Fast and Easy Coconut Custard Pie Recipe

INGREDIENTS

  1. 4eggs
  2. 6tablespoonsbutter
  3. 1/2cupflour
  4. 2cupsskim milk(or use regular but skim is all I have)
  5. 1teaspoonvanilla
  6. 1cupsweetened flaked coconut
  7. 3/4cupsugar

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Spray a 10 inch pie plate with cooking spray and then dust with flour.
  3. (Or grease it and then flour it in your usual method.) In a blender place everything but the coconut.
  4. Mix until it is blended.
  5. Add the coconut and blend for a few seconds or until it is all mixed.
  6. Pour it into the pie plate and bake for 50-60 minutes.

Quick Cheese Coffee Cake Recipe

INGREDIENTS

  1. 1 (8 ounce)packagecream cheese, softened
  2. 1/2cupsugar
  3. 1tablespoonflour
  4. 1egg
  5. 1 (10 ounce)canready-to-bake refrigerated buttermilk flaky biscuits
  6. 1 1/2teaspoonssugar
  7. 1/4teaspooncinnamon

DIRECTIONS

  1. Heat oven to 350°.
  2. Beat cream cheese, 1/2 cup sugar, flour and egg until smooth.
  3. Separate dough into 10 biscuits; place in an ungreased 8 or 9-inch round cake pan; press over bottom and 1 inch up sides to form a crust-lined pan.
  4. Pour cream cheese mixture into the pan.
  5. Blend 1 1/2 teaspoons sugar and cinnamon; sprinkle over cream cheese mixture.
  6. Bake for 24-30 minutes or until filling is set and edges of crust are deep golden brown.
  7. Cool 20 minutes.
  8. Serve warm or cool; store in the fridge.

Italian Meatball Soup Recipe

INGREDIENTS

  1. 1 1/2lbsground turkey
  2. 2egg whites
  3. 1/4cupseasoned dry bread crumbs
  4. 4clovesgarlic, minced,divided
  5. 3tablespoonsitalian seasoning, divided
  6. olive oil flavored cooking spray
  7. 4 (15 ounce)cansreduced-sodium chicken broth
  8. 3cupswater
  9. 2cupsgreen beans, diagonally cut into 1/2 inch pieces
  10. 4mediumcarrots, sliced
  11. 2mediumonions, coarsely chopped
  12. 8ouncesthin spaghetti, uncooked,broken into 2 to 3 inch pieces
  13. 2mediumplum tomatoes, coarsely chopped
  14. salt and pepper, to taste

DIRECTIONS

  1. Mix ground turkey, egg whites, bread crumbs, 2 cloves of garlic, and 2 tablespoons of Italian seasoning until well blended; shape mixture into 32 meatballs.
  2. Spray large saucepan with Pam; heat over medium heat until hot.
  3. Cook meatballs until browned on all sides, 5-7 minutes.
  4. Add chicken broth, water, green beans, carrots, onions, remaining 2 cloves garlic, and remaining 1 tablespoon Italian seasoning to saucepan; heat to boiling.
  5. Reduce heat and simmer, covered until vegetables are almost tender, about 8 minutes.
  6. Heat soup to boiling; add pasta and tomatoes.
  7. Reduce heat and simmer, uncovered, until pasta is al dente, about 10 minutes.
  8. Season to taste with salt and pepper.

Low-Fat Apple Streusel Muffins Recipe

INGREDIENTS

  1. 1/3cupwhole wheat flour
  2. 1/2oat bran
  3. 1/3cupgranulated sugar
  4. 1tablespoonbaking powder
  5. 1tablespooncinnamon
  6. 1/4teaspoonsalt
  7. 1 1/4cups chopped peeledapples
  8. 1egg, lightly beaten
  9. 1cuplow-fat milk
  10. 1/4cupvegetable oil
  11. Topping

  12. 2tablespoons packedbrown sugar
  13. 1/4teaspooncinnamon
  14. 1/4teaspoonnutmeg

DIRECTIONS

  1. In large bowl, mix together flour, oat bran, sugar, baking powder, cinnamon and salt.
  2. Stir in chopped apple.
  3. In separate bowl, combine egg, milk and oil; stir into flour mixture just until moistened.
  4. Do not overmix.
  5. Spoon into nonstick or paper-lined muffin cups, filling three-quarters full.
  6. Topping: Combine sugar, cinnamon and nutmeg; sprinkle over, muffins.
  7. Bake in 400 degree oven 15 to 20 minutes or until golden and firm to the touch.

Mustard-Maple Salmon Recipe

INGREDIENTS

  1. 3tablespoonsDijon mustard
  2. 3tablespoonsmaple syrup
  3. 1tablespoonbalsamic vinegar
  4. 1/4teaspoonsalt
  5. 1/8teaspoonfresh ground black pepper
  6. 4 (6 ounce)salmon fillets, 1 inch
  7. cooking spray

DIRECTIONS

  1. Combine first 5 ingredients in a large zip-top plastic bag; add salmon.
  2. Seal and marinate in refrigerator 20 minutes.
  3. Prepare grill or broiler.
  4. Remove salmon from bag, reserving the marinade.
  5. Place salmon on a grill rack or broiler pan coated with cooking spray, and cook for 6 minutes on each side or until the fish flakes easily when tested with a fork; baste salmon occasionally with the reserved marinade.
