INGREDIENTS
- 4eggs
- 6tablespoonsbutter
- 1/2cupflour
- 2cupsskim milk(or use regular but skim is all I have)
- 1teaspoonvanilla
- 1cupsweetened flaked coconut
- 3/4cupsugar
DIRECTIONS
- Preheat oven to 350 degrees.
- Spray a 10 inch pie plate with cooking spray and then dust with flour.
- (Or grease it and then flour it in your usual method.) In a blender place everything but the coconut.
- Mix until it is blended.
- Add the coconut and blend for a few seconds or until it is all mixed.
- Pour it into the pie plate and bake for 50-60 minutes.

INGREDIENTS
- 1 (8 ounce)packagecream cheese, softened
- 1/2cupsugar
- 1tablespoonflour
- 1egg
- 1 (10 ounce)canready-to-bake refrigerated buttermilk flaky biscuits
- 1 1/2teaspoonssugar
- 1/4teaspooncinnamon
DIRECTIONS
- Heat oven to 350°.
- Beat cream cheese, 1/2 cup sugar, flour and egg until smooth.
- Separate dough into 10 biscuits; place in an ungreased 8 or 9-inch round cake pan; press over bottom and 1 inch up sides to form a crust-lined pan.
- Pour cream cheese mixture into the pan.
- Blend 1 1/2 teaspoons sugar and cinnamon; sprinkle over cream cheese mixture.
- Bake for 24-30 minutes or until filling is set and edges of crust are deep golden brown.
- Cool 20 minutes.
- Serve warm or cool; store in the fridge.

INGREDIENTS
- 1 1/2lbsground turkey
- 2egg whites
- 1/4cupseasoned dry bread crumbs
- 4clovesgarlic, minced,divided
- 3tablespoonsitalian seasoning, divided
- olive oil flavored cooking spray
- 4 (15 ounce)cansreduced-sodium chicken broth
- 3cupswater
- 2cupsgreen beans, diagonally cut into 1/2 inch pieces
- 4mediumcarrots, sliced
- 2mediumonions, coarsely chopped
- 8ouncesthin spaghetti, uncooked,broken into 2 to 3 inch pieces
- 2mediumplum tomatoes, coarsely chopped
- salt and pepper, to taste
DIRECTIONS
- Mix ground turkey, egg whites, bread crumbs, 2 cloves of garlic, and 2 tablespoons of Italian seasoning until well blended; shape mixture into 32 meatballs.
- Spray large saucepan with Pam; heat over medium heat until hot.
- Cook meatballs until browned on all sides, 5-7 minutes.
- Add chicken broth, water, green beans, carrots, onions, remaining 2 cloves garlic, and remaining 1 tablespoon Italian seasoning to saucepan; heat to boiling.
- Reduce heat and simmer, covered until vegetables are almost tender, about 8 minutes.
- Heat soup to boiling; add pasta and tomatoes.
- Reduce heat and simmer, uncovered, until pasta is al dente, about 10 minutes.
- Season to taste with salt and pepper.

INGREDIENTS
- 1/3cupwhole wheat flour
- 1/2oat bran
- 1/3cupgranulated sugar
- 1tablespoonbaking powder
- 1tablespooncinnamon
- 1/4teaspoonsalt
- 1 1/4cups chopped peeledapples
- 1egg, lightly beaten
- 1cuplow-fat milk
- 1/4cupvegetable oil

Topping
- 2tablespoons packedbrown sugar
- 1/4teaspooncinnamon
- 1/4teaspoonnutmeg
DIRECTIONS
- In large bowl, mix together flour, oat bran, sugar, baking powder, cinnamon and salt.
- Stir in chopped apple.
- In separate bowl, combine egg, milk and oil; stir into flour mixture just until moistened.
- Do not overmix.
- Spoon into nonstick or paper-lined muffin cups, filling three-quarters full.
- Topping: Combine sugar, cinnamon and nutmeg; sprinkle over, muffins.
- Bake in 400 degree oven 15 to 20 minutes or until golden and firm to the touch.

INGREDIENTS
- 3tablespoonsDijon mustard
- 3tablespoonsmaple syrup
- 1tablespoonbalsamic vinegar
- 1/4teaspoonsalt
- 1/8teaspoonfresh ground black pepper
- 4 (6 ounce)salmon fillets, 1 inch
- cooking spray
DIRECTIONS
- Combine first 5 ingredients in a large zip-top plastic bag; add salmon.
- Seal and marinate in refrigerator 20 minutes.
- Prepare grill or broiler.
- Remove salmon from bag, reserving the marinade.
- Place salmon on a grill rack or broiler pan coated with cooking spray, and cook for 6 minutes on each side or until the fish flakes easily when tested with a fork; baste salmon occasionally with the reserved marinade.
