INGREDIENTS
- 2 1/2lbschicken wings, separated
- 4tablespoonssoy sauce
- 4tablespoonsdry sherryor mirin
- 1/2cupchicken broth
- 1largelemon, juice of, and grated rind of
- 3tablespoonssugar
- 1/2tablespoonsalt
- 2teaspoonswater
- 2teaspoonscornstarch
- 1teaspoonsesame oil
- oil, to stir fry
- 3teaspoonsginger
- 2teaspoonsgarlic powder
DIRECTIONS
- Mix soy sauce, sherry, broth, lemon juice and rind, sugar, salt, water, cornstarch, and sesame oil in a bowl.
- Heat skillet and add oil.
- Stir fry wings until fried on both sides.
- Add ginger and garlic to the frying wings.
- Lower temperature and continue to fry until cooked through.
- Add lemon seasoning liquid and turn heat up to high.
- Continue stirring until liquid becomes a thick glaze.
- Transfer to platter and serve.

INGREDIENTS
- 1lbfresh mushrooms, approximately 35 to 40(big enough to stuff!)
- 1/4cupcelery, finely chopped
- 2tablespoonsonions, finely chopped
- 2tablespoonsred bell peppers, finely chopped
- 1/2lbcrabmeat
- 2cupsoyster crackers, crushed
- 1/2cupcheddar cheese, shredded
- 1/4teaspoongarlic powder
- 1/2teaspoonOld Bay Seasoning
- 1/4teaspoonblack pepper, ground
- 1/4teaspoonsalt
- 1egg
- 1/2cupwater
- 6sliceswhite cheddar cheese
DIRECTIONS
- Preheat oven to 400°F Sauté celery, onion, and pepper in butter for 2 minutes, transfer to a plate, and cool in the refrigerator.
- While vegetables cool, wash mushrooms and remove stems.
- Set caps to the side and finely chop half of the stems.
- Discard the other half of the stems or use elsewhere.
- Combine the sautéed vegetables, chopped mushroom stems, and all other ingredients (except cheese slices) and mix well.
- Place mushroom caps in individual buttered casseroles or baking dishes (about 6 caps each).
- Spoon 1 teaspoon of stuffing into each mushroom.
- Cover with sliced cheese.
- Bake in oven for 12-15 minutes until cheese is lightly browned.

INGREDIENTS
- 1 1/2cupsmilk
- 1teaspoonkosher salt
- 1/4cupgrits
- 3/4cup gratedsharp cheddar cheese
- 2largeegg yolks
- 3/4cup pureedcanned corn
- 1/4teaspoonfresh ground pepper
- 3largeegg whites
DIRECTIONS
- Preheat oven to 375 degrees.
- Bring milk to a simmer in a small saucepan over medium heat.
- Add 1/2 teaspoon salt and,stirring constantly, add the grits in a slow steady stream.
- Continue stirring until thick–about 25 minutes.
- Transfer to a large bowl and cool slightly.
- Stir cheese, yolks,and corn into grits.
- Transfer mixture to a large bowl and add the remaing salt and the pepper.
- Beat egg whites in a bowl until stiff peaks form.
- Gently fold egg whites,in thirds,into the corn mixture.
- Fill 8 one-cup ramkins and place on baking sheet.
- Bake until puffed-40 to 45 minutes.
- Serve immediately.

INGREDIENTS
- 2eggs, slightly beaten
- 1/2cupcanned pumpkin
- 1/2cupmilk
- 1/4cupvegetable oil
- 1 1/2cupsflour
- 1/3cupsugar
- 3teaspoonsbaking powder
- 1 1/4teaspoonsground cinnamon
- 1/2teaspoonsalt
- 1/4teaspoonground nutmeg

Cream Cheese Filling
- 3ouncescream cheese, softened
- 1tablespoonsugar
- 1tablespoonmilk
DIRECTIONS
- Heat oven to 400 degrees F.
- Grease bottoms only of 12 medium muffin cups or line with paper baking cups.
- Mix eggs, pumpkin, milk and oil.
- Stir in remaining ingredients (except cream cheese filling) just until flour is moistened.
- Fill muffin cups 2/3 full.
- Cream Cheese Filling: Mix cream cheese, sugar and milk until smooth.
- Divide Cream Cheese Filling among muffins, placing about 1 teaspoon on top of each; swirl with knife.
- Bake 20 to 22 minutes or until golden brown.
- Immediately remove from pan.

INGREDIENTS
- 1 1/2lbsground beef
- 3/4cup mildpicante sauce
- 1 (4 ounce)candiced green chilies, drained
- 1/2cup finely crushedtortilla chips
- 1mediumonion, chopped
- 1largeegg, lightly beaten
- 1 1/2teaspoonsground cumin
- 1-2teaspoonchili powder(to your preference)
- 1teaspoonsalt
- picante sauce
- 1cup shreddedmonterey jack cheeseor sharp cheddar cheese

Garnishes
- sour cream
- fresh cilantro stems
DIRECTIONS
- Combine first 9 ingredients and place in lightly greased loaf pan.
- Bake at 375 for 40 minutes or until done.
- During last 10 minutes of baking, spoon desired amount of picante sauce over loaf and sprinkle with cheese.
- Garnish with sour cream and cilantro, if desired.
