Apple-Apricot Chutney Recipe

INGREDIENTS

  1. 1 1/2cups coarsely chopped peeledapples(typically, 2 apples are needed)
  2. 1cup halveddried apricots(pack them into measuring cup when measuring)
  3. 3/4cupwhite wine vinegar
  4. 1/4cupgolden raisins
  5. 2tablespoons finely mincedfresh ginger
  6. 2clovesgarlic, peeled and very thinly sliced
  7. 1/4teaspoonsalt
  8. 1/4teaspoonhot pepper flakes(or less)
  9. 1cupwhite sugar

DIRECTIONS

  1. In a large heavy pot (nonaluminum), combine fruit, vinegar, raisins, ginger, garlic, salt and hot pepper flakes; stir well.
  2. Over high heat, bring to a boil.
  3. Next, turn heat down to low, cover pot and simmer for about 10 minutes, or until you see that the apricots have plumped up.
  4. Stir in sugar and return to a simmer; cook, uncovered and stirring very often, for about 20 minutes; mixture should appear thickened.
  5. Place mixture in a clean pint (2-cup) jar and let cool a bit before screwing on lid; then keep chutney refrigerated.
  6. Serve, cold from fridge, with a pork roast or with chicken, or in a sandwich, or with cream cheese and crackers; keeps well in fridge for at least 2 weeks–if it lasts that long without being devoured!

Sesame Almond Salad Recipe

INGREDIENTS

  1. Salad

  2. 1/2cupslivered almonds
  3. 2-3tablespoonssesame seeds
  4. 1 (16 ounce)package preparedcoleslaw mix(pre-shredded cabbage with carrots)
  5. 6green onions, choped fine
  6. 1/2cupsunflower seeds (optional)
  7. Dressing

  8. 3/4cupsalad oil
  9. 1/4cup puresesame oil
  10. 6tablespoonswhite vinegar
  11. 4tablespoonssugar
  12. 2teaspoonscoarse salt
  13. 1teaspoonpepper
  14. 3cups chinese steamfried Chinese noodles(do not cook)

DIRECTIONS

  1. Whisk dressing ingredients together and set aside.
  2. Lightly brown sesame seeds and almonds in a non-stick frypan (don’t use oil or butter), then set aside to cool.
  3. Once sesame seeds and almonds have cooled, add to dressing and mix well.
  4. Place coleslaw in large bowl and add dressing, toss together and refrigerate overnight.
  5. Add noodles just before serving to maintain crispness.

Chicken Divine Recipe

INGREDIENTS

  1. 2-3chicken breasts, cut into bite-size pieces
  2. 1bagfrozen broccoli, thawed,and drained or fresh broccoli, cooked until firm-tender
  3. 1cancondensed cream of chicken soup
  4. 2cups shreddedcheddar cheese
  5. 1cupmayonnaise(Hellman’s is best)
  6. parmesan cheese, any amount desired
  7. paprika
  8. salt and pepper

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Grease a 8 x 10-in baking dish.
  3. Place thawed broccoli in the bottom of baking dish.
  4. Sprinkle with Parmesan cheese over broccoli.
  5. Layer cooked, cubed chicken over broccoli.
  6. Sprinkle more Parmesan cheese over the chicken.
  7. In a med bowl, mix cream of chicken soup, mayo and cheddar cheese.
  8. Spread over chicken mixture.
  9. Sprinkle with more Parmesan, paprika, salt and pepper.
  10. Bake for 20 mins, or until hot and bubbly.

Pasta Salad Recipe

INGREDIENTS

  1. Salad

  2. 1package rainbowcheese tortellini
  3. 2carrots, chopped small
  4. 3stalkscelery, chopped fine
  5. 1/2cupgreen olives, sliced
  6. 4-5 slicedradishes (optional)
  7. 1cup tinycauliflower florets (optional)
  8. Dressing

  9. 1tablespoon fresh mincedgarlic
  10. 2tablespoonsDijon mustard
  11. 1/2cupwhite vinegar
  12. 1teaspoondried dill weed(add more if desired)
  13. 1 1/2cupssalad oil
  14. 1cupmayonnaiseor Miracle Whip

DIRECTIONS

  1. Cook pasta according to package directions, drain and cool.
  2. Place cooled pasta, olives and vegetables into a salad bowl and toss gently.
  3. Dressing: Combine first 4 ingredients, gradually whisk in oil, then mayonnaise.
  4. Pour dressing over pasta and vegetables, stir gently.
  5. Refrigerate overnight, stir occasionally to allow pasta to absorb dressing.
  6. Serve with garnishes of fresh parsley.

Smokey hard boiled eggs Recipe

INGREDIENTS

  1. 1dozeneggs
  2. 1cupsoy sauce
  3. 2tablespoonsliquid smoke

DIRECTIONS

  1. Hard boil the eggs.
  2. let cool or run under water to cool then peel.
  3. add eggs and soy sauce and liquid smoke together in shallow container cover,refrigerate.
  4. rotate eggs occasionally till all sides brown.
  5. enjoy.
