
- Return to a boil; reduce heat to medium.
- Cook 1 minute for quick oats, 5 minutes for old fashioned oats or until most of milk is absorbed, stirring occasionally.
- Let stand until desired consistency.
- Stir in wheat germ.
- Spoon oatmeal into four cereal bowls.
- Drizzle with additional syrup, if desired.
- Serve with milk or yogurt, if desired.
- MICROWAVE DIRECTIONS: In 3-quart microwaveable bowl, combine all ingredients except wheat germ.
- Microwave on HIGH 6 to 7 minutes for quick oats and 9 to 10 minutes for old fashioned oats or until most of liquid is absorbed.
- Let stand until desired consistency.
- Stir in wheat germ.
