Oh my, Apple Pie Recipe

INGREDIENTS

  1. 4cupssugar
  2. 2gallonsapple cider(not distilled!)
  3. 1gallonapple juice
  4. 9-10cinnamon sticks
  5. 1 (2 5/8 liter)bottlevodka
  6. 375mlBacardi 151 rum

DIRECTIONS

  1. Bring sugar, cider, apple juice and cinnamon sticks to a boil.
  2. Cool completely.
  3. Add vodka and rum.
  4. Be sure to refrigerate.

Krab Cakes Recipe

INGREDIENTS

  1. 16ouncesimitation crabmeat, chopped to rice-like consistency in food processor
  2. 3scallions, chopped
  3. 1tablespoondried dill
  4. 1 1/2teaspoonsOld Bay Seasoning
  5. 1/4cupseasoned dry bread crumbsor plain breadcrumbs
  6. 1/4cupmayonnaise
  7. 1egg
  8. salt, to taste
  9. white pepper, to taste
  10. flour, for dredging
  11. vegetable oil, for frying

DIRECTIONS

  1. Mix well all ingredients except flour and oil.
  2. Shape krab mixture into four large patties.
  3. Refrigerate for 1/2 hour or longer.
  4. Drege each pattie in flour, coating thoroughly.
  5. Fry patties in hot oil until nicely browned.

Colorful Mango Salsa Recipe

INGREDIENTS

  1. 1/2cup hotjalapeno jelly
  2. 3tablespoonsfresh lime juice
  3. 2 1/2cups chopped peeled pittedmangoes
  4. 1 1/4cups choppedred bell peppers
  5. 3/4cup choppedred onions
  6. 1/3cup choppedfresh cilantro
  7. 1jalapeno chile, minced

DIRECTIONS

  1. Whisk jelly and lime juice in large bowl.
  2. Mix in all remaining ingredients.
  3. Season to taste with salt and pepper.
  4. (Can be made 2 hours ahead. Cover; chill.).

Lime Mousse Brownie Dessert Recipe

INGREDIENTS

  1. Base

  2. 1/2cupbutter
  3. 3ouncesunsweetened chocolate
  4. 1 1/4cupssugar
  5. 3eggs
  6. 2/3cupall-purpose flour
  7. 1/4teaspoonbaking powder
  8. Mousse

  9. 1 (15 ml)packetunflavored gelatin(one tablespoon is in a packet)
  10. 1/2cupsugar
  11. 4eggs, separated
  12. 1/2cup freshly squeezedlime juice(you’ll need 4 or 5 limes)
  13. 2teaspoons freshly gratedlime zest
  14. 1/2cupsugar
  15. 1/2cupwhipping cream

DIRECTIONS

  1. First, make the base.
  2. Preheat oven to 350F; spray a 10-inch springform pan with nonstick cooking spray (like Pam) and set aside.
  3. In a saucepan over low heat, melt chocolate and butter; stir frequently.
  4. Remove from heat and stir in sugar, then stir in eggs, flour and baking powder; combine well until smooth.
  5. Spread in prepared springform pan and bake in preheated oven for 20 to 25 minutes, or until just set; mine was perfect after 20 minutes.
  6. Set pan aside for base to cool.
  7. Next, make mousse.
  8. In a small saucepan, stir together gelatin, 1/2 cup sugar, 4 egg yolks (you’ll need the whites too, see below) and the freshly squeezed juice.
  9. Cook over medium heat, constantly whisking, until slightly thickened, about 4 or 5 minutes.
  10. This mixture thickens more on cooling, so remove from heat just as it starts to thicken.
  11. Stir in zest.
  12. Pour mixture into a bowl (the pan retains too much heat) and place bowl in refrigerator just until mixture starts to set; this takes about 15 minutes or so.
  13. Meanwhile, beat reserved egg whites and second amount of sugar (1/2 cup) until mixture has stiff peaks.
  14. In another mixing bowl, beat whipping cream until stiff.
  15. Fold whipped cream gently into gelatin mixture (or fold gelatin mixture into whipped cream, I don’t think it makes a difference), then fold this mixture into the stiffly beaten egg whites; be gentle but be thorough.
  16. Spread mousse over the cooled base.
  17. Cover and refrigerate for several hours until set, or overnight.
  18. To serve, place on round serving platter, run a knife around pan, between mousse and pan just to make sure it’s not sticking (it shouldn’t stick, though) and then remove the springform pan’s side.
  19. Garnish as desired; raw lime slices look nice, as does rosettes of stiffly beaten whipped cream.
  20. It also looks good just plain.
  21. lemon lovers can replace the juice and zest of the limes with freshly squeezed lemon juice and lemon zest.

Worm Sandwiches Recipe

INGREDIENTS

  1. 1 (1 lb)packagehot dogs
  2. 1 (8 count)packagehotdog buns
  3. water, to boil hot dogs
  4. 1/4cupketchup (optional)

DIRECTIONS

  1. Slice hot dogs into long strips lengthwise.
  2. Boil strips in water until they curl, and look like worms.
  3. Toss hot strips with ketchup to make them look even grosser!
  4. Serve on buns.
