Lemon Bliss Wings Recipe

INGREDIENTS

  1. 2 1/2lbschicken wings, separated
  2. 4tablespoonssoy sauce
  3. 4tablespoonsdry sherryor mirin
  4. 1/2cupchicken broth
  5. 1largelemon, juice of, and grated rind of
  6. 3tablespoonssugar
  7. 1/2tablespoonsalt
  8. 2teaspoonswater
  9. 2teaspoonscornstarch
  10. 1teaspoonsesame oil
  11. oil, to stir fry
  12. 3teaspoonsginger
  13. 2teaspoonsgarlic powder

DIRECTIONS

  1. Mix soy sauce, sherry, broth, lemon juice and rind, sugar, salt, water, cornstarch, and sesame oil in a bowl.
  2. Heat skillet and add oil.
  3. Stir fry wings until fried on both sides.
  4. Add ginger and garlic to the frying wings.
  5. Lower temperature and continue to fry until cooked through.
  6. Add lemon seasoning liquid and turn heat up to high.
  7. Continue stirring until liquid becomes a thick glaze.
  8. Transfer to platter and serve.

Stuffed mushrooms Recipe

INGREDIENTS

  1. 1lbfresh mushrooms, approximately 35 to 40(big enough to stuff!)
  2. 1/4cupcelery, finely chopped
  3. 2tablespoonsonions, finely chopped
  4. 2tablespoonsred bell peppers, finely chopped
  5. 1/2lbcrabmeat
  6. 2cupsoyster crackers, crushed
  7. 1/2cupcheddar cheese, shredded
  8. 1/4teaspoongarlic powder
  9. 1/2teaspoonOld Bay Seasoning
  10. 1/4teaspoonblack pepper, ground
  11. 1/4teaspoonsalt
  12. 1egg
  13. 1/2cupwater
  14. 6sliceswhite cheddar cheese

DIRECTIONS

  1. Preheat oven to 400°F Sauté celery, onion, and pepper in butter for 2 minutes, transfer to a plate, and cool in the refrigerator.
  2. While vegetables cool, wash mushrooms and remove stems.
  3. Set caps to the side and finely chop half of the stems.
  4. Discard the other half of the stems or use elsewhere.
  5. Combine the sautéed vegetables, chopped mushroom stems, and all other ingredients (except cheese slices) and mix well.
  6. Place mushroom caps in individual buttered casseroles or baking dishes (about 6 caps each).
  7. Spoon 1 teaspoon of stuffing into each mushroom.
  8. Cover with sliced cheese.
  9. Bake in oven for 12-15 minutes until cheese is lightly browned.

Cheese Grits and Corn Pudding Recipe

INGREDIENTS

  1. 1 1/2cupsmilk
  2. 1teaspoonkosher salt
  3. 1/4cupgrits
  4. 3/4cup gratedsharp cheddar cheese
  5. 2largeegg yolks
  6. 3/4cup pureedcanned corn
  7. 1/4teaspoonfresh ground pepper
  8. 3largeegg whites

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. Bring milk to a simmer in a small saucepan over medium heat.
  3. Add 1/2 teaspoon salt and,stirring constantly, add the grits in a slow steady stream.
  4. Continue stirring until thick–about 25 minutes.
  5. Transfer to a large bowl and cool slightly.
  6. Stir cheese, yolks,and corn into grits.
  7. Transfer mixture to a large bowl and add the remaing salt and the pepper.
  8. Beat egg whites in a bowl until stiff peaks form.
  9. Gently fold egg whites,in thirds,into the corn mixture.
  10. Fill 8 one-cup ramkins and place on baking sheet.
  11. Bake until puffed-40 to 45 minutes.
  12. Serve immediately.

Cream Cheese and Pumpkin Muffins Recipe

INGREDIENTS

  1. 2eggs, slightly beaten
  2. 1/2cupcanned pumpkin
  3. 1/2cupmilk
  4. 1/4cupvegetable oil
  5. 1 1/2cupsflour
  6. 1/3cupsugar
  7. 3teaspoonsbaking powder
  8. 1 1/4teaspoonsground cinnamon
  9. 1/2teaspoonsalt
  10. 1/4teaspoonground nutmeg
  11. Cream Cheese Filling

  12. 3ouncescream cheese, softened
  13. 1tablespoonsugar
  14. 1tablespoonmilk

DIRECTIONS

  1. Heat oven to 400 degrees F.
  2. Grease bottoms only of 12 medium muffin cups or line with paper baking cups.
  3. Mix eggs, pumpkin, milk and oil.
  4. Stir in remaining ingredients (except cream cheese filling) just until flour is moistened.
  5. Fill muffin cups 2/3 full.
  6. Cream Cheese Filling: Mix cream cheese, sugar and milk until smooth.
  7. Divide Cream Cheese Filling among muffins, placing about 1 teaspoon on top of each; swirl with knife.
  8. Bake 20 to 22 minutes or until golden brown.
  9. Immediately remove from pan.

Mexican Meatloaf Recipe

INGREDIENTS

  1. 1 1/2lbsground beef
  2. 3/4cup mildpicante sauce
  3. 1 (4 ounce)candiced green chilies, drained
  4. 1/2cup finely crushedtortilla chips
  5. 1mediumonion, chopped
  6. 1largeegg, lightly beaten
  7. 1 1/2teaspoonsground cumin
  8. 1-2teaspoonchili powder(to your preference)
  9. 1teaspoonsalt
  10. picante sauce
  11. 1cup shreddedmonterey jack cheeseor sharp cheddar cheese
  12. Garnishes

  13. sour cream
  14. fresh cilantro stems

DIRECTIONS

  1. Combine first 9 ingredients and place in lightly greased loaf pan.
  2. Bake at 375 for 40 minutes or until done.
  3. During last 10 minutes of baking, spoon desired amount of picante sauce over loaf and sprinkle with cheese.
  4. Garnish with sour cream and cilantro, if desired.
